Anais268, I read somewhere that the result depends on the quality of the noodle cutter. Marcato Atlas, for example, is perfect for cutting any dough. Look for the answer on the first page of this topic. There somewhere there is a comparison of Chinese and Italian and just a test is carried out on a sheet of paper.

I make noodles according to the recipe: 100 grams of flour, 1 egg, the dough turns out to be tight, after rolling I immediately start cutting, because there were cases - I got distracted a couple of times and my layers dried out, and it took no more than 15 minutes, so I became cut immediately after rolling. And what is interesting - my car is not some kind of super-duper, but an ordinary gemluksik, and everything is fine, both narrow and wide noodles cut through perfectly!

On all dough rollers, the distance from the table to the middle of the mounting hole is 3 cm. This means that 5-5.5 cm remains on the table itself. And I had to attach only Atlas 150, and I did not attach Starfoods 180 to the table (the dough sheeter stands by itself with a motor).
