Tres leches cake with chocolate syrup

Ingredients

Dough:
wheat flour 100 g
starch (any) 20 g
eggs 4 things
granulated sugar: 120 g
Fill:
condensed milk 100 g
boiled condensed milk 120 g
milk 170-200 ml
bitter chocolate 50-60 g
Glaze:
milk 4 tbsp. l
granulated sugar 2 tbsp. l
cocoa powder 1.5 tbsp. l
butter 15 g

Cooking method

  • I found the recipe for this wonderful cake in Irina Chadeeva's LJ ( 🔗). It is prepared very simply, even a child can handle it, and it turns out very tasty. So...
  • Biscuit:
  • Separate the whites from the yolks.
  • Add 2/3 granulated sugar to the yolks and beat until lush white foam, about 3 minutes.
  • Beat the whites until a dense white foam, add the remaining sugar and beat for about a minute until a shiny, glossy state.
  • Use a spatula or spoon to very gently mix the whites and yolks.
  • Mix flour with starch, sift into egg mass and stir gently.
  • A baking dish (20-22 cm), preferably one-piece, grease with butter and sprinkle with flour, lay out the dough.
  • Put in an oven preheated to 200C (convection 180C) degrees and bake for 25 minutes until a dry toothpick.
  • While the cake is baking prepare fill:
  • Melt the chocolate in the microwave or in a water bath. Heat milk until pleasant, warm.
  • Mix two types of condensed milk, add melted chocolate, stir until smooth and add warm milk in small portions.
  • Poke the finished cake (hot, right in the form) with a toothpick, making more holes and immediately pour the syrup. You need to pour it not quickly, but not too slowly, pour it evenly over the surface so that the mixture is absorbed.
  • Leave the cake in the pan, cool and put in the refrigerator overnight.
  • Pour the finished cake with icing: to do this, mix all the necessary ingredients, bring to a boil over low heat and boil, stirring constantly, for 5-10 minutes. Apply the icing to the cake.
  • Serve with a cup of tea or coffee. Bon Appetit!

The origin of the Tres leches "Three Milk" cake is still controversial. Most historians believe that the cake originated in Nicaragua. Others believe that his homeland is Mexico. Two hours after boiling (Chuchelka recommends 2 hours 15 minutes), over low heat, put a rag on the bottom of the pan. Just make sure that the water does not boil away, otherwise it will burst.

There were 280 g of uncooked condensed milk, 140 g of 10% cream, 50 g of dark chocolate, a drop of rum flavoring, the filling turned out to be very tasty, but for some reason it was absorbed very reluctantly.
We tried the cake without letting it cool down, and were very satisfied!
