Fermented tea made from leaves of garden and wild plants (master class) (page 228)

Lyudochek, and that you and I have feedback about dogwood tea ... Just envy and lick your lips! Tea will be good, dark and slightly tart.
lappl1
Veronica, at least we will be glad for the people. They don't have Ivan tea, so let them drink dogwoods. And then we will advise other tea-makers, especially those who are sad that they have no fireweed.
paramed1
That's right, at least we will rejoice! Oh, I forgot to complain - my neighbor's grapes have completely died. And last year I didn’t have time to cut the leaves off ... Now there is nowhere to go. As if from grief I'll go to pinch wheatgrass!
lappl1
Well ... No, Veronica, we can only start making wheatgrass when the willow tea dies out. And this will not happen. So don't be sorry. Our Ivanushka is better than grapes. Oh, southerners and southerners ... Make grapes for health! He was highly praised last year. and unanimously.
GenyaF
I will definitely try grape tea, but for now I'm harvesting leaves for dolma)))
Lyudochka, and it wouldn’t hurt to clear the topic of inappropriate chatter, after all, we are already approaching the sixth hundred pages. I think the prospect of rereading them all scares newbies, which is why they ask the same questions. Someday long winter evenings ...

Hello everyone! Thank you so much for having a place like this :-) A week ago I made tea for the first time .. well, I still can't stop. I know what is better to make from summer-autumn leaves, but how can I endure it ... Now I go everywhere with bags. In all bag pockets. In general, I broke a couple of jars of apple, pear, dugout-strawberry, blueberry, raspberry, blackberry, cherry, ivan-tea. And also hawthorn flowers, now I'm looking at the neighbor's dogwood. What I want to say: blueberry is a thing !! I read that the girls didn't really like it, but I brought it from the forest, didn't dry it, put pancakes in the freezer in bags for the night. In the morning, rolling them, a rolling pin, then into a small tray, they stood for 5-6 hours, fermented, transformed .. and the tea from them is delicate, medium-dark, slightly tart .. smells of blueberries, caramels and the sun .. I will still do it. I spin for days over my jars, boxes, smell, breathe in summer and thank you all for such my new leafy life :-).
nataligelak
About many pages .. I read everything. From the phone. And if there was a printed version, then in places and re-read. Very informative, and the atmosphere itself .. tea mood .. I have read so much that I want to love every herb, every leaf .. and when you drink this tea later, you understand that these are not leaves or granules, but summer in a cup .. And I would like to hold this cup with two palms, enjoy .. yes, these palms itch painfully on the new grass-leaves. And here are almost 600 pages of people like me, sick with teas. And questions about technology end somewhere after the first hundred pages, then you need to practice.

Oh, Zhenya, dismiss ... No one will wander into those wilds where the conversation is not on business. And until last winter and since March, everything is essentially there.
I already started to clean this topic. For this, and "Arbor" opened, to chat not on business. But after sitting for a week, I realized that it was not real. In the same place, one message is deleted. Moreover, not immediately, but with confirmation. In general, I was not enough to clean the whole topic. I could only master 50 pages. And you know, I'm not sure that the newcomers will arrive before the winter posts. They certainly won't. The main thing is to read from the beginning of this season. And the recipe itself with links. This is more than enough.
By the way, now, if you noticed, in this topic everything is decorous and noble. We are only talking about tea.

lappl1
nataligelak, Natasha, how glad I am that you are making tea and have already come to love it. And what a syllable! You are a poet! So only Nastya ours can write about our tea. Now you two will warm our souls with stories about our tea.

Zhenya, honey, I understood that.

Thank you very much for your 'thank you' and for the order :-) and for the tea :-) I just belong to that endangered segment of the world's population who live without computers and even (scary to say) without tablets. Here. But it turns out those who look at the computer screen and those who look at the screen of an old phone are sick of the same tea mania :-) The only difference is that emoticons are not convenient to insert :-) :-) Oh, how glad I am, that found you :-) :-) La-la-la, la-la-la
lappl1
Natasha, come on, God bless them, with emoticons! The main thing is that we are now suffering from tea mania together! I will also sing a little for joy.
Elena Kadiewa
Natasha, we are very glad to see you, very, very! And how beautifully write! It is immediately obvious that OUR person is sick with our teas, smells, bags, and what thoughtfulness ... come to our gazebo, if you like to chat about everything with good people, we have a great deal there!
Welcome!

