Found a recipe for dark icing for gingerbread.
Dark icing for gingerbread
This Gingerbread makes a very shiny and dark surface, which is a remarkable contrast to the snow-white royal glaze. Received as follows:
Pour 2 tablespoons of hot water into a glass. Dissolve 1 heaping tablespoon of instant coffee. Add one whole egg. Mix well with a fork. Add 2 tablespoons of muscovado (brown sugar). Apply the resulting mixture with a thick brush to ready-made hot gingerbread cookies, immediately after removing them from the oven. The gingerbread must be hot for the icing to set instantly. Allow to cool completely and then decorate with royal icing.

can you take ordinary sugar? What do you think? Elya, did you do it?
Quote: shoko11

Alyonagiven that this recipe contains coffee, I think it is possible, although dark sugar for color, too, as it turned out, works very well. I recently made brown sugar cupcakes, it gave just delicious color and taste.
Quote: DaNiSa

yes, I would be glad to use it and not reinvent the wheel, so we will not find it with fire during the day
Quote: Miloviza

dark is it brown? it is beet and teddy. Buryakovo is full and three times cheaper. is there any difference?
Quote: Olga VB

Of course have. Beet sugar is white or yellow, depending on the degree of purification, but it is simply dyed for the sake of fashion. There is no sense in this.
Brown cane sugar. The less it is cleaned, the darker.
Their taste is also different. Beetroot is sweeter.
Quote: Miloviza

Olga VB, Thanks I'll know
DaNiSa, no, I didn't, yesterday I just found a recipe. I only read about Muscovado. I think that you can replace the usual. They say about him that "Muscovado sugar is unrefined cane sugar crystallized after the first boiling of the juice. The crystals of muscovado sugar are large, sticky and aromatic. The higher the content of molasses, the darker the color of the crystals. The dark variety for its rich brown color is loved by confectioners - it gives a special color to baked goods, creams and in general everything that it is added to. "
So you can replace with molasses or dark honey
I never took dark sugar, because the toad crushes very much, it cost 10 times more than usual with us, and now I'm even afraid to guess the price.

Here's what happened with the correct icing. Only for some reason, after drying, it turned yellow and the lines turned out to be curves (they became especially visible in the photograph).
Quote: DaNiSa

Elena, yeah the embroidery turned out, well done! but the icing did not work, since it turned yellow ... it should remain snow-white. how did you do icing? what did you add - lemon juice, diluted lemon, vanilla sugar, vanillin? Did you smear the surface of the gingerbread with something after baking?
DaNISa, added powdered sugar with vanilla. She must have ruined everything.
Quote: DaNiSa

most likely, the girls already wrote that for many it was the diluted lemon and vanillin that made the glaze turn yellow
Quote: Nansy

I always put a diluted lemon, nothing turns yellow for me I don't know about vanillin, maybe he gave yellowness

Girls, thank you very much for sharing such beauty and subtleties of technology So I want to also learn how to make such beauty
Soon the winter will be over, but I still won't get there with the tree.
The first time I painted a gingerbread - I got a lot of pleasure. I know that there are a lot of jambs, but what a fascinating activity it is and the kids are delighted with "mom, and when we already eat the tree" "can I eat a lamb?"

Natasha, I really liked your gingerbread cookies.
If the gingerbread cookies themselves are a little clumsy, then you decorated them just fine - the lines are clear, the dots are round, the balls are like real ones. And the Christmas tree itself is very beautifully and naturally drawn in 2 tones.
And the lamb is cool. She has teeth on her legs, giggled ...

girls, hello everyone. need advice and hints.
recently switched to custom-made gingerbread and here's the situation. want to order such gingerbread for a wedding
We decorate gingerbread cookies, cookies

I have never done such a thing. the questions are:
1. is it difficult and for how long?
2. their cost as for standard ones or higher? how much more than the usual cost?
3.Is it worth taking such an order at all if I have never made a piece of jewelry with this technique?
Quote: ychilka

I would try to paint one and decide for myself whether or not to take it. It's just that everyone has their own experience, small or large, the speed is also different. It is difficult to give advice.
I've made river cakes and gingerbread to order, but with minimal decoration. There is fine powder and the nozzles are necessary, hands are not from the same place, but with perseverance, trouble, does not sit for so long ...

Quote: Nansy

mme_it, Olya, for me personally, gingerbread cookies with a grid are the most difficult and dreary, you first try to draw something like that at least on a file, if there are no gingerbread cookies at hand. Cost is up to you
Quote: Vei

this is an ooooochen small nozzle, you simply won't draw anything with it, but you will have to sow the powder through organza 2 times. Here you need attachments 1 and 1.5.
try to make a grid on the file on lined paper, so as not to lose the grid, you decide for yourself whether you need such an order or not.It is technically not difficult to draw straight lines, there is nothing prohibitive in these gingerbread cookies, but my eyes get tired instantly (in any case, I ) and I no longer see if the line is real or just doubled in the eyes.
Quote: aelita1702

