Chana masala (chickpea stew)

Ingredients

Boiled chickpeas 250 g
Tomatoes 4 things
Vegetable oil 3 tbsp. l.
Caraway 1 tbsp. l.
Coriander 2 tsp
Turmeric 1/2 tsp
Fresh ginger 1h l.
Garlic 1 tooth.
Chickpea flour 1 tbsp. l.
Tomato paste 1 tbsp. l.
Paprika (I have smoked) 1/2 tsp
Salt taste
Garam masala 1 tbsp. l.

Cooking method

  • Grind the cumin and coriander in a mortar.
  • Pass the garlic through a press.
  • Chop the tomatoes in a blender.
  • Peel the ginger, grate on a fine grater.
  • Heat the oil in a saucepan with a thick bottom, fry the cumin and coriander, stirring until a characteristic odor appears (about 1-2 minutes.)
  • Add the tomatoes and all the ingredients except the garam masala. Simmer the mixture over low heat, constantly placing until it is halved (10-15 minutes). Be careful, the mixture "shoots".))
  • Put chickpeas, garam masala in the sauce, stir, simmer for 5 minutes. Then remove the pan from the stove and leave under the lid to brew for 5-10 minutes.
  • Serve with whole wheat tortillas. For example, according to THIS recipe.
