Fermented tea made from leaves of garden and wild plants (master class) (page 296)

SOS ... after withering and freezing, Ivan's tea leaves stand up as a sticky lump in a manual meat grinder and do not come out
lati, Tatyana, there can be three options here:
1.In general, Ivan tea does not need to be frozen. This makes it too juicy. And we do not need extra moisture.
2. it's a meat grinder. Manual meat grinders are capricious. There are excellent ones, and there are those that you can't turn the leaves. Here at least do something, it will get up lumpy. Scroll back often.
3. The leaves have withered a little, so they are too wet.

mylik.sv, Elena, I am very glad that everything is successful! We must continue further, so that there is something to pamper ourselves with on cold winter evenings
IvaNova
lappl1, welcome back!
mylik.sv
Elena_Kamch, Helen, thank you! It's so nice when someone supports you. I doubt and worry all the time that I am not doing the right thing (I read 1 page constantly.) I understand that the instinct for the fermentation time and other subtleties of tea making comes with experience, but ... I worry, in general.
For insecure newbies like me, every word of encouragement from experienced tea makers is essential. Thanks again!

Now they are defrosting about 1.5 kg of leaves. I'm worried again.
Elena_Kamch
mylik.sv, Helen, everything will work out! Do not worry! This is not such a difficult science. And now you definitely can't leave the door closed.
As experienced tea-makers write, even tea of the same composition each time turns out to be individual and different from others. But it's still delicious!
So, you don't need to worry!
mylik.sv
Elena_Kamch, Helen, thanks again!
The leaves are almost thawed, I'll start twisting them soon.
francevna
mylik.sv, Lena, you don’t need to worry, or maybe our well-being affects the quality of tea. Think about how tasty and aromatic it will be and how pleasant it is to drink it in winter.
Leave it in the bag without opening it until you feel a pleasant fruity aroma, and then cut or twist, the fermentation can be reduced.
I compare last year's teas: leaf teas are more aromatic, while granulated teas have a rich color.

Tea does not tolerate fuss and nerves. Tea is magic
mylik.sv
francevna, IvaNovaThank you very much for your advice and support!
When I get my hands on the process, then I will also become, like you, a tea fairy.
In the meantime, I'm just studying and still worry about the result.

The tea is already in the oven. I dry on 3 baking sheets at once. Not easy, but it will be much faster.
francevna
mylik.sv, Helen, I wish you good tea
mylik.sv
francevna, Allochka, thanks!

I hung it up for drying, we'll wait.

All day, while I was making tea, my daughter did not stick her nose out of her room. She says that there is such a pungent smell from the leaves that her head begins to ache.
And when she began to dry, she barricaded herself behind two doors, turned on the hood at full capacity and opened the window wide. And still she smelled strong!
My husband and I smelled good. My daughter had never noticed such a "thin" nose before.
Someone had this? I am afraid that he will refuse to drink my tea now.
Elena_Kamch
mylik.sv, Len, it seems to me that children sometimes have ... My daughter doesn’t drink my teas, and I don’t insist. Everything has its time
mylik.sv
My child is already 22 years old. I thought I had grown to the common table.
Elena_Kamch
And my 20 is about to knock. Not a baby either. But there are preferences
But mate drinks and likes it, although many adults cannot stand his spirit. Silly ...
mylik.sv
Mine with mint loves.
I dried it granular, without fermentation, as Luda taught.

Oh, and I haven't seen this recipe yet and haven't finished it ...
lappl1
mylik.sv, Lena, as I understand your excitement! When you do something for the first time, you always have doubts - am I doing this? But our tea is such a thing that, as Elena_Kamch rightly noted, it turns out different every time. And to spoil it, you still have to try. All the same, the tea will turn out. If you don't see it right away, then after a couple of months you wonder what and where it came from.
And I really understand your daughter too. For me, the smell of tea is also very sharp and concentrated, although very tasty. Therefore, I always dry tea on the veranda with the door open. Well, when the tea dries up, then nothing will be so sharp. So, you don't tell your daughter what kind of tea you made. She may not distinguish it from the store one.
In general, good luck with this exciting activity! There is still time to make tea. Do it to your health!

