Fermented tea made from leaves of garden and wild plants (master class) (page 294)

I have forest raspberries, young tender leaves, rolled in granules,
I, too, were young and forest ones, they wilted, I once shoved them into the freezer. When scrolling for the second time, I added a handful of berries to the whole mass and the leaves were not tough, but for some reason it did not work out - they crumble. I will try again, I want to achieve mono granules, I really liked the taste
Elena_Kamch
Divnay, Irina, this is your stocks !!! The husband also got carried away? And then the most in a manual meat grinder how much you need to twist such volumes!
Elena_Kamch
natushka, Natalia, everything will work out! I also did the same mono-raspberry: wilted, then in the freezer, defrosted and rolled once. There were no particularly obvious granules. Then I fermented the night and in the morning I played it with raspberries (I took a little). The granules are very good and stable came out And after drying they remained intact.
Elena Kadiewa
Greetings to Kamchatka!
Divnay
Elena_Kamch, Elena, my husband liked the tea, helped, of course, if possible, but he was at work in the city. I practically did it myself, he bought us geese, so my son and I were in the country and lived all summer. While they were being raised, the leaves were twisted.
Divnay
Of course, it's hard to use a manual meat grinder, to be honest, I liked doing it with my hands, but it's also not easy, my hands just hurt the next day from kneading.
Elena Kadiewa
Electric meat grinder to help you!

Greetings to Kamchatka!
Siberia is mutual!
Now a new Monday has come to you!

Divnay, Irina, heroine! I always try to put a meat grinder on my husband. He somehow turns out much faster than mine. But we are far from such a scale. I have access to the leaves only once a week, and then not for long. But immediately, first of all, I run through the leaves, leaving everything
Divnay
Elena_Kamch, Elena, we have already finished the entire leaf season (there is only badan in the refrigerator), and unfortunately there are no leaves anymore.
Divnay
elena kadiewaElena is electric, of course, wonderful, but every time she turned on the manual she was happy that the meat grinder was straight hot and probably no electric motor would have withstood it.

And here it is still green, I don’t collect leaves now, I’m waiting for the rain to wash the dust off the trees. Yes, and from the autumn leaves last year, a very fragrant tea turned out.
Divnay
Over the summer, it has already developed what I like and what I don't. Now we will already collect according to our preferences. That's the truth, there are no comrades in taste and color.
francevna
Divnay, Irina, I twist on Zelmera, heats up, I don't overload, I add a little leaves. But the hand does not hurt.
Divnay
francevna, Alla, for myself, I decided to collect currants until August (otherwise the leaves are then all sick) and Ivan's tea, and since August, from the garden, more aromatic tea is obtained.
francevna
I made summer teas in June and July. August was hot and dusty, it hadn't rained for a long time, so I decided to wait it out.
Divnay
francevna, I first have the priority of the plugs (3 units), then the meat grinder.

Alla, and I am something in thought ... At the beginning of August I was collecting cherry leaves, a little of them were in the mix of raspberries + strawberries + apple trees. And aromaaat! Cherry like that! I liked it very much.
And here a week ago we collected more cherry leaves than last. I thought there would be a rich cherry flavor. I made tea, brewed it ... And I was really upset! There is no cherry flavor at all! How can this be? The cherry tree is the same.Could the difference in the month in the collection of leaves be so?
francevna
Irina, we don't have Ivan-tea, there is also a problem with blackcurrant foliage, mainly varieties grafted on red currants grow.
francevna
Elena, cherry tea will infuse and the aroma will appear, do not worry. Tea turns out differently every time, depending on many factors.
Divnay
francevnaAnd I have one composition, but everyone tastes different, in general it depends on everything. A small change and the result is completely different.

I’ll hope I liked the cherry tea so much, but this year I’ll hardly get to the cherry. In our area it is exclusive.
Radushka
Elena_Kamch, is there a blackberry? I liked her tea even more than cherries.
iriska3420
We had such a comfortable beginning of September, but now it's hot again. Everything is green, but the leaves are so exhausted and ugly. Either sick or all in sunburn. I don't want to collect them. And for this reason, the tea-making season is ending. And you can already start tasting your teas. The flavors in the jars are excellent. I think. that my jars should be enough for me until the new season. I wish I had time to sign what the tea was made of. But my assortment is about the same everywhere. Mono-raspberries are simply royal tea.

Irina, I will subscribe to every word!
BUT ... if you have the opportunity, next year, make raspberries and pears in half. This is something special! I did it with an apple tree, not at all. Tasty, but with a pear is a completely different matter!
Elena_Kamch

Elena_Kamch, is there a blackberry?
Radushka, no. I love cherry in all its forms, I just wanted cherry taste. I'll wait until, maybe dry fermentation will help ...