So I tried the mesh and cutwork, I barely gathered my eyes from the mesh))) I drew a mesh, climbed to look for schematics at night and found snails)))) in general, with embroidery, everything is bad for me. I will show you here, but I have not posted it anywhere else))) I decided to improvise with Richelieu, already at night, I was reluctant to go to the Internet. I'm bad with improvisation
Quote: Nansy

Well? Where is the promised show? I also have a bunch of eyes from the mesh and then my head starts to hurt, because they (mesh) are the most difficult for me. And so purely technically straight lines and nothing else, it seems not difficult, but how dreary, damn it
Sahara
Girls, your help is urgently needed! It is necessary to gild the frame on the gingerbread, a rather large area - stains remain with a brush, it was mentioned somewhere that it is possible with a sponge. Please, tell me how exactly to do this?
Quote: Larissa U

Sahara, Leer, put a sponge in your hands and apply paint. And what paint itself? Consistency?
Quote: Vei

Sahara, I have never covered icing with gold, I have no idea how to do it. I know that you can walk on yellow icing with kandurin, but again with vodka, not dry kandurin. But in practice I have never tried it - I'm afraid.
Larissa u, Larissa, is liquid. Amerikolor paint Sparkling gold, and some other liquid ones, I already painted the painting somehow with a brush, but I made the base with gold paint - in the sense that the color is gold, but in fact, just a yellow color without shine - it turned out well.
But now I need to paint the fill and plus the painting on top, I already filled it - it dries up, but I'm afraid to paint (((
Can I cut off a piece of sponge and tweezers? Damn, reluctant to spoil ...: girl_red
Vei, Lizun, I have never used kandurin, and I don’t know how to dilute it.

In general, I have already done a lot with gingerbread that I myself don't know what will come of it

Vei, Liza, thanks for the hint - I will do it, I will mix the yellow-brown color, and on top I will try to sprinkle it with a fur coat.
I haven’t matured to the airbrush yet))) and I certainly don’t have it ...

And for honey with it and with the edge or along the edge, make an embroidered, but not thin, but rather noticeable pattern, the same in the form of a heart. I don't know if she explained it clearly. Yes, all the gingerbread cookies are cool, well done, girls, they poured fresh blood into the topic))))
Girls, thanks! My clients really like giraffes and owls.

Elya_lug, El, I agree with you - in the photo I also saw that I was wise with the outline))) I will think about what to do with the rest.

Little angels are confectionery sprinkles made of sugar paper.
I made roses on a pastry nail with a tiny PME nozzle - I was very worn out, the smallest roses turned out to be 3 mm each.
In the video, the hearts are beautiful, but it seems to me that there is too much of everything, I would remove the large flowers, but the arrow there is very cool, it would be necessary to repeat it somehow. I've been looking at stamps for a long time, but I don't quite understand how to use them.
For a long time I have been thinking of launching a series of zodiac signs, here the stamps would definitely help out.

Sahara, while there are no stamps, you can try to make embroidery according to the bead diagrams. such as

Quote: aelita1702

Sahara, Lera, tell me what is the number of the attachment for small roses
Vika, I have 2 such nozzles, one PME - 56R, the second ATECO - 264. In principle, they are almost the same in size, but the first ones have a crescent-shaped cut (in the sense of a little rounded) - the petals turn out to be a little concave and the rosette comes out more delicate, and in the second - a flattened, even droplet (or a very elongated triangle), but for the piping technique, the very thing is that spiral roses are more beautiful and clearer with such a tip.
There is also a small leaf nozzle - 2-4 mm, WILTON 65S, this company has a very large assortment of small tips, I would like to take a few more types from them - but there is no time to figure it out. In general, it is difficult to find a human description of the tips.
WILTON is slightly better than ATECO in quality, but still not as good as PME.
Girls, if someone comes across intelligible descriptions of the tips, please share the info
Quote: Katerina79

Lera, fantastic! Rosette 3 mm! I just really can't imagine HOW you can do such a jewelry job! SUPER!!!
Oh, I also wanted to ask you. Do you first draw your most wonderful owls, birds, giraffes on a file or immediately on a gingerbread?
Quote: aelita1702

And I have 101 drops. I thought it was the smallest.
Quote: Vei

for PME nozzles, the larger the number, the larger the nozzle
the smallest: 00, 0 for them powder must be sown through organza 2 times
just small: 1 and 1.5 for them, the powder produced by Sakhara LLC can only be sieved through a sieve.
for gingerbread, the optimal numbers are 1.5 and 2, in rare cases 1 more.
For flowers:
rose petal straight 56 and 57 S
rounded rose petal 56 and 57 R (right-handed) and L (left-handed)
Leaflet 52
I don’t remember the rest from memory, I’ll sit, dig deeper into my own, then add them.

