Ingredients

Cooking method

  • It is not known where the name of the cake came from, but it may be because the cake is "incredibly" easy to make. Or, because it's just "incredible" how a bunch of ingredients just blended into each other turns into a delicious three-layer pie.
  • Preheat oven to 180 ℃.
  • Grease a mold that is 25 cm in diameter and 5 cm in height with butter.
  • Whisk all ingredients except the coconut in a food processor, blender, blender, or whisk until smooth (if whisking, start with eggs).
  • Then stir in the coconut by hand. The dough is very thin.
  • This is where the "culinary magic" begins: Pour the dough into the prepared pan and bake in the oven for about 55-60 minutes, or until the top is golden and the stick comes out dry. If you shake the pan gently, the cake will solidify.
  • When you take the pie out of the oven, you will notice that the flour has settled to the bottom of the mold, forming a soft crust, the coconut has floated upward, browning into a delicious top, and the center looks like a delicate custard.
  • It can be served warm from the oven, but it is also delicious cold. The leftovers can be covered with a towel and can be eaten in a day or two. Note, however, that the coconut top will soften.
  • Serve very tasty with whipped cream.

For coconut lovers, this is it.

I’ll add on my own, if the temperature is low, it will rise a little and will not brown much, if it’s too high, then the top will crack. It does not affect the taste, only external.
In my antediluvian oven, I always expose the temperature "by eye", there is no sensor .... so it didn't turn brown as it should. In the original, the crust should be even more ruddy. Although, it is possible that it turns so brown because the author used sweet shavings. Alas, I have not seen such one here.
