Fermented tea made from leaves of garden and wild plants (master class) (page 343)

tuskarora
Girls, hello !. Well, I got to you. Even that year I wanted to make tea, but the harvest of fruits and berries in the village was such that I did not have time to preserve and did not get to tea.
Well, this year, except for black currant, nothing at all ugly, so I decided to overcome laziness. Moreover, while improving the site yesterday, they cut down two huge but degenerated bushes of black currant. The leaves have withered in the barn, like the vein is no longer crunching. I sent it to the freezer. Is everything correct so far? Yes? I correctly understood that it is better not to fry the currants, but to dry them in a dryer?
And even today she cut down a huge old cherry (or rather, she herself collapsed at night after the wind, and even on the wires, if she hadn't broken them - fig knows, probably partially caught on the roof). So now I sit and grab the leaves and take them to the shed for wilting.
Radushka
tuskarora, Elena, another countrywoman!
Yes everything is correct!

And the most IMPORTANT - before starting to twist, I do not just defrost the leaves, but stir until the humidity becomes very low.
Radushka, I never freeze a leaf at all, in principle! Well, these are purely my cockroaches and the eternal underutilization of space in the freezer.
Radushka
Irina, I can't help but freeze. Whether I have no leaves, or three kilos at once

tuskarora
And I'm so glad !!!! Finally, a vacation, at least I sometimes sit on the forum in pleasure. And then I, such a pig, very rarely go.

Well, now I’m asking you questions for tea, then I’m talking !!!! Get ready.
Radushka
Elenahappy! And here ... neither your days off, nor your vacation ...
tuskarora
Yes, Radushka, that's fine, happy. Considering that we have been at work lately so ........ mmm, how can I put it more correctly, they were loaded ..... So now I have time for creativity. Until August 20.

lappl1, I report on points:
1. Fireweed leaves, unripe bolls, undisturbed tops, all separately
2. Tea made granulated
3. There were a lot of leaves, the rest of the raw material was about half a kilo.
4. Dried at first in the canvas for 8 hours (I drove from the dacha by car), at home I noticed that the leaves were heated, scattered them on a flat surface, with a layer of 5-6 cm under the fabric, stirred from time to time. The lump at the end of drying did not open.
5. Grind in a manual meat grinder, the raw material is dark, moist and very warm. At that moment there was a strong smell of prunes.
6. Raw materials are not frozen.
7. Fermented under a damp cloth and a lid in a glass container for 6 hours, since it is not hot at home. After fermentation, there was no longer a pleasant smell, just grass.
8. Dried at 60 degrees. in the dryer. Until the 'ringing'. One part was pre-fried in the oven for 1 hour at 100 degrees.
The leaves are almost black, the capsules and tops are dark marsh.
Everything in the bags dries up
lappl1
katyaspb, Catherine, well, you puzzled me - you started writing about your tea in one topic ("Fuzzy"), and now you jumped to another ...
In general, you have not answered all the questions. For example - with what layer was the tea fermented and dried? It happens that it is with a large layer during drying that tea is steamed and the smell is lost ... And they have not yet written down the temperature that was during fermentation. this is a very important point ...
According to your answers, we can say the following.
When you brought the leaves from the dacha, it became warm. This indicates that fermentation has begun. And you, having brought them home, began to dry again, but already in the spread form, and even under the cloth. Fermentation, albeit weak, but proceeded ... And then fermentation, but at a low temperature. By the way, which one? You say it wasn't hot at home ... I can't say for sure what happened, but judging by the description of the smell, your fermentation did not go as you would like. Maybe it was no longer necessary to carry it out, since, in fact, your tea was fermented right in the canvas, as evidenced by the heating of the leaves ...
The fact that there was no smell after fermentation just means that you need to pay more attention to this stage. And the stage of wilting ... So that the leaves in the canvas do not heat up, I recommend keeping the twist in the refrigerator before leaving ... Then you will bring home normally dried leaves ...
And then ... Your leaves are warming up in the car. Most likely, the temperature of the leaves has become more than 30 *. And at such a temperature, the fermentation process is inhibited at some stage and further simply cannot continue, no matter how hard you try ... Temperature during fermentation above 30 * is detrimental to tea.

