Fermented tea made from leaves of garden and wild plants (master class) (page 291)

I will unsubscribe from my experiments with a leaf of a bird cherry.
I made some mono tea and, since everything is rapidly turning yellow, in the mix: raspberry + tsp. currant + strawberry + bird cherry.
I'll tell you right away, teas are not for everyone. I made both teas according to Zechariah, mono tea never gave granules either before not after fermentation, or after several trips through a meat grinder with different grates, most likely the leaf is already dry. So it came out of the oven looking like cocoa powder. When brewed, it gave a yellow-brown color, a tart taste with a slight bitterness, the smell of bird cherry pits. It reminded me more of coffee than tea. The mix turned out in granules, when brewed a dark brown color, a great complex aroma and the same taste. What is the difficulty? You drink a sip of wonderful aromatic tea, and after that you feel a persistent aftertaste of bird cherry (after mono tea you cannot confuse it with anything) and it spoils the whole experience!
Maybe he will catch up with his connoisseur, I have only a faint hope that he will be corrected by dry fermentation. I don’t want to dilute it with others, I decided to try mono teas in order to decide on "my own" - yesterday I made it out of a cup of currant, completely delighted with the result! It is worth on the fermentation of raspberries - I also have high hopes.

In this mix, I would replace bird cherry with an apple leaf.

nikozay, Nikolay, thanks for the experiment!
It is interesting that you did not like the bird cherry ... Yes, in the mono version it cannot be collected with anything - it crumbles. And leaf tea turns out pretty good. I do not think that dry fermentation will fix anything for you - if the tea is not to your taste now, then over time the bird cherry will only intensify.
But raspberries with currants cause the same feelings in most tea-makers as in you - everyone likes it.
It is correct that you taste the plant through mono teas. This is the only way to choose the best ones for yourself.

I would also gladly experiment with an apple tree and a cherry and a black chokeberry, but they do not grow in our north (the chokeberry did not even reach a meter in height in 6 years). But thanks for the advice, next year I will order "herbariums" from the south ...

Made strawberry tea. though there added 10.89% fireweed (it was necessary to "attach" it somewhere).
I was surprised, but even without the addition of fireweed, the strawberries the first time (on a large grill) scrolled just great and did not crumble at all ...
Fermented tea made from leaves of garden and wild plants (master class)
the second scroll was on the middle grid - the granules held together even better.

After drying, there was practically no dust / debris ...

Anyuta, for me, while tea from wild strawberries and strawberries is the most delicious and astringency, and color. and taste. And also with dried strawberries !!! And if there is a forest ...

Anyuta, Natasha, strawberry tea - super! I also like it very much. Well done, that they could cook this.

Lyudmila, lappl1, thank you tremendous for such a volume of information !!!!!!!!!!!!!!!!!!!!! It is worthless, contagious and you want to "get sick" with it.
Back in the winter of 2014, I came across your information about tea, saved it and really wanted to try this tea. I started trying to make tea only from the beginning of August, our weather is nasty, it is raining and cold all the time. Studying the materiel, by trial and error and studying again, it began to work out. Of course, there was no fireweed by this time, but for now there are leaves on the trees in the garden. At first I collected a few leaves, tried and fermented in small containers, it turned out garbage.
After I collected some fireweed and when it was drying it began to smell of smoked sausage, the cat ran to the smell, did not understand why no one was eating, but it smells Then I realized that I had to stop fooling. I took a whole big bag of strawberry leaves and the layer for fermentation turned out to be 7 cm, so I felt what kind of process it was! You can go crazy from the smell, such aromas were awesome. Now the freezer is full of all kinds of foliage.
Thank you, Luda, for such a pleasure! For your patience, answer the same thing so many times. So I want to shout (and sometimes break the laptop), people, read! So everything is planned and chewed! Until you try, you will not understand what and how.
francevna
Natasha, Lyudmila not yet, will answer later.
Welcome to the forum and tea topics.
While there are leaves, prepare tea, there is never too much of it.

NataGrig, Natasha, to your health! Welcome to tea topics and our wonderful forum! I really understand, like all tea-makers, the cause of your "tea illness" - pleasure is brought not only by ready-made tea, but also by the process of its preparation.
Thank you: rose: for describing how you came to understand that if you make tea by reading a recipe, then everything will work out. It is very important. And then the process will follow the knurled one. Make tea some more. There is never enough of it. And there is enough time - until the leaves all fall off.
NataGrig
Lyudochka, lappl1, thanks for the welcome! I didn't write the main thing - I read all 733 pages, only where you wrote about all sorts of goodies and pastries diagonally (health does not allow, illness, surgery), but it is also very exciting. Thank you, studying leaves, I began to return to life after an illness. I'm trying to collect a leaf, after all, we have the Urals, it's cold, rains and autumn. I mainly make a mixture of leaves, like Country. Strawberry + pear + blackberry + a handful of fireweed gave a crazy aroma, even in a bag on drying it smells.

