Both methods are normal, but with minced meat the second one will probably be better, and in general I like it better. I did it with homemade cottage cheese made in a cartoon, it is soft (but tasty, I don’t take more in the store and even on the market), it’s not easy with it, but if you take it straight from the refrigerator, then it’s completely. The dough was made according to the recipe from the instructions for the raviolnitsa, but only full. She divided the layer into stripes at once, put the intermediate ribbons in the second circle, and divided them into separate raviolki only later, when they dried up a bit.
Oh, and a lot of dumplings !!!