Look girls !!! Now I urgently need stamps))))) Her work is cool, but the video could be made shorter)))
Elya_lug
aelita1702I used to buy all sorts of silicone scrapbooking dies to use on mastic. But I never did it normally. Paint is also important. I tried it in pure gel paint, and in one diluted with vodka, and with oil (on the advice of some forum) - it's useless, the paint does not lie evenly, slips, in some places it goes numb. Therefore, I use it only as prints and set off with kandurin, or I outline the lines with a thin brush. I still have a few ideas, but not with stamps, I'll try one of these days and tell you.
My gingerbreads, Mezeshkalach, and I made Hungarian lacquer glaze from Lisa. I missed the color. I added red and decided that when baked, red with yolk would give a beautiful maroon color, I was mistaken. And I also have a thin glaze, although everything is according to the recipe, and you can see stains from the brush or unevenness. Still numb on the sides, you can see in the photo. How to be? bedspreads and sides, but on some she smeared the bottom with her fingers. How to do it neatly?
We decorate gingerbread cookies, cookies
And in these I made an experiment. The hearts are colored yellow. Someone asked if it was possible to dye with turmeric, and I tried it. I took it on the tip of a teaspoon and some of the finished glaze mixture. Enough for 5 gingerbread. After baking, the color became lighter, but still brighter than in the photo. The smell of turmeric is heard, but since the gingerbread is with spices, the aromas complement each other. It is felt in the taste, maybe because I knew it, then I clearly understood the pungent taste. My 6 year old son did not notice anything and ate it. So I can't say for sure whether to paint or not, I would rather paint with a dye.

Quote: sugar

Elya_lug, Ale, the glaze is of a beautiful color (I liked both colors) and very shiny, the gingerbread looks very good, but you can see that it was applied inaccurately, I think it all depends on the freshness of the yolk, the fresher the egg, the thicker the yolk, respectively, you need to add milk in different ways ...
Sahara, Lera, the eggs were weekly fresh, I didn't dilute them with milk all at once, now I don't remember how thick it was. And covered with a paint brush with stiff bristles. Maybe others need it? There is a silicone one, I grease her pies.
Quote: sugar

Elya_lug, El, it seems tough to me not very well. I once tried silicone - it seemed to work out neatly, only the sides are difficult to smear. You have to ask Lisa what she usually uses - her coverage is always perfect.
Quote: ledi

And I'm interested! Liza. ay !!!!!! And yesterday, after the glaze, the gingerbreads stuck to the baking sheet
Quote: Vei

)))))))
I cover with a thick and fairly soft wide synthetic brush, adjust the thickness of the shaving brush every time so that it lays down evenly, without spots and at the same time covers everything. Nothing flows to the sides, on the contrary, I lubricate them separately. But to dry the glaze, I use baking paper on a baking sheet. Therefore, nothing sticks to her either.
True, I confess honestly, I do not use milk to dilute the yolk, but water in which I dilute the dry dye, and then I apply everything with this soft, flat and thick brush.
Quote: Katerina79

I also looked closely at these rulers in the store, but I could not understand how to use them, with mastic - I'm not friends (((
Quote: Natkamor

Elya, and in the video she does not cover the gingerbread with icing, but with glaze

4 cups powdered sugar

1 tablespoon corn syrup

2 tablespoons of water (may be required)

1 teaspoon vanilla extract (or flavor of your choice)

a few drops of food coloring (I use Americolor gel paints)

icing may never come out
Sahara, Lera, thank you, I think the key looks better, but I don’t argue that it’s not right. With contours it will be more elegant. If I do a lot, I will definitely do it. It's very convenient with rulers. They are different, I have 4 things, I used two for the gingerbread. two more fruit and berry. With mastic is not difficult. And in this version it is generally fast: kneaded, rolled, cut out. So try to buy or make some mastic. Moreover, you are in demand for gingerbread.
Natkamor, at first I thought it was chocolate icing, but then I came across the word icing. Also an interesting recipe, especially for those who are afraid of eggs.

What recipe do you use to make mastic?
How long can it be stored?
Forgive me for inundating with questions, if there is a Temka somewhere - just poke my nose.
Sahara, Lera, I agree that with the painting of the shower and many options can be done. But with mastic you can really speed up the process. There is a whole section on mastic

https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&board=418.0

There are many different types of mastics, 4 types can be made at home: milk, marmyshkovy, chocolate marmyshkovy and gelatinous. There are several types of mastics on sale, although the prices for it are now Akhovsky. When kneading, the mastic softens, it may stick, then the table and hands are crushed with starch, preferably corn or powdered sugar. On the finished product, the mastic hardens and does not stick. I started working with milk mastic, it is the easiest to prepare and it is easier to catch the desired consistency. So I advise you to try it. you need to take baby food, powdered sugar and condensed milk. 1: 1: 1 by weight. First, mix the dry ingredients, then add condensed milk and rub with a spoon. Leave in the refrigerator for 20 minutes. Then you knead and look at the consistency, there should be a plasticine mass. If it is thick, then add dry drop by drop, if it is liquid, then add dry components. Then you take a piece and add the dye drop by drop. One minus of the milk is that it is not possible to get white.
Most of all I love chocolate marmyshkovy mastic, it is on gingerbread. The mastic can be stored for months in the room, only tightly packed because it dries in the air. There will be questions, ask.

Elya_lug, Elya, thank you very much! I will definitely try!
Just one question - what kind of baby food do you use?

