Light cupcake with cherries

Ingredients

butter 140 g
sugar 200 g
sour cream 3-4 tbsp. l.
Eggs 4 things
Flour 350 g
vanilla sugar 1 sachet
baking powder (I took 1 sachet of Dr. Etker) 10 g (2 tsp. Flat)
frozen cherries (you can also compote or fresh) 150-200 g

Cooking method

  • We take out the cherries from the freezer, rinse them in a sieve of ice, and leave to drain.
  • While collecting all the components, put the oil in a deep bowl in the microwave at 30% power for 3-4 minutes (depending on whether the oil is from the freezer or not)
  • Sift flour with baking powder and set aside.
  • Pour sugar + vanilla into the butter and grind, add sour cream, mix.
  • Beat the eggs with a mixer and add the butter-sugar-sour cream mixture to them.
  • Slowly add flour, continuing to beat with a mixer.
  • Put 1/3 of the mass into a greased mold with a hole in the middle, then cherries in a circle, then again 1/3 of the dough and cherries, press the rest of the dough and the last layer of cherries deeper.
  • We don't put it in the oven right away, but let it stand for 10-15 minutes, thanks to this proofing, the cake will rise twice during the baking process and will be airy and tender.
  • We put to bake at 180aboutFrom 45-50 min

This cake is light not only in terms of air, but also the cooking process is completely stress-free.
The recipe was modified by me from different options and the most airy and optimal in sweetness / acidity was derived, I like that the oils are not 200 g but only 140 g
I barely managed to photograph the cupcake, that's what was left of it, though you can't see 3 tiers of cherries, cherries came across here and there, then there. I don't like oversweetened, and with 200 grams of sugar - everything turned out to be in moderation

It seems Admin even posted a description of experiments with soda - with and without quenching - and with demonstration of the results.

It is better not to extinguish soda, but an acidic element must be present in the dough; in this recipe, sour cream can play this role, but since it is not enough or it may not be acidic enough, you can add a small pinch of citric acid, for example, mix with sour cream to dissolve well, or acid into powder and mix with flour, because baking powder is a dry mixture of soda-acid-flour. Then, when you mix flour and the rest of the ingredients, the soda will react with the acid and raise the dough to the maximum.

And if the soda is immediately extinguished, then the rise will be less.