Radushka, or more details.
I didn't like the mono pear at all, but access to raspberries is limited, I would not want to spoil it - I really like it soooo.
Radushka
Svetlana, I did not do a mono pear. Only in mixes and with raspberries. If you didn't like mono, then you won't like it with raspberries either. And I did like all my mixes. Wilted-promorosila-mixed-twisted twice on different grates-fermented for 4-6 hours-dried for 5 minutes at 150, 10 at 125, 20 at 100 and dried at 60.
s_vet_lanochka
Radushka, Thank you. So, let there be raspberries in splendid isolation.
Radushka
Svetlana,
Seberia
Here, too, I will try to scroll the raspberries after sweating. And then I somehow immediately took it for an axiom that it does not granulate.

I didn't like pear-mono at all
Mono pear tea should be tried no earlier than a month later. Our leaves were not wild, but a wild tree. My tea has a good industrial tea scent. This tea was one of my first teas and I screwed up a lot in making it. It was a pity to throw it out because of the spent tons. But a month later, it turned into almost elite tea. Lyudmila often repeats that she would not drink the tea she just made, that she would not be disappointed. But how to resist ?! I drink (no willpower).
Radushka
iriska3420, Irinaand I drink. And we all drink. Pear and raspberry immediately showed their best side.
Vasyutka
Now I brewed cherry-blackberry-grape-mulberry tea (mulberry). The color is dark amber, transparent. Taste - blackberries, cherries, grapes are guessed. But the mulberry tree gives a pumpkin flavor. The overall taste of the tea is pleasant, I sip sip. Mono mulberry with a peculiar taste, too, I can't describe which one, the girls here wrote pumpkin. We must be careful with her in the mixes.
francevna
Nataliya, that's interesting. Last year I made a leaf from dark mulberry, this year it was granulated, but in mixes. There was never a pumpkin flavor. Maybe a certain combination gives.
I forgot, there is a little mono leaf mulberry, tomorrow I will brew and unsubscribe.

And I forgot to open the door ajar and ran the oven, on convection, though, almost all the time the tea was drying! Is that all, khana to my tea ?!
Girls-boys, my dear ones, tell me, can you still hope for something?
francevna
mylik.svLena, herself several times forgot to open the oven, though not for long. What was the temperature?
mylik.sv
Allochka, did it with frying. First I set 130 for 5 minutes, then 110 for 10 minutes, stood for 30-40 minutes at 80 and dry it at 50 degrees. Everything is on convection. She often opened and interfered. I dry on two baking trays, I took out the top one while stirring the tea on the bottom one, then put it back. Is there hope after all?
francevna
Helen, don't worry too much. Pour into a cloth for a few days, then into jars and do not touch for a month. And there it will be seen what happened. You can always throw it away, I think this will not happen. Moreover, you mixed it.
mylik.sv
Allochka, thank you very much for your support1
I will very, very hope that I will succeed.
These strawberry leaves were very hard for me. The tea is almost mono-strawberry, with a small addition of grapes (from freezing) and cherries. The strawberries were dirty, I had to wash and dry for a long time.

And we! We have such a direct tradition - just dried tea and that's it ... My husband urgently requires tasting fresh!

mylik.sv, Elena, I think everything will be fine! Why are you so worried? Tea is heard by rustling when it is dry
mylik.sv
Elena_Kamch, I am afraid that it will not be cooked, I have worn out.
Somewhere in Temko I read that this is bad, the door cannot be opened.

Yes, if I stirred, opened the door, I think everything should be all right! And to do as advised - to hang in a cloth bag to. Do you have dry air? It was with us that I threw this business with bags, it turned out not to dry out, but, on the contrary, moisture, since the humidity is always high. Tea completely stopped rustling and had to finish drying as a result.
mylik.sv
Elena_Kamch, yeah, the seagulls are already hanging, drying up.
Our nights are already cool, so while I hung it in the room, and in the morning I will transfer it to the balcony. So it will ply back and forth until it dries up.
Elena_Kamch
Elena, and right! Then write how the result turned out
Elena Kadiewa
mylik.sv, when drying, there must be a gap, well, let's hope that everything worked out. In general, re-read the recipe.
Elena_Kamch
Quote: elena kadiewa
there must be a gap when drying,
There are other holes in the oven through which steam is released. It seems to me that it is uncritical that the door was closed
Elena Kadiewa

Helen, re-read the recipe, there must be a prerequisite - the door must be slightly open, there must be a gap, this is the technology of making tea.
Elena_Kamch
This is understandable. But what if the force majeure happened? It's a pity for my work
Elena Kadiewa
Force majeure is understandable, but so that the rule is not included!