Lizonka, thank you very much for the recipe! That year I baked gingerbread cookies with cocoa and covered them with an egg and coffee before baking, they were dark, but did not shine so much

A real Madyar honey heart with a mirror. My grandmother also usually decorated with just such flowers, but as far as I remember, the decor was inedible, it seemed to be made of starch, I only remember that it was bitter)))
And the dough was made on Amonia, the boboska also called it salika.

Vei, Liza, of course I don’t know ((((I wrote to me when I was 7-9 years old when I was brought to my grandmother and she connected me to her work, later we were settled and I was no longer aware of her activities))) In those days, the production and sale of mezeshek was considered a serious speculation and everything was done on the sly, so that God forbid the time was not obtained, I think that is why my grandmother was not going to share her experience with us in such a "risky" business)))
Quote: Miloviza

Sahara, Oh God. Is it that gingerbread was banned? I'll see, for some reason it seems to me that I did not see slides. But I'll check it out just in case. Remember where I saw)
Miloviza, not only gingerbread, but all handicraft and private production or sale that went by state structures. Gingerbread and sweets on sticks were still prohibited due to religious and national (I don’t know if I wrote correctly) considerations, then they tried to eradicate any Madyar national traditions, including Madyar names (((So in our family, Sandor became Alexander, Istvan- Styopa, Janos-Ivan, Ferenc-Fedor, Erzhebet-Elizaveta, etc., Zhuzhanna, however, has become, in Russian there is no alternative))) It would be great if you remembered where you saw a projector without slides
Sahara
I boast a little))) The girl ordered gingerbread for her spouse for a day at my discretion, she came up with such a congratulatory set.
The dough according to my recipe, icing, the size of the gingerbread: champagne - 16 cm, cake 11 cm, bouquet - 12 cm, wine glasses 8 cm each.

And it's expensive with us, because Kazakhstan)))) In general, in terms of creativity, everything is expensive, nothing. I always order from all over the world. I called all the intermediaries, the prices for delivery are in the same range, but this store does not send directly to us. And I don’t have any money either))) I don’t have a husband yet, and unfortunately there are no children either. Therefore, in this regard, of course, I am more free, although not very happy)

Tell me, please, when painting, not all the dots were well absorbed into the glaze and the tails were stretching - is this too thick glaze? And when extruding, such a circle was first collected, and only then the line stretched. Is that too thick icing?
Quote: aelita1702

Olga_Z, most likely thickish. I usually still tap on the table with a gingerbread))) so that the glaze settles
Quote: DaNiSa

Olga_Z, good hearts turned out!
Are you asking about cookies with white and red dots? yes, there you have convex dots, a little thick icing,
but where the red dots are straight, you can see so clearly that in the middle they turned out to be even. and in the corner, too, with a tubercle. I wonder why? or optical illusion?
Ol, you will learn. it will be even better next time
aelita1702, DaNiSa, Thank you. Next time I'll try to tap and make the glaze a little thinner. I was afraid that it would not be liquid, it would not flow.
DaNiSa, Alena, this is not optical. deception, indeed - at the edges of the point did not want to be compared. I think that the glaze is thick and dried out faster around the edges.
I'll try this week, I'll go to you for an analysis of mistakes
Quote: Miloviza

Olga_Z, here I read about the glaze that for the stroke it is necessary to count up to 10. And for the fill (God forbid the memory) I forgot either 5 or 7. Maybe if you didn’t know they will tell you exactly how much)
Miloviza, thanks for the advice. I kind of thought it was me out of fear that it was not liquid and the colors did not mix, apparently too clever.
I tried to draw again today. Aising while in the refrigerator became thinner and the dots began to hide well. now I train to make them the same size

this I tested a new acquisition - an airbrush. Unfortunately, I didn't quite figure out how to paint for him - hence the joints.
And I also wanted to insert my five kopecks into the conversation about projectors for decorating gingerbread. I, too, do not know how to draw absolutely and every time I face the problem of drawing a picture. But I feel sorry for the money for a professional projector, so I have already tried to buy children's ones - as many as two. Their main drawback is low-power lamps, in daylight the projection is difficult to see. And the field for drawing is very small, there is no place for your hand to turn. In general, I gave it to the child.

Olga 81... very unusual gingerbread, about the first, and the second. And on the second edging - like snow, or rather like cotton candy - how is it?
NansyThank you, it is faster in time than lace, but certainly not a flow version - many of these cannot be done quickly.
Mona1, such snow is obtained if the raw glaze is immediately covered with granulated sugar
Quote: Miloviza

Mona1, I saw the video, when everything is dry, and the edging is applied, turned over and into sugar and the container is shaken a little. Raise, blow off excess.

Vei, I liked it on a baking sheet)

She baked gingerbread in different ways. The only paper I could not change, the shops were already closed as time appeared.

So that's it.

1. Greased a baking sheet with oil, paper on top. The gingerbreads kaaaak stuck and generally baked somehow ugly in terms of color, barely tore off the paper.
2. On paper, flour, gingerbread. Perhaps the paper fails here, so an irrelevant impression.
3. On a baking sheet, flour, gingerbread. Perfectly flat underneath are browned.

