Cooking method

  • In addition to the well-known dessert -cake "Danube waves" - there is also the Rhine-Neckar Waves pie in German cuisine. The principle of preparation of these desserts is very similar - a strip of light, then a strip of chocolate dough, in the cut resembling waves. Then fruits - cherries in the first case and pears - in the second. Top it with butter cream or custard pudding and top with chocolate ganache. The ingredients for the dough and the cream also differ. However, judge for yourself:
  • 1. Prepare the dough. Beat eggs with sugar and vanilla. We add softened butter and yogurt. Sift flour in small portions and knead. Add baking powder. Divide the dough in half. Add cocoa to one of the parts.
  • 2. We spread the light dough in a lacquered and greased detachable form. We deform its surface a lot with a spoon, simulating waves. On top of the same "sloppy" spread the dark dough, on it - pears (peeled and diced). We bake in a preheated oven at 1800From about 25 min. I cooked half a portion, so the amount of dough was small and the wave height was small.

  • 3. Prepare the cream. We mix flour, starch, sugar. Add the egg, beat lightly. Pour in hot cream, mix. Cook on very low heat, stirring constantly (I intensively whipped the cream with a whisk during cooking, because the amount of flour and starch was doubled). When using a powder cream, follow the instructions on the package. After cooling down, add yogurt. The amount of yogurt can also depend on how thick it is. Cover the base with the cooled cream. We send it to the refrigerator for at least 40 minutes.

  • 4. Prepare the chocolate layer. We heat the chocolate in a water bath to a liquid state, add condensed milk. Spread the chocolate over the cream. This is not so easy to do, so I made a thinner chocolate than according to the recipe (in the original, 1 tablespoon of nutella and 1 tablespoon of butter are added to the chocolate). Send the cake to the refrigerator until the chocolate hardens.

Kristina, it is quite possible to make a cake! Bake 2 of these cakes (if you want to show the waves), between them - custard, on top - mastic. The cakes are not dry, so this thickness is fine. You can also increase the cream 2-3 times, add gelatin and there will be a plump soufflé. By the way, there is a very beautiful decoration with chocolate (if you give up the mastic).
