Tukmachi with a beater

Ingredients

For tukmachi: peeled potatoes I have a 1.8 liter saucepan
dried dill 1 large umbrella
salt (Adyghe is awesome) taste
garlic 1 large tooth
vegetable oil with the smell of seeds 1 tbsp. l.
For the knee: cottage cheese with a fat content of 9% 125 g
sour cream with a fat content of 15-20% by consistency

For the filling: salted lard 150-200 gr
lard (brisket) fresh 150-200 gr

Cooking method

  • It turns out that Tukmachi is not only a dish of Bashkir or Tatar cuisine, but also an old Belarusian dish. But the most interesting thing is that it is also completely different from them. I learned about him by chance from the morning program \ "About food \" on Belarusian television. The master class was led by an expert of Belarusian cuisine and a culinary historian Elena Mikulchik. It should be prepared on the basis of the potatoes loved by Belarusians (and not only them)! I immediately understood what they would love for sure! And now I want to share with you - since the potato is our FSE! This dish came from the Kobrin region. I must say right away that there are no mushrooms in the original. But I have them (happiness has fallen). And I really liked them here. Yes, Elena Mikulchik baked them in small silicone cupcakes. I only have one big one. Well, before they were baked simply in the oven, forming small peas.
  • First, let's prepare the beater! Do you like the name? I just dragged myself - a beater, a beater - so home-like, so tender! We take cottage cheese, salt, garlic, herbs into a blender and, gradually beating, add sour cream.