Dear TEACHERS! Thank you very much for a very interesting and useful topic!
My family is big tea-leaves, but the quality of the purchased one is very upsetting, so next year we are "improving" its quality - we dry mint, we go to Kalmykia to collect thyme, collect hawthorn, rose hips, dry apples ...
I started reading your topic last year (I read it honestly, studying this issue conscientiously), but only then did I dare to start.
I started with cherries. The husband looked as if she were sick, but was silent (with the thought that a bad head would not give rest to his hands).
IT GOT IT !!! Fragrant, cherry, cool! I add it to black tea, that's something !!! The husband now asks: "make delicious tea."
Thanks again to everyone !!! The other day I finished raspberries, but there is no aroma, we will wait a month, we will read it even more carefully.
Radushka
OKSANA 34, well, raspberries cannot be fragrant! This is my favorite tea! It smells even without dry fermentation!
Something is not right here!
Oksana 34
I read your topic carefully, but my first experience with raspberries "by".
This does not mean that I am disappointed and will give up my attempts - no! I will analyze my actions, once again carefully leaf through the topic, and tomorrow I will go to establish a friendship with raspberries!
Radushka
OKSANA 34, come here please! Maybe it will help.

Thank you so much for your attention. I will say more - your topic about raspberry tea is outlined in a notebook and read by me, I will reread it. But apparently by trial and error ... And still, I promise, it will work out!
Radushka
OKSANA 34, good tea!
lappl1
OKSANA 34, welcome to our tea rows! I am very glad that your first experience was successful. And the raspberries will still be infused, you'll see.

lappl1Thank you for the prompt and detailed debriefing. But, of course, there are still questions.

Good afternoon everyone!
All of you, my dears (this is how I perceive you now, since you have a warm and cozy place here, and informative) with a family holiday !!!
Peace in your families, prosperity and prosperity! God bless you all!
Lyudochka, it's great that you gathered us all here !!

I have a request for you - somewhere in the vastness of this topic (and I have read almost everything) I came across information about meadow strawberry tails. How can it be used in tea? Just dry or "conjure" over it?
Tomorrow my friend and I are planning a trip to the meadows.
Maybe someone remembers where this information is?
I'm afraid that 800 pages before tomorrow I will not master again
lappl1
Emerald, Olya, thank you for your kind words and congratulations on the holiday. I join in congratulations and wish all tea-makers (and not only) love, peace, understanding and prosperity in their families.
And about the tails ... On the first page in the Notes there is a link to Zechariah's green tea, where the title also contains strawberry tails as a Bonus ...

Oksana, you cannot compare the aroma of cherry tea and raspberry tea, cherries smell strong right away, but raspberries need to be infused and it will still be weaker than cherries. Try to make raspberries with cherries, then you will immediately feel the aroma. And also different varieties of raspberries smell differently, however, like other raspberries.

I also often look through it, but from about 400 to 600 pages, especially about 500 xx pages, it was fun then, though not quite on the topic.

Nadyushich, Nadia, my raspberry smells IMMEDIATELY, like raspberry jam. Moreover, she did it from different varieties of raspberries. Autumn smelled worst of all, from the leaves reddened and bronze after the cold

lappl1. Lyudmila, tell me, tomorrow morning my dad will go "hunting" for Ivan-tea (I read a lot of different tea topics and decided to do it too), I will pick them up in the evening and go there and back 60 km. How to prevent it from rolling over?
Elena Kadiewa
NataliaVoronezh, Natasha, wrap it in cloth and everything will be fine! Let dad spin it right away, you will pick it up, if the fabric is damp, then wrap it in dry, it may just wither.

I don't smell like raspberry jam, I made different leaves and thorny and large dark green and small light ones. Only a few months later the aroma appeared and even in the rustic raspberry appeared. While I am making Ivan tea, there is still an opportunity, but in the plans to make raspberries according to Zachariah, here, I think, it will appear brighter.

Natasha, well, good tea! And dad is great! That's right, there is nothing for my daughter to take time off tea ...

tuskarora
Hello everyone. Here I am reporting. Even I think I screwed up the first batch of currants. It seemed to change the smell during fermentation, but the color did not turn very brown. In addition, after reading several previous posts, I found a mistake. I first withered currant leaves in the barn overnight, but in the morning the vein still crunched and I wrapped it in a diaper. And when the diaper was unfolded, both she and the contents were perceptibly warm. That is, fermentation has already started. And I did not understand this due to inexperience and also put it in freeze for the night. and only then twisted, cut, fermented. Now I'm drying in a dryer. What will happen - we'll see. Of course I will not throw it out. Even just a dried currant leaf is good in tea.