I hasten to introduce myself, I'm the most evil person in these tea topics, the elder, always in my hands either a rolling pin, or even a shovel, to beat the truants! To me on "you"

lappl1
Len, a real headman! You meet the newcomers correctly.
Nelja
Girls, good afternoon! I read your recipes and choked with saliva! I decided to join - and immediately got pierced !! Yesterday, at the dacha, I picked apple leaves for a trial batch of tea, but I arrived so tired that my brains completely refused to think about something and I put these leaves in the freezer without drying, you noodle !!!!
Girls, how important is the drying process? And, if I missed it, is there now a way for my leaves in the trash?
lappl1
Nelja, Nelya, hello! I am very glad that you have joined us.
Quote: Nelja

Withering is described in sufficient detail in the recipe. At the end of the recipe there are active links to a book about tea. There is a section on withering - very detailed. Read it. In short, excess water in the leaves slows down or stops the fermentation process. And the tea does not turn out as we would like.
But, of course, nothing needs to be thrown away. You just need to ferment longer - not 6 hours, but 2 times longer.
Nelja
Luda, thank you! Let the leaves lie in the freezer until Friday, and from Friday to Saturday I will put them to fermentation. I will make the next batch of leaves according to the rules, there will be something to compare with.
lappl1
Nelya, good luck!

Forgive me for not guessing myself about the tannins in the internet to look, somehow I did not think that everything would be painted in such detail there

Girls who made tea from grape leaves, tell me, does the grape variety matter or does it matter which one, if only the grapes? And according to technology, the question is, can the leaves be twisted in a meat grinder at once, or is it better to twist by hand?
paramed1
Yulia, the grape variety matters. Girls in the last season were made from different varieties separately. Our grapes do not grow, but we realized on apple trees that tea from different varieties and different ripening periods is different - some more fragrant, some neutral. So try different varieties, if possible.
paramed1
Oh, the message escaped ... Yulia, grape leaves first dried, then as you like - you can go through a meat grinder, which is simpler, they are tough, or you can do it manually if your hands are strong. It seems to me that through a meat grinder is better because of the better destruction of tough leaves. Try it!
lappl1

And according to technology, the question is, can the leaves be twisted in a meat grinder at once, or is it better to twist by hand?
Yulia, it's a matter of taste. You need to try and manually twist and twist in a meat grinder. Some of our girls do not accept a meat grinder - only sheet! Others love only a meat grinder. So experiment and choose the best option for you.
If time in your life schedule is limited, then start with a meat grinder. This method is very time-saving.

Who made tea from grape leaves, tell me, does the grape variety matter or does it matter which one, if only the grapes?
Yulia, the tastier the grapes (as a variety), the tastier the tea will be, however, this applies to any plants.
Last year, Alla-francevna made grapes from 7 different varieties at once (she mixed them together). And I was very pleased. You can write to her in a personal message. Although she is here too, maybe she will see your question.
afnsvjul
Thank you girls for the answer. The relatives have several varieties of grapes, there are both summer and late varieties, so I was interested. And to collect the leaves of the grapes after the harvest? Hurray, what can be done in a meat grinder, because my hands are weak, and there is less free time. than we would like. Therefore, I will then try to make granulated tea
lappl1
Quote: afnsvjul
And to collect the leaves of the grapes after the harvest?
Julia, most likely yes! This principle applies to all plants. But the harvest is still a long time to come. So we did not wait for the fireweed to bloom and are very pleased with the tea. Try it now, summer and fall. The tea will be different. Compare and draw conclusions.
francevna
Yulia, the more different grape varieties, the more aromatic and tasty the tea. I have from 7 to 11 grape varieties in one tea, but this year it will be less, a lot has frozen.
I wither and freeze any leaves. It is very convenient to twist small leaves of other fruit trees or shrubs with a grape leaf; after freezing, it becomes tender and pliable. I also did it through a meat grinder, it twists easily, it's good to add raspberries to it.
lappl1
Ukrainian girls! We have a boy in the Ivan-tea theme who lives in Ukraine. He claims that there is a lot of Ivan tea in Ukraine. He has already made 2 batches of tea. Came with questions. And I suggest you stick to him and find out where does fireweed grow in Ukraine... Maybe you will make Ivanushka too?
lappl1
Alla, that's right, I remembered who made tea from grapes. And I even remembered about 7 varieties. Thank you for completing the information about grape tea.
afnsvjul
AllaThanks a lot for your tips. There are also raspberries, so I will definitely try with raspberries too