dealing with leaves, began to return to life after an illness.
how do you dry them?
Elena Kadiewa
vlek, in the sense of "how do you dry them"? The recipe itself describes the drying methods: oven, frying pan, airfryer ...
Natasha, welcome to us, we are very glad that our gull gives you the strength and desire to do it. And I live even further than you, even more days on the train, but I have been making seagulls for the second year, so you can swing around here if you wish.
Special thanks for the phrase

vlek, in terms of"how do you dry them "? The recipe itself describes the drying methods:oven, frying pan, airfryer ...

In the sense of the phrase "began to return to life after an illness," that is, for obtaining a therapeutic effect, drying of tea is important first of all, for example, it is a frying pan.
NataGrig
vlek, I dry in the oven, I have a built-in electric. And the phrase "return to life", so in the full sense, after an illness and a major operation, depression, the world ceased to exist. Although I am a creative person (I can do a lot with my hands), I didn’t want to do anything and now I don’t want to, but the process of creating tea carried me away. Yes, in a sense, a therapeutic effect and I really like the smells. Something like this, I hope not much and will recover over time.
NataGrig
elena kadiewaThank you, Lenochka! I read everything about you from the very beginning. Together with you I was happy and sad, to some extent made friends with all of you. And I didn't write before, I said so myself - until I read everything to the end, I will not write. We must thank all the girls for the tea experience, there are a lot of interesting posts in the posts. You yourself studied last year, and I’m with you this year.

NataGrig, Natasha, well, it's just a feat - to read so many pages. And in the winter, it is true, we chatted about everything in the absence of raw materials for tea. But in March, for such off-case conversations, I created the Tea Gazebo. Here's where to turn around! It's very interesting there. Come back when there is time - we are glad to everyone. An active link to the Gazebo is under each of my posts.
I wish you a quick recovery. By the way, our Gazebo also has a therapeutic effect. Checked - any blues go away. And we get such a charge of vigor in the Gazebo, we discover so much new for ourselves that there will definitely not be time to be bored and depressed, and then there will be no desire. So, welcome to the Gazebo, Natasha.
Elena Kadiewa
They will give a magic kick there, if anything ... come, you will teach us what you can, we are grateful students. And it will be interesting for you.

and we will treat your soul

Duc, in this sense, and I asked the question, in order to obtain a more complete therapeutic effect from tea, first of all, personal participation in the process of its preparation (starting with the collection of leaves) is necessary. The most important stage is drying, the task is to preserve the enzymes (enzymes) as much as possible after it (color, aroma, etc.).
lappl1
vlek, I fully agree that the drying process affects the amount of beneficial properties in tea. But the emotional state is much more important in any recovery. And an interesting thing always straightens him in a positive way. I think that Natasha meant it. And another question - what has a stronger effect on recovery - useful substances or a positive psychological attitude.

Well it is necessary, what willpower. Then you will definitely defeat the disease. Come to the Gazebo for daily therapy, we have a special atmosphere there, highly healing! And I like mixed teas most of all. Right now I was brewing the "Autumn" tea for the patient of that year (apple / pear / black chokeberry / currant / raspberry / goof / barberry) with autumn petals, so he fell into a stupor, he said: "Magic!" ...

which has a stronger effect on recovery - useful substances or a positive psychological attitude.
First comes motivation, as they say - if people want to live, then medicine is powerless)))
Then "swing", substances - positive changes - mood.
Conversely, a positive mood contributes to a better (qualitative) assimilation of the substance and, accordingly, entails further shifts in recovery, that is, it is an interdependent and borrowed process that can be divided by current conditionally.

Good evening everyone! Autumn came, it got colder and went to sample my summer tea work. I want to report on STEAMED SILKWOOD tea made according to Zacharias recipe.
The mulberry leaf steamed for 12 hours on heating mode in a multicooker (60 degrees), then turned it in a meat grinder with a large grate. Scrolled easily. The granules are large and strong. Dried in a dryer 70 hail.
After dry fermentation 1-1.5 months. brewed in a tea maker: the infusion is transparent, the color is emerald green, the taste is quite neutral, not tart. The aroma is very light herbal with honey notes. The tea turned out quite to my taste and my nose. (I don't like harsh tastes, and I can't stand strong aromas at all). For lovers of aromas, it is quite possible to mix brighter with cherries.
Conclusion: the tea is peculiar, but very not bad. Lovers of green tea with a mild taste will like it. So the steamed mulberry tea TO BE!
Special thanks to Zechariah for sharing an interesting recipe for making tea!
francevna
Irina, good evening! Last year she made loose leaf tea from mulberry, dried it at a temperature of 120 to 35 degrees. The color is rich yellow. This year I made granulated tea, the color is dark. This tea lowers blood pressure, helps with diabetes.
filirina
I also made a regular, non-steamed mulberry, but I have not tried it yet. It was only a report on steamed mulberry. And if it lowers blood pressure and sugar, it will generally be super. I need it!

