Grapefruit salad

Ingredients
Grapefruit 1 piece
Prunes 100 gr.
Pine nuts 50 gr.
Mayonnaise to taste
Chicken fillet 200 gr.

Cooking method

1. Roast pine nuts in a frying pan for several minutes.
2. Cut the prunes not very finely.
3. Boil the chicken fillet and cut into medium cubes.
4. Peel the grapefruit. You can do this using the traditional method. (I cut the peel without touching the core, removed the top, and carefully removed the pulp from the remaining half).
5. Clean the grapefruit pulp from white films. Grind the slices and add to the rest of the ingredients.
6. Add mayonnaise and mix.
Serve the salad as you wish: either in grapefruit bowls or in ordinary plates.
Decorate the salad with pine nuts.

The dish is designed for 4 servings
Cooking time: 1 hour 30 minutes

What a salad you need. Just turning to grapefruits (slimmer). And you can replace mayonnaise with olive oil, I guess. There are only walnuts at home (a lot). Thanks for the recipe.

While I was picking at my plate with a fork and thinking what could be changed here, my other half, having devoured his portion, and already cleaning the salad bowl, said: "Make me one for my birthday !!".
And yet, doing the second time, I changed it a little, only the dressing, well, honestly, like mayonnaise ...
For dressing, I took the remaining grapefruit juice, a little lemon, lemon zest, a little mustard and honey, olive oil and rosemary, blended all this - it turned out to be an awesome sauce that went very well to the salad.

Mint - 1/4 tsp

True, you need to experiment with chili, not everyone likes very spicy dishes.

Made this salad for the New Year. the gas station used the suggested m0use. I also added celery stalks to the salad. It turned out delicious, but the chicken in this salad did not impress me))). Next time I will do without her
