I pour sprouted wheat into the attached flour cup (I have it ready for bread), at the mill to Kenwood in 2-3 minutes. I make flour (in the same glass), fall asleep in a pasta machine and then everything according to the recipe in the book. Advantages of such a paste: if you run out of durum flour, you don't need to run anywhere; tastier (namely, from freshly ground flour; I tried it from the same grain and flour that stood for 2 weeks or 2 months - the taste is not quite the same), the pasta absorbs more sauce. Although it can be for an amateur. Some “tasters” (who “didn't kick in the teeth” about TM or flour from sprouted wheat) liked it more than from expensive Italian flour. Although the appearance is not particularly presentable (my mother, because of the appearance, refused such a paste).

As for the flour - I had problems with buckwheat flour (soba did not always work out, it was boiled, then tasteless - I had to look for flour in a store of a certain manufacturer, which I do not remember) and I switched to flour from buckwheat of my own production (both cheaper and can be made from sprouted green buckwheat, and you don't have to run around shops looking for a specific manufacturer). Of course, the mill is easier. But somehow I had to do it on a coffee grinder-attachment to Kenwood - it turned out great, a little more fuss, but it's not critical to grind a glass of flour. We liked the taste better than even the good store-bought buckwheat flour. I just make it from ordinary buckwheat, which we eat in cereals (usually bought for a promotion in some thread store).
