Dough for buckwheat noodles (soba)

Category: Dishes from cereals and flour products

Ingredients

Buckwheat flour
Wheat flour
Warm water

Cooking method

  • It takes 1/3 of buckwheat flour and 2/3 of wheat, warm water is added until a homogeneous dough is obtained. And then this dough is kneaded for a long, long time by hands to "develop" gluten. If you knead badly, everything will creep. Cut the finished dough with a noodle cutter. The longer and thinner the soba is, the better.

Note

Dug up this recipe, but ... the lack of eggs is very embarrassing. Has anyone tried making eggless noodles?

Well, I tried it myself ... Before that I made noodles by Chuchelka (400 grams of wheat flour + 4 C1 eggs), and then I took 300 grams of wheat flour + 150 grams of buckwheat + 210 grams of water. Kneading with a hook in a combine. 50 grams of water had to be added ...

Here is how it was. I scroll on Titania's one (the largest), and from there rags ... So these rags five times through one, so that they lay down in a layer ... And kneaded in the combine for half an hour ... So 5-6 times on one, then once on the top three, then on the six ...

Now I will try the second recipe ... With eggs ...

Lika, I haven't even finished drying them yet ... But ... in drying they ... well, not a fountain ... partially stuck together ... It wasn't like this before ...

In general, I planned it (my soba) with shrimps ...

I'll try - I'll tell you. Well, I will definitely redo it according to the second recipe ...

It was necessary to replace the noodles from flour for a diabetic with buckwheat. : doctor: How did it turn out according to this recipe, how does it taste?
I also found a recipe without eggs and salt: buckwheat flour 300 gr. wheat flour 100 gr. water 180 ml. It is worth wrapping up or going ready to take (dear too much)