Oh, and I haven't seen this recipe yet and haven't finished it ...
Elena_Kamchand there is no separate recipe. In the same recipe, everything is written, which describes the preparation of tea from plants, conditionally combined by me into the 3rd group (mint, lemon balm, pine and other aromatic herbs-leaves).

It is not the spirit that pins into the mate, but the result of the technique. The action of this product is extremely individual - from no to "complete enlightenment". It has been observed that the combination of mate + puerh dramatically increases mental performance, but may not be harmful to health.
I can't explain the mechanism, not a chemist

Lyudochka, thanks to you, I started making tea only this year at the end of May. I consider myself an inexperienced beginner, that's why I worry every time. It's just that I am very sensitive to the preparation of tea and responsibly.
Lyudochka and everyone who shares their experience, thank you very much!
Elena Kadiewa
mylik.sv, oh, yes you are always welcome! We are very glad that everything is working out for you!
Every time I have excitement, what will be the taste, color ... about "it will turn out" I do not worry ... almost ... none where.
Now the seagulls are getting dry, zapaaaah! I sit, trudge!

lappl1, Ludmila, At the expense of freezing Ivan-tea: (1. In fact, Ivan-tea does not need to be frozen. It makes it too juicy. And we don't need extra moisture.) I read that hundreds of ready-made tea were prepared in Koporye during the summer season poods + filled with "cold" (holes with snow, which were hinted at and thrombosed and the snow did not melt almost until the next winter) "extra" because. That is, those raw materials that they could not cope with during the summer-autumn season. The production of Koporye tea was carried out almost without interruption! I believe that when the leaves are frozen and thawed 2-3 times, excess water (moisture) freezes out, and a more concentrated juice remains, which gives a strong smell, in the end result, the aroma of tea. Well, this is my opinion and a little experience of working on Wan-Cha The first experience was 10 years ago (blackberry leaf), Ivan-tea for 7 years for sure! I started to write down only a year ago: what, where, when, how much - and the result. Something like this :
francevna
Alexei, today on TV they showed Ivan-tea from Mari-El, I just drink this. Today I looked at the date on the box, and it says that one tea was made in November 2014, and the second in March 2015.
Lyoshka
francevnaThat's right, stocked up for future use, as the turn came to him - and so they did!
Lyoshka
francevna, People work, they earn money, the more raw materials they prepare, the more they sell. And the technology is debugged and the equipment is probably working (temperature, humidity) everything is under control - so the tea comes out about the same, well, maybe 2-3 varieties + with the addition of fragrant medicinal herbs or berries!
francevna
I also thought about storage facilities where these blanks can be stored. I must have thought about it at lunchtime, and received an answer in the evening. Wonders .

We have planted (decoratively) Ussuri pear bushes on the territory of the enterprise - it is almost impossible to eat fruits (the lemon is resting), but tea from the leaves of this pear is considered the most successful. I was very eager to try, but ... some pollution (I will not collect leaves). Of course there is an option - to plant seeds, and in 3-4 years there will be a bush (s). And yet ... Did anyone try Tatar maple leaves for tea? Unsubscribe. Thank you

Lyoshka, Alexei, thank you - this info will be useful to many. Although Zakhariy already introduced us to this method this year (a link to his method of repeated freezing and defrosting is given in tea from garden plants).
Actually, I answered lati (Tatiana) on a specific situation, when after a single freeze the leaves "become sticky and lumpy." And Tatiana prepared raw materials in a glass, and not for the whole winter. My experience shows that freezing ivan tea leaves - an unnecessary (and even harmful) procedure if you make tea here and now. And in the recipe I described just such a case when raw materials are harvested not for a year. It is already now, with the collective mind and experiments of Zacharias with repeated freezing and thawing, we realized that you can make delicious tea. It would be desirable to expose his method as a separate recipe. We must ask him about it ...
Lyoshka
lappl1, I agree. There is a method and has already been tested - you need to chew the nuances for tea makers, and - on the WAY! Another question: Ludmila, do you really live in Alma-Ata? I served there (in Burunday) I appeal to EVERYONE, to ME - to YOU:) Thank you!
YaTatiana
Luda, well, I just finished the tea from the garden with Ivan-tea, the leaves lay in the freezer for a month and a half, thawed them once about a couple of weeks after they froze. Today I twisted it in a meat grinder, let it stand for 5 hours, dried it in pans, dried it in the oven. The smell is impossible to describe! Brewed right away, well, very tasty and aromatic! Everyone writes that in a month or two it should be even tastier ... And where else is it tastier?
Lyoshka, indeed, the granules turned out to be quite moist, but the meat grinder easily coped with it, and there were no problems with drying.
Zachary, thank you very much for this method!

