We tried today to knead a dough of 350 and 450 grams of flour on the KitchenAid Professional 5 Plus. Nothing works, the flour remains at the bottom. You can, of course, stop and stir by hand with a spatula, but it still does not work out well.

Height adjustment does not help. And for some reason it is possible to rotate only 90 degrees, although according to the instructions, 90 degrees should be adjusted in both directions.

Maybe you can buy a smaller bowl or somehow solve this problem? Or do you just need to attach a mixer and take a smaller one for your needs?

Flour gathers itself into dough during kneading.
If there is flour at the bottom, then there is not enough liquid. And if the dough is thin at the bottom, it means that there is little flour.
