They are very different. Regular buckwheat, it is not gluten-free. At least in Germany. As they explained to me, at the mill where this flour is ground, wheat grain is also ground, etc. It is the same with oatmeal and cereal.
At least that's what I was told at the mill, where I get different flours for baking bread.
And brown buckwheat flour, in addition to its pronounced taste, has no stickiness or viscosity properties.
Therefore, I completely switched to green buckwheat flour. Its taste has bitterness, but very little. She is pleasant to work with. I think you can do it yourself if it is expensive for sale.
But she has become indispensable in my recipes.




And if you can use sugar in regular doses, then it will be wonderful. I use very little or no sugar.