What do you think about the timing of the harvest: is it better before or after the harvest?
paramed1
Yulia, if you want to get berries, then during and after fruiting. If these are non-fruiting shoots or a huge forest raspberry, you can start right now - raspberries always contain a huge amount of useful substances. Don't forget - raspberries hardly ever granulate.
francevna
YuliaVeronica has already answered this question. I plucked the leaves at the very bottom, because shoots with flowers emerge from the axils of the leaves, and the leaves provide nourishment.
Yesterday I wrote a second message, but the Internet froze and nothing went.
I prepared granulated tea (cherry, quince, raspberry) at a weight ratio of 5: 1: 1. from 1650gr, it turned out 420gr.
Right now I sit and drink, very tasty, sweet, with a little bitterness, it knits my tongue a little, this is hot tea. The cooled, refreshing drink turned out, a slight sourness appeared. The aroma is floral, fruity. honey, but the color of the brew, like green tea, I like that. Fermented for 16 hours, and before that he lay in my bag for three days in the refrigerator after the freezer, I thought it had gone bad. There was no herbal smell at any stage, only fruity notes that were constantly changing. I dried it in the oven at 120g, but since the oven was ajar, the temperature was lower, therefore the color was lighter. Dried in Isidri. changing the temperature from high to low, now it is being dried in a bag on the window.
I would like to add that tea with raspberries is hard to drink in the heat, the diaphoretic property manifests itself.

Drying strawberries

Ulia_M
Good day! I registered on the forum specifically to communicate in this topic. She started making tea quite recently, but she has already become a big fan of this process! Everything is so interesting and I want to try so much!
Tell me, please, did someone make tea from plums? Something I did not find about information leakage. Share your experience on how best to do it and is a wild plum suitable?
Linadoc
Yulia, glad to see new tea makers! Look at the poll above, for a drain of 4%. I did it and I'm very happy, I have a yellow and black plum. Wild plum is generally super! Only it is too early to do it, it is better not to do it before the fruits ripen. Read the first page carefully, it has everything you need and everything is chewed up. We also have 3 tea topics, and the whole forum is sooooo interesting. Just look in the left column, click the forum, there are so many interesting topics!
paramed1
Lilya34676Firstly, the tea gains aroma and taste after the end of the dry fermentation process. Secondly, it is better to collect strawberry leaves after fruiting, in the second half of summer and early autumn - they will be much "strawberry", they will collect the amount of substances necessary for tea.

Hello everyone!!! I have new tea! It's called 'Random'. I was so carried away by teas that the process goes on almost continuously. I sluggish one, curl the other, mix the third in the perfume. And then I discovered yesterday, a napkin, and in it, a forgotten, covered fireweed. He is lying there, so sad ... He’s been lying for the second day ... I didn’t think that it could be ashamed in front of the grass .. In general, let me amuse him: I got married with a dried cherry from the freezer, I rolled rolls. And left them alone. Hours at 5, I thought, but was wrong. The fireweed, apparently, has its own destiny .. While the children are in the garden, now and then, today has come, and with it almost 26 hours of fermentation. It smelled like cherries, began to dry. Again it was a shame. Mixed dried roses, jasmine (which mock-orange) and tapiambura petals. More beautiful than in the store :-) And Ivan-tea liked it. Emboldened, swung open-I-I .. And I endure, I don’t brew, I’m waiting .. He was waiting for me too :-)

Ulia_M, Julia, welcome to the site and to tea topics! Let's make tea together. Lina has already answered you about the plum. Read the recipe carefully, namely the part where it is written about choosing plants for tea... It is necessary that the leaves of these plants contain tannins... Then the tea will turn out, They are in the plum leaves. So do it. Lina really liked the plum, but I didn't. I don't do it now. But you yourself have to try to make tea from different plants to decide which one you like best. The taste and color, you know ...
As for the wild ... this is how the best tea is made from the leaves of the wild.
I also suggest that you carefully read all the information that can be found in tea topics by following the active links at the end of each recipe. There are links to chapters from the book about tea. Very informative. After reading all this information, as well as carefully reading the recipes, the process of making tea by you will go more consciously.

nataligelak, Natasha, our man! This is how tea should be made - continuously, with experiments! The fact that you have "forgotten" the fireweed is great! This is how tea is sometimes specially made. And we called this method last year the "sweating method" (you can read about it from the links at the end of the recipe). And scientifically it is called "double fermentation".First, your leaves were fermented without access to air, and then, with the cherry, the fireweed went through the second fermentation. So, you have discovered in your tea kingdom a method that is widely used.
Congratulations on your lucky "Random Tea". Keep it up !

fireweed in a napkin with available air :-)
nataligelakNatasha, if the leaves lay in a heap, especially covered, then the conditions for the first fermentation were already created inside. I say that they do it on purpose. So the tea is made with the right technology. great! next time you can do it on purpose if you like this tea.

Oh, I like this tea. Very much. A'newy'on is just for me :-) I myself am still a novice-novice in tea business, and this is a new mix for me and a new jar in a piggy bank. A neighbor came to her smell. Half an hour later I went for fireweed :-) This thing is so contagious ... And thank you all for teaching me.