In some places it was blowing. But this is already a rare occurrence. So it seems that I am applying the cream somehow wrong. I am such a silicone brush. And in some places the cream is already floating)))

And I also need to change the rolling pin) I have some kind of curve)

Irina Dolars, Ira! I thought about it myself But did not want to redo it. You shouldn't have drawn it. This is the seam that goes on the belly. But I received a mold that was not very well made, ordered it to order. It was not bent as it should be in the picture. And I noticed this when I baked gingerbread cookies and tried to paint them. The heart is big compared to the bear. The back and head are strongly bent, so I had to file the gingerbread. Quote: Vei

Sahara, Lera, such beautiful birdhouses that. I wanted to do the same myself! Well, I liked them very much! If I have time before 14, I will definitely do
Katerina79, Katya, to make flowers, icing is needed thicker, it needs to be beaten well, as for a stroke, but I add more powder than according to the recipe, and I see that the peak on the shoulder blade keeps its shape, but too much with powder is also not worth it, so it is not strong tightly, the atoms are more likely to break the bag than the icing will come out into the hole)))
Moreover, when you make a flower with a nozzle, you do not just squeeze out the icing, but during the squeezing out, you make a turn with your hand, as if you are scrolling a brush, as if you want to drill a hole with the tip, I don’t know if you understood what I mean)))
I also make these flowers in advance, I just put them on parchment, in different colors and sizes (by pressing, you can adjust the size of the flower), when they dry, I put them in boxes. Last time I made a huge supply - enough for March 8.
I would like to make more roses too, but the patience is horrible, as not enough, and the flowers are quickly obtained.
Wicker baskets, buy on the Internet.
Tanya, I didn't cast the birds on the file, I just drew, they are so tiny that there is nothing to cast there - I dropped a comma and the bird is already ready))) it turned out to be 1 cm from strength, you see, the legs turned out there, like a broiler))), although I drew with a half-hand.
Quote: Mona1

I think that such a motive will do for Shrovetide, for Easter, and for March 8, I think. If on March 8, then you can make a bird-girl and a bird-boy. And so that the boy in his beak would hold a flower for the girl.

Miloviza
Oh girls. The poet's soul could not stand it, I tried to make icing on the gingerbread that I did.
I liked it) Crooked, obliquely, but satisfied.

I did icing and tried to catch a soft peak. By the fact that I have seen enough, the head tilts, as it were. Well, I constantly stopped this mixer and tilted the whisk) And it all tilts and tilts. Here everything seemed to me, that's enough.

Here I will pause before the story - so as not to frighten you too much - I will clarify that I DO NOT sell gingerbread.

And as a great culinary specialist, I certainly imagined myself as a master of drawing at the 80th level) And the fact that the master should transfer this icing with something from the mixer - of course I did not think. There were only hands at hand, I had to shift them into a bowl (I stored a bowl and a wet towel).

I went to wash my hands, put some icing into a very small bowl to try drawing. Here a stick of the type of a toothpick helped a lot, the beauty was colored quickly. I am happy as a child. And let's count the seconds (up to 10).

And then I became a mathematician. My brain never leaves the thought that counting up to 10 and 10 seconds are two different things) It seems like I count quickly, but if 10 seconds it converges) Wise, wiser, dripped water, so to speak (there was only a mug from the water, tried to drip, she poured out, quickly turned over the icing, and stirred what was left). It turned out to be something between counting up to 10 and 10 seconds.
I really imagined another icing, close to me it looks like a slurry in which saccharins are visible. Perhaps the powder is not that, but the main problem is that I have not seen it in my eyes.

It turned out to be even more difficult to type into a bag with your hands than into a bowl))

I started to stroke. Then pouring. There is only one nozzle, no adapter, only one bag. It was necessary to wash between the stroke and fill. It seemed to be wiping it off with a towel, but it flowed (water, somewhere, not rubbed). The nozzle travels in the bag, it began to pour out between the nozzle and the bag) Well, fun ... And I also started hurrying (it's already time, I have to leave) I didn't tie the bag. Since I saw it, it turned out to be not so simple - it flowed through the top. And in the end there was not enough icing for filling)))))))
Tied the next color. By the way, I recommend that I bought myself such Wilton's gizmos. As for me, it's a gorgeous thing, it holds well, you can move .. 🔗
It also poured out for the stroke (perhaps it poured a lot of icing inside, apparently).

It is a pity that there is no way to look at someone with even one eye.

