Fermented tea made from leaves of garden and wild plants (master class) (page 82)

Nilda
Ludmila,
Thank you for such a warm welcome and quick response!
I will try blackberries first, although there are a lot of dogwoods in the forest and also tempting
There is one problem with neighboring gardens: everyone spray their trees with chemistry (we have peach orchards here), somehow I don’t want to take leaves from such trees for tea. But you can collect leaves from apple trees in an abandoned garden, no one has sprayed them there for 10 years. There is almost nothing on its site yet, only sea buckthorn and wild mint with blackberries.
I will try, if there is something worthy as a result, I will unsubscribe
lappl1
Nildaof course, you should not take leaves from the trees being sprayed. And the girls' apple tree with blackberries turned out very good.

You can understand the whole taste and aroma of tea no earlier than in a month. Of course, you can drink it right away, but after aging the tea is incomparably better.
Good luck to you !

How tastes change!
Yeah! I, too, recently brewed store-bought black tea and ... did not drink it! Well, not tasty and that's it! And on "my seagulls" a couple more people "hooked"
Linga
Yes, tastes change :-)
I was recently given a cherry-flavored black tea (good, worthy of a brand name). I brewed it, but I could not finish it - I feel like drinking cologne! And before, I think, I would love to "drink" such tea)

Linga, so it is cologne, one might say, is. After all, if a product is written "with aroma", it means that an artificial aroma has been added, and in no case something natural. So we swallow it is not clear what. Well, not us, of course, we are now so smart-reasonable! Here is our Lyudmila silently making teas for how many years, but we only split this year! Nothing, let's get the missing!

Linga, I remember how they gave me the same tea too. The girl was happy that she pleased me with the gift ... I was very pleased, naively thinking that there was super tea ... But in fact ... the same cologne!

Veronica, so I thought that this recipe cannot but be on the Bread Maker ... Yes, and until last winter I "sat" only in bread topics. And when I started making tea in May, I decided to look for maple, pine and hazelnut tea on the Bread Maker, since they are new for me this year. And I was very surprised that there are no recipes not only from the listed plants, but even from willow tea. Even when I presented a recipe, I didn’t think that anyone would be interested in it. And, of course, now I am incredibly glad that so many girls "got hooked" on this exciting activity and tasty, healthy tea.

enjoy the Village, I can drink endlessly !!!!! this is something with something

And I ... Moreover, "Village" in any composition and ratio ...

Lyudochek,

What a blessing that I managed to make the last batch of "country" tea from the freezer before the end. In the evening I hung out the tea for airing, and in the morning of the next day the stove burned out, the smoke was now without a stove, or rather without an oven. No tea, no gingerbread pies

One thing is good ... tea warms the soul
lappl1
Anyutaaaa! How so ! Then the microwave ... Now the oven ... You are left without any "hands" ... And what will you do?
filirina
Lyudochka, and I decided (in light of the fact that it got very cold here, but there is still no heating) to try every day a new seagull from summer preparations.
Today it is strawberry. I don't even know what to compare it with - the aroma is strawberry-honey-plum. Such a soft, viscous, sunny summer scent! Well, even outdone raspberries! And the color is wonderful dark gold!
Lyudochka, this is for you

I will try all my teas in solo form and next summer I will already know what to focus on! (what to take away from the mother-in-law at the dacha clean up - for the amount of delicious tea!). Yes .... I drink only the simplest green one anyway, and God forbid, without flavorings, but after our tea and green I don't really want to.
Galina Iv.

after our seagull and green do not want very much.
Irina, if you are a fan of green tea, then make "our" green tea!
lappl1
Irochka, I'm probably more happy with you! Because it's so nice to have such reports of tea. Drink, dear, healthier and stronger.
And this, too, for your joy:

And she is such a strawberry ... Surprising, to put it mildly ... She also walks in my favorites ... And raspberries are very good in mixes, as a base. I use it in September instead of fireweed when it ends. Fortunately, we have more fireweed growing.

Yes, you can, if you do not ferment the leaves, but immediately after withering and rolling, let them dry. I hardly do something like that. But it would be necessary ...
filirina
Yeah, got it, Chief! No, it's not interesting. Lectraves are dried like that, but I won't say that they are very tasty or aromatic. It seems to me that in our tea the main figure is Madame FERMENTATION, she plays all the tea!
Galina Iv.

