Meat balls with nuts on a vegetable pillow

Ingredients

minced pork 300-350 g
walnuts 2 tbsp
cream cheese 1 tbsp
beans in their own juice 400 g (1 jar))
eggplant 1 PC
onion (large) 1 PC
Sweet pepper 1 PC
garlic 1-2 cloves
fresh tomato 1-2pcs
olive oil 1 tbsp
ground paprika 1 tsp
salt pepper taste

Cooking method

  • 1. Grind half of the nuts with a blender as small as possible, coarsely chop the other half with a knife. Chop the onion and garlic finely with a blender.
  • 2. Add about a teaspoon of chopped onions to the minced meat, the part of the nuts that was chopped with a blender, cream cheese, salt and pepper to taste and mix until smooth. Roll balls the size of a walnut out of the prepared minced meat and set aside for a while.
  • 3. Cut the eggplant, bell pepper and tomato into small cubes. Switch on the "FRY" program, pour in the olive oil. Place the remaining onion in a MV bowl and fry for about a minute. Then add all the prepared vegetables and fry for another five minutes and reset the program.
  • 4. Add beans, remaining nuts, parsley, paprika to the fried vegetables. Season with salt and pepper. Place meat balls on top.

  • 5. Switch on the "MANUAL" mode, Т100С, time 15 minutes. Sprinkle the finished dish with fresh herbs.

Note

It turns out to be a juicy, satisfying and quick dish. You can use not only pork, but also chicken or turkey.
