Wild boar with Brussels sprouts (Wildschweinbraten mit Rosenkohl)

Ingredients

boar meat 1 kg
garlic 3 tooth.
mustard 2 tsp
salt pepper taste
spices for meat 2 tbsp. l.
greens
onion 2 pcs
vegetable oil 2 tbsp. l.
dry red wine 200 ml
Brussels sprouts 500 g
carrot 200 g
jelly red currant 50 g
flour 1 tbsp. l.
butter 2 tbsp. l.

Cooking method

  • For the marinade: finely chop the garlic, mix with mustard and spices (juniper, coriander, nutmeg), vegetable oil. Season the meat with salt and pepper. Coat with marinade mixture. Leave on for 2 hours.
  • Fry the meat in a pan on all sides. Remove on a plate and in this oil, fry the finely chopped onion until transparent. Return the meat to the pan. Add herbs, red wine and simmer for 1 hour.
  • Boil Brussels sprouts until tender. Fry the onions and carrots in butter until tender. Add cabbage. Fry. Add herbs and spices.
  • When the meat is done, remove it from the pan. Add water and currant jelly, mix. Thicken the sauce with flour.
