Dough for buckwheat noodles

Ingredients

Buckwheat flour 135 g
Wheat flour 165 g
Large eggs 3 pcs
Vegetable oil OK. 5 tbsp. l.
Salt
Water 2-3 st. l.

Cooking method

  • We put the products in a bucket of a bread machine (up to water), set the dumplings mode and monitor the kneading. In the process of kneading, you can add 2-3 tbsp. spoons of water.
  • The dough will not be collected in a bun, it will be in pieces. After kneading, take it out onto the board and crush it into a bun with your hands. The dough is very elastic and lends itself well. Put it on a board, covered with flour, cover with a bowl and set aside for 30-40 minutes.
  • Then roll it out thinly, cut and dry.
  • I use the oven rack for drying. It dries for about a day, but it depends on the temperature and humidity in the house.
