Aygul
Bozhedarka, Nastya, how annoying ... Do you have free delivery? Try to change. Although, if there are still shops nearby where you can buy this attachment, it is better to hand over and order in another.
Bozhedarka
Aygul, I wrote to them, they answered that they would clean it with sandpaper, grease it with oil, return 25 percent, and if I want a new one, then wait 2 weeks until a new batch arrives. But they said that there are a lot of rejects, a lot of rusty ones are obtained directly from Italy. The husband cleaned the rust, black spots remained. Smeared with mineral oil. Okay, we decided to try it. The dough is wrapped on rollers. I peeled it off, rolled the sausage again, everything was like in the video, it worked out the tenth time. But just not what is in the picture and video. The result is embossed cakes, not shells or curls at all. Moreover, some are glued to one another. I decided to hand over and return the money. Even better on the board.
Aygul
Bozhedarka,
Nastya, if you cleaned it up and started to work, can it be a test? Macaros stick together and do not form properly when the dough has not settled down, not "ripe" so to speak, and, perhaps, it was too "liquid", I would add flour. Maybe you can try again, considering these nuances?
Bozhedarka
Aygul, the fact of the matter is that I took different dough, I have different residues in the fridge for up to five days, then I either pinch the soup or cut the noodles straight from the tin. And noodles and dumplings and semolin, and soft and steep. Flat corrugated pads fly out interspersed with lumps, but they lack something to twist, maybe rust. I wrote the second letter to them, no answer.
Creamy
Try making the coolest dough. Powerful blender (from 600 watts power) according to the method Admin, just a little more abruptly. I make from 200 grams of flour, break an egg into a glass and add water to the total weight of a water-egg chatterbox of 80-85-90 grams (depending on the moisture content of the flour) Zipper with a blender no more than 15-20 seconds (strictly, otherwise the blender will die an untimely death .). Collect the crumbs in a lump and let sit under a bowl for 20-30 minutes. And charge your wonder machine. It should work. And also let the man's eye look at whether the machine is not misaligned, whether the gap between the rotating rolls is the same. Don't give up, take by siege and attack.
Bozhedarka
Creamy, I think the problem is in the rocking chair, which spins the pits, it somehow moves unevenly, almost picks up the dough, but it slides off.

Bozhedarka, I'm just looking at this device for now and here 🔗

Application: You must have a pre-prepared and suitable pasta dough (not sticky - not use potatoes).
NOTE: Leave the antrocken dough for a while. Too wet noodle dough will inevitably cause the dumplings not to be produced clean.
Therefore, always check, first from the palm of your hand, if the dough is dry.
Only when you do not feel any more moisture when starting the production of the gnocchi - either manually with a key
or automatically engine.

Just do not be offended, but these "pasty" are called NNOKI. They are written as if "gnocchi" but are read just like that.

I succeeded the first time, but the dough should be taken tight, but not much! And the sausages are not too thick. I made it according to the classic recipe, without water, only eggs and butter + flour, a little more than it should be. now I'll look where I laid out a sample

Bozhedarka
Mar_kIf that gnocchi nozzle works, then don't. This is a separate typewriter, what would the cavaliers (I hope I wrote correctly) do. here it is shown how it works, though a very old machine. There are different ones, one type of pasta or two, I was not particularly interested before, I tuned in to the attachment for the empire, but now I look.

I noticed that the granny had a car attached to the board, which is important for many, since there is nothing to cling to.

Girls (and guys), tell me what's wrong. Made macaroons yesterday at Regina. According to the recipe suggested in the video (I replaced only chicken eggs with quail eggs, but after weighing the preliminary contents). Durum flour from Molino Grassi Semola di frumento duro. Kneaded the dough with a kneader, stood for 30 minutes. (even longer) per package. The macaros were molded perfectly. But after drying, the thin hollow horns began to split in half. Boiled today. It is tasty, but it is felt that the flour is not fine, and during cooking, almost everything is "halved". Why could this be ?! Thank you!
Here I have the same problem. Only I took 350 g semolina and 150 g premium flour. The dough is super-convenient to work with, beautiful hollow pasta turned out, and after drying in the room, it was halved. And, by the way, I was not impressed by the taste. It is somehow unusual. It should be noted that this was my first experience with semolina.
Have you tried making hollow pasta entirely from premium flour?
Mar_k
Or maybe the dough is made not as for a manual noodle cutter, but as in the video and how Tanyulya did it, so slightly crumbly ???
Vetiver
Mar_k,
The dough was kneaded with a hook in Kenwood. It turned out to be a bun, then I just tore off small pieces from it and launched it into the nozzle.
And poke me, please, where you can see how Tanyulya does, otherwise I'm new here

Girls, Good evening! Could you tell me the proportions of buckwheat and corn flour in relation to white, wheat? Today I wanted to make pure buckwheat, but it is not going into a lump. Although the package contains a recipe made from pure flour.
Creamy
And buckwheat should not be collected in a lump, study the materiel.
Sprig @
That's why I came for advice, to ask proportions. And if you find it difficult or nothing to answer, instead of lecturing, it is better to keep silent.
Mar_k
Sprig @, here https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=82626.0

And for corn noodles, there is no, only bread, but you can proprietary and re-read
https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=316860.0

How it works, then be sure to write how the corn in the noodles behaves
Vetiver
Mar_k, thanks for the tip, I watched the video. Very positive.
She wool the Internet and came to the conclusion that brittleness gives a high content of semolina in the dough, it is necessary to change the proportions in the direction of decreasing it to 30% and below.
Thanks to this forum, I found out where to buy Italian flour for making homemade pasta, I bought goods yesterday, I will experiment.
Mar_k

Scops owl, duck "if I have decided something, then I will definitely drink." By the way, I also bought bean noodles in "Bakhetle". Before that, I had climbed all over Moscow, I could not find it anywhere, and then luck suddenly smiled at me.