Now another bush is uprooting his son. So the sheet is abundant. This time I will immediately freeze him, and then I will scoff at him.

tuskarora, I'm the same teapot, it's only the second year we have been making tea with my husband, you need to know how "our father":

-freeze (good)
- ferment (correct)
-dry (1 cm layer)

tuskarora, Lena, and currants should not have a very brown color.

Girls, well, I can't wilt well, the leaves begin to dry and that's it ...
I tried it in different ways, laid it out in a thick layer and stirred it up, wrapped it in diapers, froze it, wrapped it in cloth and then in a cellophane bag and then kept it in the refrigerator ... like I tried everything, the veins do not crunch, the lump does not seem to disintegrate much, but also clearly does not hold
when I start to twist or twist the juice, little is released, so I feel that fermentation is not going as it should ..
actually went for the next portion of leaves

wrapped in diapers, frozen, wrapped in cloth and then in a cellophane bag and then kept in the refrigerator ...
sveta-Lana, Svetlana, do not put leaves wrapped in cloth in a bag. Moisture needs to evaporate somewhere, but it has nowhere to get out of the bag. Have you put the leaves in a dry cloth when they lie there and the first cloth got wet? So sometimes 2 - 3 times you need to rewrap in a dry cloth.
Is your fabric thick? If it is thin, then there will be no desired result either. How long was it dried in the fabric? What layer were the leaves wrapped in cloth? The same as in the photo in the recipe, small? If it is a thick layer, then it is clear that the leaves will not wither.
Quote: sveta-Lana
laid out in a thick layer
What is Tolstoy? Don't need a thick layer. How will they dry out if moisture from the lower layers does not evaporate? It will take a long time to stir up ...
How long do you wither? If it's damp now, then it can dry for 2 - 3 days ...

Olga. I dried the ponytails on paper towels, dried them, and put them in the freezer. and then scrolled with an apple leaf. And the second tea mixed tails with grapes and raspberries. True, the tails were from garden strawberries, but I think they are similar. In the freezer, tails from meadow strawberries are waiting in the wings.

Good afternoon girls.
I share my experience. Yesterday I twisted the apple tree leaves from the freezer. I put it on fermentation. Here they call - out of town there is an opportunity to leave by car. Smell - fry early (3-4 hours have passed). I put it in the refrigerator (+4). I arrived late in the evening. She sniffed it back. This morning I smelled it - it’s the most direct! Fried in a skillet. Very pleasant aroma. I haven't stayed yet. The time spent in the refrigerator is about 18 hours.
Radushka
lily, heroine! Laugh ... I wouldn't go anywhere if I started making tea. Fair. For me, if it's time for tea, EVERYONE IS DIED
lily_a
I so wanted to make an apple tree. I was afraid to spoil it. But to get out of the city - yes with comfort. I could not resist. I had a very pleasant time. I ate the berries. I breathed in air. I treated myself to green peas. Dill, melissa flowering gathered.
Radushka
lily, but I'm not reproaching. It's good that we managed to relax and usefully. Nobody would have called me, I think ... Everyone knows that such trips are possible for me only on a planned basis. Like all other cases. All my life like that.
It's good that the tea turned out. But it's better not to risk it anymore

I either dry separately and in tea. Or save up in the freezer in the village.
francevna
Radushka, in 2014 and 2015, I once had to put the cups of tea in the refrigerator, did a lot, did not have time to dry it right away and decided to rest, not dry it at night, the tea turned out to be very fragrant.
Radushka
Alla, that's why I don't do much. One batch a day. Rarely when two
tuskarora
And I'm drying cherry tea. Oh and the smell !!!!!!!! Aromatherapy in its purest form. This time everything went well. I twisted the leaves in a meat grinder, the mass turned out to be so sticky, slightly oily. Fermented in a cartoon. At first I slightly warmed it up on the yogurt mode, and then turned it off. It was warm there.