Now I will live with a photograph, I will show my creation. I ask, if there is something to scold and suggest - it is very necessary, otherwise I don’t see .. Look and someday a master of the 80th level will leave me)
Quote: Mona1

Miloviza, Lena, I'm just studying, I won't say much, especially since I don't see a photo yet. But I know for sure that icing is not a slurry in which grains of sugar are visible. In general, there should be powder, not sugar. And you splashed the water, maybe a little and it is necessary, literally a drop, but you have it poured. Well, it is clear that you are a little confused, well, next time you will prepare yourself more thoroughly so that all the bells and whistles are ready at hand. And do it slowly, and everything will come out, where will it go!
Mona1, does not come out slowly - still a small baby. Even before grandmother, take it, take it between these 3 hours of freedom, it’s about an hour to eat. And then in the evening. And I don’t want to wait for a year and do nothing. So I'm trying to find the golden mean) On the forum)

In general, from the head it is, it turned out horrible. Not happy! A lot of time is spent on icing to make it colored. Like Lena, there are not enough adapters. I just had to use a bag. And this time I bought some tight bags that do not hold when you twist, there are no stands for bags, I put them in a tray, icing flows from them No I would immediately tie something, but there was no such thing with the previous bags

I warmly recommend buying adapters, a very useful thing, I got cheap Chinese ones and now I don’t know when I need to change the tip. Look in internet shops, I think 8-10 hryvnias can be found, only the correct size needs to be chosen.
I also have the bags in a tray or in large tall glasses (you can use glasses of yoghurt, sour cream), I put them upside down and nothing spills out, without adapters, though this number will not work - the tip will sink.

As I understand it, the stroke must be counted for seconds) This is all done by nozzle # 1
I wanted to paint the hearts at once. But they are somehow just boring to fill ...
Quote: Mona1

Miloviza, Lena, maybe the gingerbread flags would be better made not as a flag figurine, but a round gingerbread (oval, rectangular), and a flag is drawn on it. It's just that the very flagpole itself is very unreliable in terms of fragility. It can break during transportation.
Quote: sugar

Elena, what can I say))) not so bad as you described to us here))) The fill is good, but for the stroke you need a thicker one.
The flags turned out well, for the first time I separated the blue and yellow colors neatly enough.
If you continue to train, it will be even better. Try to fill in the hearts, when they dry up - draw patterns on them - fill your hand.
How to grind - study, study ...
Quote: Nansy

Elena, you don't need to count anything for the stroke, you just need to do the icing immediately according to the correct recipe, and you will immediately have the correct icing for the contour. It is necessary to count later, when you dilute the icing with water for filling. Alenka has long since brought the recipe to the table of contents, for which thanks again to her!

You do not need energy. You have time to deal with gingerbread with a baby, and you help us from the warehouse with goods!
Nansy, read all the pages, only a long time ago. I tried everything as in the recipe, I just saw such a soft peak only on YouTube) So I thought that it would be more accurate to count than by eye)

Katerina79, I have an older 2.5. It's difficult with the first, and then you get used to it, and you manage to do everything, only you want to sleep all the time)))
Quote: aelita1702

Miloviza, Lord, Lena, and there were no spoons in the house?)))
Miloviza, I make the outline for the fill with the same icing as the fill. 10 seconds. now I can tell by eye, I don’t think. I wait for the contour to dry out and fill it. And when the surface is small, immediately after the contour is applied and poured.
Miloviza
Well, everything, Ostap suffered) I made new masterpieces)

I learned a lesson for myself: you just need to draw hearts - then do a stroke

I thought I wouldn’t make boxes anymore, but customers began to ask for "extras"))
This time I made it a little larger, made the walls wider, after baking I immediately turned it over and put it under the press, it turned out smoother rims, but the size still did not match perfectly, I did not varnish it, but simply filled it with icing.
It was very difficult for me to draw vertically, I don’t know how Lyudochka Husky does it))) I will still decorate the lid along the edge, it seems to me that it has an unfinished look.
Dough according to my recipe, icing. The size of the shtakulka is 9x12, hearts are 1, 2 and 3.5 cm.

ledi, Verun, I already wrote - ATESO 13 is an open star. Your icing is too thin for flowers, you need a thicker one.
Here is a girl showing how to make flowers, the second flower, just the one that I did, she turns her hand when pressing on the bag.

Here are very cool flowers, but I can't (((

There are several types of roses, including twisted ones that I have on the box.

The gingerbread cookies bent strongly after cooling, although they lay on a flat, it was necessary to press down probably. I concluded that it is better to make such decorations on thin gingerbread, and better to make cookies. Lizy's test makes awesome hearts! Especially the big ones!

For the first time, I think it's okay. But here's what puzzled me: red icing seems to penetrate white (so to speak). That is, the border is fuzzy. You can see it on the hearts
We decorate gingerbread cookies, cookies

I don't know what to sin ...
Quote: ledi

Good gingerbread! Sometimes I also have such a border, I also don't know why. And what is the size of the gingerbread? And why long-suffering?
ledi, the size is about 7 x 7 cm. Long-suffering - because before only for myself I made and always decorated with white glaze. And then I made it to the fair (they were collecting money for the child for the operation) and decided to paint it in color. But it turned out that colored icing gets dirty. I started to panic - I wrote above. In the end, I just decided to do with a minimum of dye. It turned out, of course, not great, but more or less normal. And the border in the figure is blurry, it seems to me because of icing: either a little thin or undersized. But only specialists will tell us this.

