Ingredients

For the test:

Butter or margarine 185 g
Egg yolk 1 piece
Ice water 2 tablespoons
For apple filling:
Apples 2 pieces
Sugar 1/4 cup
Lemon juice 1 tablespoon
Grated zest from 1 lemon
Orange juice 1/2 cup
Raisins 3/4 cup
For the curd filling:
Cottage cheese 500 BC
Thick cream 1/2 cup
Sugar 1/2 cup
Eggs 4 pieces
Vanilla sugar 1 tablespoon
For sprinkling:
Powdered sugar 1 tablespoon
Ground cinnamon 1 teaspoon

Cooking method

  • First, prepare the apple filling:
  • Peel and seed apples, cut into cubes, put in a saucepan, add sugar, orange and lemon juice, zest and raisins

  • Grate cottage cheese through a sieve, mix with sugar and apple syrup left over from making apple filling, pour in cream, add egg yolks, flour, vanilla sugar and mix.

  • Introduce them into the curd mixture in two steps. I whipped the whites and introduced them into the cottage cheese when there were 5 minutes left before baking the shortcrust cake from the dough, since the whipped whites would settle.
  • To prepare the dough, grind the flour with butter or margarine into crumbs.

  • Add vanilla sugar, egg yolk, ice water and quickly knead the dough.

  • Roll out the dough into a mold with a diameter of 24 cm (I took a mold with a diameter of 26 cm, but I think it is better to take a smaller one, then the curd filling will be higher, and the pie itself), prick the dough with a fork in several places.

  • Bake at 180 degrees for 25-30 minutes.
  • After that, take the cake out of the oven, put the prepared apple filling on it

  • Bake the cake for about an hour. Refrigerate and sprinkle with icing sugar and cinnamon (I didn't sprinkle it with cinnamon, we don't like it).

This cake has a very successful combination of sourness from the juice of cirtus and the sweetness of the curd filling!
