Imeretian cheese (Adyghe) 500gr
Yolk 1

Cooking method

  • I cook from ready-made puff pastry.

  • I divide it into two sheets.
  • I roll out each sheet to the size of the baking sheet.
  • On the bottom sheet I spread the grated cheese.
  • I put the second sheet on top.
  • I prick the top sheet with a fork.
  • In a bowl, beat the yolk with a fork with 1 tsp of water.
  • I pour this mixture onto the dough and spread it with my hands over the entire surface. The dough and baking sheet should be cold.
  • Bake in preheated to 180 gr. oven 20-30 min. Depends on the oven. The most important thing here is to buy good cheese. It should stretch after baking like in a pizza ad. Therefore, if possible, add such cheese. If the cheese is very salty, soak it beforehand in water or mix with cottage cheese. If you want the khachapuri to be hot before the arrival of the gostky, you can put it in the refrigerator without greasing it with an egg and grease it and bake it when guests arrive. Just preheat the oven. While your guests are seated, you will serve hot khachapuri in 20-30 minutes.