I also forgot to indicate the recipe. I baked it in my own way, took it from the cook. Similar to sugar recipe

🔗 are called CZECH Gingerbread JULIE from Peppina. Only I immediately put less flour (I leave about one glass) and then add it while kneading, if necessary. This recipe has several advantages for me: there are already proteins for decoration - they are just enough for a batch, you can also work with this dough right away, and not wait until it is soaked in the refrigerator. It is important for me, I am a person of mood. And the dough is also suitable for houses and for gingerbread. By the way, the gingerbread cookies are immediately digestible, not hard. and I also add cocoa to the dough

ledi, Vera, pretty hearts! The most beautiful is the one on the left in the first photo, as for me. And where the mesh is, it is a little uneven in the first photo, and in the second it is already normal, but this is a very difficult and painstaking work, I will never make a mesh, it is difficult to put the lines so precisely so that the cells come out the same. Now, if the lines are only in one direction, then even if where it is not very exactly parallel, then it is not so noticeable, one might say, finally not noticeable, but if the cell is difficult. And so, wonderful hearts!
Tanya, something was also wrong with icing, the threads were constantly interrupted.
Quote: sugar

ledi, Verun, I really liked your hearts! The pattern on the left gingerbread in the first photo really looks very good, although it seems to be unpretentious, but it turned out very cool! Lera, I'll start with a comment! Why didn't you take a picture of the side of the box? and the size? What did you bake on? Yes, it's a pity that you spoiled your heart, but in general it turned out not badly, do not be upset! The box is cool! And the idea with a small heart is interesting! You're doing fine! Everything works out for you, but all the taka colored gingerbread is yours
Quote: Mona1

Oh, Lera, and the box is cool, don’t be poor, but giving hearts to guests is a miracle and an idea, and the very version of a heart, with ribbons, great, I’ll slam myself, okay? And, by the way, when I knitted the bows on my mittens, these tails turned out at random. Virgin, teach a bow to knit, Schaub sat nicely. Well, I didn't have any daughters, only guys, I didn't learn how to handle bows.
Verun, deliberately did not show the sidewall))) the nasty one came out, my hands were shaking terribly, without support, and even horizontally it is very difficult for me to draw (((In general, when the work is responsible, I am terribly worried, my head has such a luxurious design, but how icing I take it - immediately a stupor ...
Gingerbread according to my recipe, the size of the box is 30 by 28 cm, the height is 10 cm, the heart is the same size, the small heart is 11 cm.
I deliberately put a matchbox next to it so that it was clear how huge the box is, I'm still a miniature girl)))

Vera, well, these are just masterfully made, very cool, right before our eyes a huge gap ahead. Well, I really like it, I can finally bastard from this style, how beautiful !!!! A thousand plus signs !!!!
If, by the way, you are tired of the ornament, and the gingerbread cookies are covered with glaze under it, well, maybe you stick cats on them, since you like them, white cats on a red background are class too.
I'm not tired! I would only paint like that. And cats, on the contrary, do not work. I decided to pour it on the parchment. Filled in and the result turned out that the wrong side. I will try to explain: for the white half of the gingerbread it was necessary to make a red cat, and for the red half of the gingerbread it was necessary to make a black one. And I did the opposite, and if you put it all on the gingerbread, then the white cats are not visible on the white gingerbread. I had to fill it in a new way, and today when it dried up I dropped the parchment and everything was broken. Here I am sitting with you, and the gingerbreads are waiting for me! thanks for the praise! There are many mistakes, but I am not discouraged
Quote: sugar

Verun, beauty !!! So many patterns and all different! You are very good at it! I would be so!
Such light, smooth lines - I envy, I will take them to my bookmarks)))
With the background that you have prepared, draw some kind of thread on them and forward.
I also noticed that with ornaments they are not so popular, after all, more mature people like them more, and such people in our time are very economical and practical and will think a hundred times what can be bought for the price of such a gingerbread.
But young people are more fond of something creative, funny and funny.
I also want to draw openwork more, I especially like pastel colors or red and white performance, but alas ...
In general, I think that colored gingerbread, and even more so gingerbread with waffle pictures, is not quite a traditional gingerbread business, by and large, flowers using tips are not very to my taste, this design is more like a cake than a gingerbread)))
But what can you do, times are such that for earning money you need to satisfy the demand, and for the soul - so, sometimes, in your free time
Quote: Mona1

Come on, I'm going crazy, entangled in cats. You have, you write, a red cat and a black one, and which white one is not visible?

Alena, what does he make of? I am straining my husband on the sly, he is still thinking about the process. Googled, there they cut strips from cans and make them. But banks somehow do not come across large, maybe on the market some strips can be bought tin or stainless steel.
Alena, I ordered on OK, they carry out individual orders. In principle, they are normal, they are just not very high at 1 cm and the material is probably too thin
Quote: sugar

Girls, I once ordered felling in America, there is a site where felling, if you take more than 100 pieces at 55 cents.
I specially took a few very large pieces or similar to those that I needed, for example, a large ring with a stone - I changed it into a snow globe, I made boots from a large sock, a lamb from a goat, etc.
And at first, I went to the market-shops looking for cheap Chinese or our fellings, and then bent them along the contour of those shapes that I needed. With cans it is very difficult - to bend, cut the can, the edges are very sharp, and even so they need to be soldered carefully so that later the dough does not cling to the barbs. It's easier to take a galvanized clamp-tape for drainpipes, they are 1-2 cm wide and more than a meter long, but they cost a penny, only you need someone to solder this case, I first fixed it with a medical plaster))
Now some forms are made to me by a familiar locksmith, very good, accurate cuttings are obtained, but it is a little expensive for 50-60 hryvnia apiece.

