Buckwheat madeleine

Ingredients

wheat flour 100g
buckwheat flour 100g
egg 3 pcs.
butter 120g
powdered sugar 150g
baking powder 1h l.
lemon zest

Cooking method

  • Beat the eggs with powdered sugar until the mass increases in volume and turns white.
  • Mix flour with baking powder, lemon zest and add to the egg mass, stirring gently from top to bottom.
  • Then pour oil in a thin stream (pre-melt and cool), mix everything until smooth.
  • Heat the oven to 220C.
  • Divide the dough into molds 2/3 of the height.
  • Bake for the first 5 minutes, at 220C, then lower the temperature to 180C, and bake until golden brown, 10-15 minutes.