Mar_k, Thank you! You are very responsive as always
Yesterday I still made buckwheat noodles. At first, I did not get the dough, since it is not possible to knead it from pure buckwheat flour. The proportions I had were 250 grams of flour, 2 eggs and 1 tbsp. spoon of vegetable oil. Then I added 250 grams of wheat flour to this mixture and added 2 more eggs. Of course, it took a long time to knead, since the dough was flaking. Then she spat, covered it with a bowl and went to study with the children. Periodically approached, crushing the dough. Only by nightfall my dough began to look like normal, more or less uniform consistency. I cut it in half, rolled one part and cut it into noodles, put the other half in the refrigerator. The part that she rolled was dusted with flour, then she let it dry for a couple of minutes and cut it. I cooked noodles for just a minute. The noodles turned out to be very tasty, everyone ate with great pleasure.

The second half of their refrigerator dough was being eaten up today. It rested well and got even better. Advice to anyone who wants to make the same noodle, the dough does not need to be folded in an envelope and run through the rollers several times. It only exfoliates more strongly from this. Roll out to "0" and immediately go to "1", and so on. I rolled it up to 5 thickness, then cut it. Great noodles, won't stick together
Mar_k
Sprig @, great, so do the recipe, otherwise I wanted to experiment! To me on YOU !!
Sprig @
And I didn't take a photo, so the recipe won't work) Next time I'll try to take a picture and draw up a recipe. Because I liked the noodle

Girls, tell me where you bought dryers for long noodles. Is it really possible to buy them in hardware stores or do you have to order them on the Internet?

It's a pasta bike !!!
Vetiver
Good evening ladies! In search of my "ideal" dough, I prepared noodles today according to the following recipe: 100 g semolina, 400 g soft flour for pasta, 5 eggs (270 g), 1/2 tsp. salt, 1 tbsp. l. olive oil.
Kneading with a hook in Kenwood, the dough is very steep. I think it will be quite difficult to knead this with your hands, well, in any case, you have to sweat a lot. In the work, the dough behaved great, I did not have to use a single gram of flour for the dusting, it rolled out and cut perfectly. But most importantly, the noodles turned out to be very, very tasty. Even my fussy son demanded a supplement.
In short-term plans, try to make spelled noodles.

But without a dryer I still don't like to dry on a tray, rolled into nests. I looked at the Kitchen dryer in the online store today. Now my husband will come home from work, I will ask him to place an order, otherwise I am a complete ignoramus in such matters.

Hello! I want to order an Atlas 150 car for myself, and for the second week I have been suffering: with or without a motor ... I read even here that the motors seem to be not very reliable ... after all, it costs like the machine itself. In general, I feel like it and inject. For one minute I think that I don't need this motor, but it seems to be good when both hands are free. Flour of choice Please write your experience of using a noodle cutter with and without a motor, is it worth the candle?
lana19
Victoria, I have no motor. I'm doing fine. The handle turns very easily. By and large, you can even ask a child to twist the handle if there is an urgent need for two free hands
Bozhedarka
Ne_lipa, I have two noodle cutters empire and an atlas. Both with a motor. One motor is 22 years old, the other a couple of months. My tables are such that there is nothing to hold on to. I put it wherever I want with the motor. Both hands are free. The wire was changed to the old motor - it was rubbed, it works fine.

If you don't have a financial question, take it with a motor. I use an empire without a motor three or four times a month, the dough, most often, I roll out at once, how I don’t like to “screw-unscrew” the machine from the tabletop ... If an “extra” money appears, I’ll buy a motor.

I agree with Bozhedarka - and hands are free, and put it wherever your heart desires.

Svetlana, Anastasia, Vera thank you very much for your answers.
At the expense of screwing the noodle cutter to the table - the process itself would not "strain" me, the problem, as I understand it, is where to attach this unit, what should be the minimum ledge at the table top? I watched the video, in terms of speed with and without a motor, it turns out approximately the same, but the motor gives freedom to hands.
I never used a noodle cutter, and I didn't make homemade noodles, I don't know how much it will be in demand ... Children love macaroshki, my husband loves dumplings, but so that they ate every day - there is no such thing. You can immediately and with a motor, but then you will want all sorts of extras to one tscat. accessories, but how do you think that for the price of the motor you can buy all sorts of gizmos for a noodle cutter ...
At the time of purchasing a bread machine, I was choosing myself with a maximum of functions, but now I only knead the dough on it, bake everything in the oven.
lana19
Victoria, I have very small protrusions on the kitchen countertop. You have to screw the dough roller to the table. It is glass. Its countertop is not thick enough to hold it tight. A small chipboard board saved the day.

The diameter of the mug is 2.5 cm. This means that the ledge of the table top should be about 3 cm

The minimum projection is 5cm. I attach to the main kitchen counter, but I have to keep the dishwasher door open. I didn’t even try to screw it to the table, I have it "wobbly".

Vika, I do not use it myself often and I am not going to buy "pribludy" for rolling, but I would have bought a motor, just for reasons of "butted to screw on, unscrew the rolling"))) I bought it in the hope of "jumping off" from expensive Italian pasta varieties, but my homemade they did not recognize homemade pasta, only homemade noodles in broth, dumplings, dumplings and pasties with brushwood were recognized. I don't regret buying it at all, although I don't use it often!