Natkamor
girls, tell me how do you achieve such plasticity in icing? I've tried to make the flowers - the leaves need to be very thick, but then plasticity is lost. and here it is straight like cream

Quote: sugar

Natkamor, for such a plastic icing, you need to whip the whites for a very long time, there is also a minus-asing when drying is quite fragile.
Quote: Vei

I'm thinking, maybe glucose syrup is added there? he can make the mass more plastic.
Quote: sugar

Vei, Liza, at one time I added glucose, the mass became more plastic, but also more viscous, the peaks always remained, as the tip was removed, but here you can see that the soft obedient icing, completely non-sticky, I know that glycerin is sometimes added.
I somehow added a couple of times - I did not see the difference.
I really liked the flowers in the video.
looked at her website. she sells mk, where the recipe for cookies and icing. and found a video where she kneads ... I understand that this is either albumin or a purchased mixture for icing. can't it be a mixture as for lace?
Quote: Miloviza

The video shows icing from the Wilton jar. They have three types of consistency. Hard, medium and runny. (hard on video)

Maybe it will help you, they do it with meringue powder (and not with egg powder). Let the confectioners tell the difference.
Quote: Miloviza

🔗
Quote: Miloviza

🔗 and here is their royal icing recipe. meringue powder can be replaced with albumin in the same volume. but they say there is a difference. Maybe someone will try)
Quote: Vei

Wilton seems to have some other oil icing, maybe it's him? although I have little idea what it is))
Quote: Miloviza

Vei, there is. but the video is royal icing, they write about it ..
3 tablespoons meringue powder
4 cups (caps) (about 1lbl) icing sugar
5 tablespoons warm water

The recipe is very similar. After all, 4 glasses (caps) is 460g. and 5bl is 450 grams
3st l. here I can be wrong, but it seems to me in the 1st. l. 30 grams. Our total is 90

That is, it is quite possible that the matter is in the powder itself ...
Quote: Vei

3 tbsp. l. water is 45 ml or the same 45 g of water. Liquids somehow well, very little is obtained.
Although I still do not seriously consider this recipe.
I think that most likely some kind of additives are added to the mixture (glucose, tragacanth, glycerin, etc.), this is in the cases of English masters who work with classic RI on dry protein. And among the Americans, I don't even consider these dry mixtures in all their inconceivable diversity. Their videos are interesting only in terms of techniques and options for painting, since they focus specifically on cookies, not cakes.
Quote: Miloviza

liquid 5 tbsp. l. That powder 3. Maybe somehow I will buy this meringue I will write what is there. I wanted to try some royal icing from Wilton. Before I even found the recipe here. But this will not be soon) I still have this icing with my head) the nozzles are just going, although I will normally try the gingerbread cookies. Or I'll try to ask a question on the site, can anyone answer. Unless, of course, someone is interested)

It seemed to me, on the contrary, a lot of liquid. If 90g of protein is 75 albumin and 15g of water. And they use 90g of "albumin" and still 5 tablespoons of water.

Or am I wrong?
Quote: Vei

90g live protein = 15g albumin (protein powder) + 75g water
Thus, 90 g of albumin is 90 g of dry protein powder without liquid, to make it workable (identical to live protein), you need to add 450 g of water there.
Quote: Miloviza

Vei, ahh, got it. I just didn't do it from albumin. Indeed, then it looks much different.

Googled in the 1st. spoon 14 grams of albumin. Well, okay .. it's still different ..

In the evening, when I was drawing, I hated both myself and my clumsy shaking little hands and cookies, and in the morning I got up and looked at them - I think I love them, no matter what they were I just really want to support everyone who is afraid that it will not work: well, yes , it will not work, or rather, it will work, but not the first time, but how much pleasure you and all your loved ones will get when they eat it and make fun of you. Quote: DaNiSa

Kinglet, well done! with the initiative! and what kind of filling is so interesting on some gingerbread? so pink-brown-beige? did I like it or is it mastic?
DaNiSa, thank you very much, this dough is multi-colored, there is practically no filling at all (icing, as Lera Sahara correctly noted, was really too thick). Fill only on purple, where the shameful "imitation of embroidery", and everything else is just on the test - there were pieces of dough of different colors - I think, let me try, I also liked the result

Thank you very much! The girls, however, are so pleased with your attention and desire to support the Two-color ones I did in two ways: I cut out some of them with smaller molds and inserted them into the middle (Lena slammed in her "Tender feelings" at the beginning of the Temka), and some - put smaller hearts on large ones, nothing lubricating and not bonding. I liked the second option more, they came out so voluminous, the photo just doesn't convey much) Next time, if I decide, I will ask my daughter to take a picture - she always has my food in the pictures more beautiful than in life