filirina, Ira, thank you very much for such a detailed and informative report on mulberry. I am very glad that the tea went to taste. Well done, I did everything right. I join your gratitude to Zachariah for discovering this method of making tea for us. If I ever have a mulberry, I will definitely do it.
We are waiting for impressions about other teas.

Maybe someone will be interested, she made tea from wild strawberries, which have reborn and only bloom, but there are no berries. No tea, not impressed, although it has been soaked for three months already. Only add it to the mix.
I made tea from bublyaniki, just found out about it, immediately brewed it, it smells like dried fruit compote. I'll see what happens to her next, maybe he'll grow wiser, but for now I'm not very ...
But I really liked the tea made from real strawberries! And taste, and color, and aroma!
Elena Kadiewa
Nadyushich, Something I have not even heard the name of such a bubble, what's this with what?
Nadyushich
Lena! I myself only saw this miracle at my friend's dacha. This berry is smaller than strawberry, but larger than strawberry with a strong strawberry flavor. Very productive. Very sweet. But the jam from it is delicious and does not have the bitterness inherent in strawberries.
paramed1
Flax, as is sometimes called a hybrid of strawberries with strawberries - earthworm.

lappl1, Lyudmila and everyone who can help me out. I collected fresh, green leaves of badan, you need to do everything right. I read the advice, but the picture still didn't work out in my head. Do you need to dry fresh berry leaves? Or put it right in the freezer and do it like Radushka? Numerous while freeze_ unfreeze be?
francevna
Irina, I won't say exactly about the leaves of badan, I don't have it. reread it carefully, maybe the girls will answer. LUDOCHKA is moving, so she won't be on the forum for a while.
Divnay
francevna, I'll probably do it like Radushka, into his freezer, into the freezer.
Elena Kadiewa
Divnay, do as Radushka, she has a good result! And I collect leaves in the spring.
Divnay
elena kadiewaToday, when I cut off the green ones, there are black leaves from a bucket (no one has ever touched it at all), I thought that the painfully dirty ones would not do.
I read about Lyudmila in the tea gazebo. It is a pity, I recently registered and did not have time to get to know each other better, but one message from her is enough to understand what kind of person she is. I think we are still ahead, when she arrives, then she will settle down and continue. I just wanted to show her how much tea I prepared. Of course, not as much as we would like, but still. Husband can not drink now when he is in the store
francevna
Irina, show us tea, we will appreciate it. And Lyuda will be pleased that the topic is alive.
Divnay
francevna, Alla, but I'll show it only tomorrow. My husband took pictures of the main shelf, now he is already asleep, I will not touch him.
Radushka
Divnay, Irina, I have already drunk my "frozen" badan. It froze as soon as it was collected. I didn't dry out. And when I defrost it, I didn't open the bag

Girls! Met such information. It seems to be important. Note!
“When enjoying homemade herbal teas, you should always remember that many plants are medicinal. For example, raspberry leaf is a well-known remedy for increasing the tone of uterine muscles. Raspberry leaf tea is recommended to drink at the end of a healthy and trouble-free pregnancy (starting from the 35th week) at correct diligence of the child when a woman is preparing for a natural childbirth. In the early stages of pregnancy, tea from a raspberry leaf is contraindicated, it is especially dangerous for women with a predisposition to miscarriages. " (comment from the site "Country Life")

Irina, here is more detailed from here ..., I have badan as shoe polish ...
Radushka
Ludmila, I'm not Irina, but it doesn't matter.
She tore it off without withering, put it in the freezer. I lay there for a long time. I even forgot about him. Then she took it out - thawed it without opening the package. Lying around until the evening in the kitchen (light windowsill). Frozen again for a day or two. And so it defrosted and froze 10 times, or even 15. Then I saw that it turned brown. Opened - sniffed. Smells like chagyr (badan tea after natural fermentation). Well, dried it in a dryer for 40 to condition (pretty dry, but broke, not crumbled). And she drank already. It was not much.

I think that in this interpretation "herbal tea" = "unfermented tea".
Fermentation changes the properties of plants
Radushka
IvaNova, Irina, Yes. It's clear. But, nevertheless, if there is a risk, it is not worth it, most likely, even to drink fermented. Who knows what and how much can be the last straw?