It is not the spirit that pins into the mate, but the result of the reception
IvaNova, Irina, well, don't tell me! We have been drinking it for many years and have already achieved deliciousness for ourselves! You drink and delicious!
The result of the reception still largely depends on the brand, type of mate, etc. There is mate with a high content of matein (they write that it was collected at a certain time of the year), there it is in action .... yeah! Indeed, "pins"
For autumn, in my opinion, the most beautiful morning drink
Marusya
I ask all experienced tea-makers to help me, the teapot
The garden is still full of apple, apricot and pear leaves. What would you recommend to make the first tea in my life? And how many leaves do you need to collect? And then I with a fool can at least pluck everything!
Rada-dms
Marusya, Maroussia, if the leaves are clean, healthy, pluck everything as soon as possible. Put in different bags and freeze, then finish. And immediately do each type separately, then try it, most likely you will like the mix.
And there are no cherries. I have sprinkled everything, there are several young shoots, they still grow green, so I have all the gold. I'll add a little to each mix for flavor.
My hands are already combing! we have nothing to cut off ...
You need a lot of leaves! They, like grasses, also shrink and shake off a lot.
Marusya
Rada-dms, Olya, don't you need to dry? Can I go to the freezer right away? Luda writes the second stage - withering of leaves.
Quote: Rada-dms
My hands are already combing!
And I am already shaking with fright
Rada-dms
Marusya, you can dry up. But here I put the mix into the freezer a week ago without withering. While driving from the dacha, the leaves thawed. God! What a scent, I put them in again today, I will definitely dry them tomorrow.
It seemed to me that autumn leaves no longer have as much moisture as in summer, so I did not wither. You do it according to the rules first, freeze some of it. Compare! Do not miss the moment, they will soon fly around, so there is as much frost as possible. Or recycle immediately.
Rada-dms
Marusya, do not be afraid, even my husband learned to do it himself, while the injury did not allow. We have done little this year - I am suffering now. Ivanushka will have to buy.
Marusya
Rada-dms, Ol, thanks. I'll try this and that. I'll go to cut off as much as possible, since there is a place where to attach everything.

Good luck, you, most importantly, a little more, and then they will advise here !! No quince? Look at the neighbors for what they have, look for a pear, you can still find strawberries and raspberries. The blackthorn has not yet flown and the blackberry is good.
Marusya
A neighbor has quince, I have an apricot, a pear, an apple tree and a strawberry. That's it, let's go!
Elena Kadiewa
Uraaaaa! I liked it, smart girl! Daughter, sweet candy for you! Bitter chocolate!
YaTatiana
Marusya, you do not need to be afraid, you need to do it, everything will definitely work out! In the summer, I stuffed it into the freezer, but didn't dry it at all. True, they got into the freezer after a few hours in the package. I have learned the main thing for myself - tea will definitely work out! Moreover, delicious and aromatic!

mmm, don't jinx

Ussuri pear - the fruit is almost impossible to eat (the lemon is resting)
And the jam from it is wonderful, but for tea
francevna
Marusya, if your leaves are clean and you don't need to wash them, they will quickly fade. And then into the bag tightly, squeeze out the air and into the freezer. The trees have not been sprayed recently
mylik.sv
Marusya, I am at least still a beginner tea-maker, but I also want to support you and wish you good luck!
It is very convenient to dry the leaves by wrapping them in an old sheet or something similar, rolling them tightly. And this is faster, and you don't need to mix. I really liked this method.