Ira, but there is no reference. We didn't. Green tea production technology differs from black tea production technology in that there is no fermentation process. And there is a preliminary steaming or roasting of the leaf after collection. Here's a quote from a book about it:
Green tea is produced from the same raw materials as black, but in the production of green tea, instead of withering and fermentation, oxidation-reduction enzymes are inactivated under heat (roasting, steaming, fixing with hot air, etc.).
Making green teas in China, Japan and India. As the main goal in the production of green tea is to fix the green leaf, which requires heat treatment; in traditionally tea-producing countries, the methods of roasting or steaming the tea leaf are more often used.
The Chinese method of making green tea is mainly based on toasting the leaves, while steaming is preferred in Japan. In both cases the same goal is pursued: destruction of enzymes, fixation of green color, destruction of the smell of fresh greenery and giving the leaf some elasticity.
Toasting method consists in the fact that a freshly picked leaf is thrown into braziers (hemispherical metal boilers), heated with wood or charcoal, and quickly stirred with a stick for three minutes to prevent it from burning. When roasted, the tea leaves are heated to 80–90 ° C and the moisture content is reduced by 5–7%. During this time, the sheet becomes completely soft and decreases in volume by 2 times compared to the original. The leaf is then curled more severely than in black tea production to give it a highly curled appearance.
Steaming method is that a basket filled with a sheet with a perforated bottom is placed for half a minute at some distance from the surface of boiling water. This operation should be done with care, as insufficient steaming can affect the aroma and other properties of green tea.
Both of these methods have their positive and negative sides. However, comparative experiments on the production of green long tea by roasting (Chinese method) and by steaming (Japanese method) showed that the Chinese method of preparation is technically more difficult, but makes it possible to obtain high quality green tea.
I remembered: Oksana-Loksa did something like that ... But no ... She tried to make red tea.

I think yes. Otherwise, it will not be tea, but an infusion of lektrav or just herbs. And it will smell like hay without fermentation.

It won't ... Because roasting in the oven or steaming for a short time makes the sheet different.

Aha! Well, there is still processing! Steaming or roasting is most likely also designed to destroy cells and form soluble aromatic substances, even without further aging. Because. that simply drying the effect of tea does not give, especially not to tea, but to leaves and herbs.
lappl1
This is our task for the next season - to make green tea ...
Galina Iv.
how it turns out.

E-no ... What kind of student are you now? You are already a pro - you devoted a whole season to tea. Consider that you have defended your diploma perfectly!

Interesting ... I should try on the trail. year, maybe something worthwhile will turn out. But again, to steam-over what, or to fry ... Lyudochka, you should think about this question, your little head is working in the right direction, and we would help, the main goal is to set us!
lappl1
Lena! I thought it over in the summer. For frying, you can use a large cauldron. And for steaming - a juicer will do.
filirina
ABOUT! There is a juice cooker! I just thought it’s worth it - not throw it out? FSE! I'm leaving to live, what if you need it for tea?

You just need to heat the cauldron well, and boil the water in a juicer. And if you don't have a juicer, you can use a metal colander. Only then put the leaves there in small batches. You can also use a mantool. She is deep ..
filirina
This is how useful and interesting it is to communicate with you! Something new comes up. Now we will target green tea.
And also, Lyudochka, every time I see a name under your nickname VYAZMA, for some reason I have an association with a fairy tale and something magical. I have never been there, but some wonderful places are seen. (Although it may just be my imagination, but real life is the same everywhere)

Veronica, yes, I know about flavors, that this is solid chemistry, but everything was written so well on the box with tea, also with pieces of cherry! And I, like Lyudmila, expected something unusual from this tea, but ... Our tea is "a thousand million times" better!
P.S.In the light of Galina's new topic about "soap and usefulness" - I am sitting today, drinking tea from fireweed, reading about everything natural and ... I poured the fireweed tea on a cotton swab and rubbed my face! beauty :-) the face liked it))) They wash their face with ordinary tea leaves, why not try our healthy teas? ...
Galina Iv.
Linga, and I really think to cook soap on our tea)))

if made in a geyser coffee maker

An interesting thought! I brew tea in a special teapot. There, tea is poured into a strainer and dripped with portions of steam rising up the straw. A tablespoon of tea is enough for 1 liter of water, then I add more and more in the process of brewing and drinking. In general, 1st stage. l. tea is enough for 3-4 liters of tasty, aromatic and very strong tea.
Galina Iv.
Linga, I dealt with the issue of hydrolates as something for soap, this is an undeniably valuable thing! the bottom line is that the plants are steamed and everything valuable from them in the form of cooled steam is a hydrolat, it is like something in between herbal extracts and essential oils, they contain water-soluble components of the original plants, but are free of tannins and bitterness.
To prepare them, you need a moonshine still or just a distiller)))

And I didn’t know that I had a geyser coffee maker. I read smart words, Googled and found out ... They gave it to me somehow ... For 5 years the box was dusty. And then I just gave it to someone.
