Lean pumpkin-ginger cookies

I found the recipe on forum.say7, but I've baked a cookie so many times that it's already like my own))) It is done simply and the taste is amazing !!!

Ingredients (glass - 250 ml):
200 g pumpkin puree (from the author - from baby food, I baked or boiled pumpkin)
1 tbsp. brown sugar (can be regular)
0.5 tbsp. odorless vegetable oil (!)
0.5 tbsp. not too finely chopped nuts (hazelnuts are ideal)
2 tbsp. flour
1 tsp soda
a pinch of salt
1 tsp ground cinnamon (replaced with orange zest)
0.5 tsp ground ginger
1 tsp nutmeg

Preparation:
1. Mix flour, salt and spices in one bowl.
2. In another bowl, beat the pumpkin puree, sugar and butter until smooth. We extinguish the soda with vinegar or lemon juice (juice very carefully!) And add to the pumpkin mixture (added to the flour).
3. Mix everything and add the nuts.
4. Bake at 175 degrees either with cookies (like on parchment) for 15-17 minutes, or with muffins (in silicone molds) for 20-25 minutes, or you can simply pour the dough onto a greased baking sheet and then cut into pieces - this is the fastest way; -)

Now the subtleties.

1. It is better to take a pumpkin freshly boiled and freshly baked, the main thing is that it does not have time to let the juice out, otherwise the taste will not be the same. An orange bright pumpkin is preferable, but does not play a special role.
2. Prescription sugar seems to be a lot, but when you decrease it, you don't get a fried crust on the cookies, and it is very tasty (in the last photo, the difference in the color of the pumpkin and the amount of sugar is obvious).
3. I liked the refined oil TM Generous gift.
4. Hazelnuts, of course, are wonderful, but if you soak a walnut in boiling water and remove the skin so that it doesn't taste bitter, then it's also very good, although I liked it more with bitter chocolate chips))) The overcooked pumpkin with lemon became delicious cookies, but because of the viscosity and weight of the lemon, we had to take almost twice as much puree, but the taste turned out to be very interesting)))
5. Ginger took the purchased TM Kamis, I did not like the other, with fresh grated it is normal, but you need to grind it well. The coriander is very rough in this recipe, it is best not to put it in.

I like this recipe more precisely in cookies: they are denser and drier, the cupcakes are very tender, and the pie is the golden mean. Bon Appetit everyone!
