Ingredients

Dough:
milk 150 ml
fresh yeast 10 g
flour 50 g
sugar 2 h l
Dough:
flour 450 g
milk 140-150 ml
salt 1.5 tsp
butter 20 g
honey 2 h l

Cooking method

  • 1. For dough, grind yeast with sugar, add warm milk and combine with flour. Leave to ferment for 15-20 minutes (until the "cap" appears).
  • 2. For the dough, combine flour with salt, stir honey in warm milk, melt butter and cool to room temperature. Combine the dough with flour, pour in milk and butter and knead the dough at medium speed for 8-10 minutes. Increase the speed and knead for a couple of minutes - until a smooth, elastic bun is obtained (I knead with a mixer.
  • Round the dough, put in a bowl slightly dusty with flour and leave to rise for an hour. During this time, the dough increases by about 2.5 times.
  • 3. Place the dough on a cutting mat, lightly dusted with flour and shape into a loaf. Put on proofer, greased with milk, for 45 minutes (or until doubled).
  • 4. Bake in an oven preheated to 230 degrees for the first five minutes, then lower the temperature to 180 and bring to readiness (about 20 minutes more). Before baking, grease the loaf with milk again and make herringbone cuts to a depth of 10-12 mm with scissors.

The loaf has a thin soft crust, fine-pored crumb and a delicate milk-creamy taste. It cuts well, does not crumble. A very successful sandwich option - good with cheese and all kinds of pates.

Probably, that's why the loaf turned out to be plump (I poured flour a little)
