I take semi-sweet red wine in half with water, so that the shank is closed, I add spices, parsley root, celery, garlic, onions, carrots, lavrushka and leave it in this brine overnight, and in the morning I cook for 2-3 hours (depending on the quality of the shank , that is, frozen or fresh) then I spread it in the AG, smear it with either sour cream or mustard with garlic and for 40 minutes. at high speed and 205 g, but there you have to look at the shank.
