Test ten - Re-souring yoghurt

Yoghurt maker Brand 4001

For sourdough I used previously fermented yoghurt on dry sourdough "Evitalia"

Milk (ultra-pasteurized, 3.2% fat, 1 l) heated in warm water to a temperature of about 38 ° C.
I put them in cups disinfected with boiling water about 160ml yogurt... Topped up the milk. Stirred.
She closed the lid. Set the timer to 3 hours (although according to the instructions the "Evitalia" sourdough lasts 7 hours)
Yoghurt maker Brand 4001

After 3 hours the yogurt was even more than ready
Yoghurt maker Brand 4001

An hour would be enough for drinking

The new model will have 12 cups.
What good news. I would like to have a look at the new model. Will wait.

manna, as far as I remember, you made yoghurt on different sourdough cultures. How do you like Evitalia compared to others? So far I have done only on Evitalia. I like its neutral taste and that it does not last, and the price is cheaper than others.
Manna
Irina, so I wrote earlier:
Quote: manna

For me, yogurt with Evitalia sourdough is optimal in consistency and taste. And not a hint of pulling. And the mother's starter culture lives in the refrigerator for up to 18 days (as the instructions say: "The shelf life of the Working Starter culture in the refrigerator is 18 days, the finished product is 7 days"). Although, I would not keep a live product for so long.
The only thing that worries me is that the bacterial lifespan indicated by the manufacturer
Manna
These pies I did just on "Evitalia"

Preparation of acidophilus from CL bacterial concentrate

Yoghurt maker Brand 4001

An important and basic condition - all materials for the preparation of the starter culture and the finished material should be disinfected as much as possible - sterilized, rubbed with alcohol - a bottle - etc.
1. Getting a liquid starter culture.
2. Milk - any - boil and cool to T 40-45 degrees.
3. Wipe the bottle with dry starter culture with alcohol, open, pour prepared milk, shake thoroughly until the starter culture is completely dissolved and pour into a container (about 200 ml) with prepared milk. Stir well. Carry out fermentation for 12-16 hours.
4. The resulting starter culture should be stored in a closed jar in the refrigerator for up to 2 weeks.
Obtaining a fermented milk product - acidophilus.
Prepare milk and utensils as described above.
Add ferment to the prepared milk at the rate of 1-2 tbsp. l per 1 liter of milk, mix thoroughly - better with a whisk.
Carry out fermentation for 6 hours in a yogurt maker. Put in the refrigerator.

Yoghurt maker Brand 4001

It is prepared similarly to acidophilus - both the leaven and the finished product. The cooking time for the starter culture is the same as for acidophilus, so I made these two cultures at the same time.

Congratulations, Ksyunya !!!

Oh, Vika, Thank you! I was also waiting for her. Every day I checked the PR website. She drove for almost a month. And I have yogurt like a fool's shag
Manna
Ksyunya! Wow! You have waited for her. Congratulations !!!

Yes Yes Yes, Mannyash! I had already ceased to hope, and indeed I doubted the possibility of our meeting.

How worried I was about the fate of the yogurt maker, who was coming to me by Russian Post. Especially when I found out that there was no foam at all in it. And it was not in vain that I was worried. I opened the box, and there was a crack on the lid of the bowl

Well, yes ... this lid is not fixed at all inside the box, inside the yogurt maker ... Apparently, that's why it cracked ... Ksyunechka, it's a pity, you've been waiting for her for so long, but here is ...
Ksyushk @ -Plushk @
Yes here, Mannyash... I was not so calm in my soul when the package did not arrive in 2 weeks. (She, by the way, according to the Russian Post website, has not yet left Moscow, from the logistics department there since December 11). Straight 6 the feeling did not disappoint, once again, that at the time of the Battle of psychics to stomp
Vichka
Ksyunya, you can only console yourself with the fact that the lid is not the most important in the yogurt maker, it's good that the rest of the whole is unpleasant of course ...
Aygul
But still... Ksyushauntil you cry. I only use the lid to cover the bowl in the refrigerator. So while you can enjoy the yogurt maker and yoghurts, and Elena will see, the issue will be resolved
Nevushka
Ksyusha, congratulations! And I think Elena or Vadim will help you with the lid. But for them there will be a reason to think about packaging ... but I still don't see yogurt makers, after the holidays I will send the bowls back, and wait for a refund for them
MariV
Ksyusha, congratulations on your purchase! It is a pity that the cap has burst ...
And I'm not overjoyed at mine - for me this device turned out to be a very necessary tool for restoring health!

Yoghurt maker Brand 4001

The longer I use, the more I like it - you can put completely non-standard containers!
MariV
Oh, it is clear that I overlooked something - I do not know where and for what to adapt the extra. a bowl with a lid? To ferment milk in plastic - no ... And why then?
Manna
Olga, I only use this bowl as a cup holder. I put it in a yogurt maker, and already in it cups of milk-yogurt. If I accidentally spill milk, then it is easier to wash it than the yogurt maker itself. I no longer use it for any purpose.

Fermenting sour milk in plastic is not for me

But, as I understand it, the manufacturer assumed that yogurt would also be fermented in it.

Exactly,Mannochka, from this place in more detail, pliiz - it means, if I understood correctly, in the main bowl one more bowl, and already there are glasses? And everything ferments well?
Manna
Aha, that's how Everything is leavened. The photos can be seen. I've already re-fermented Evitalia several times. So it is already thick in 1.5 hours. An hour will probably be enough for her. And I always ferment in such a way that I put a bowl in a yogurt maker and cups in it.
MariV
Thank you, Mann, well, everything, tomorrow I will put a new starter - "Tonus" - according to the instructions, it must be fermented for 8 hours, and, if in extra. more often, the time can be reduced? Or is it still empirically to select?
Vichka
And I tried this and that, the result was the same in time.
Manna
Yes, the time is the same, and so is the temperature. I measured. The bowl has no effect. I only use it to make washing easier.
MariV
Thank you, virgins for the advice!
Olija
Hello everyone!!! I also bought the Brand 4001 Yoghurt Maker. Now I am trying to make yoghurts in it, using Lactin starter cultures.

Yes, not a very pleasant surprise. But don't be discouraged. Ksenia, we will send you a new cover.
This lid is not used during the cooking process, so it will not interfere with your yoghurt making. As soon as we ship the cover, I'll let you know.

You can try to let the dough stand in this bowl. Do you think a yogurt maker is suitable for these purposes?
MariV
Of course, it will do, a bowl ..... But why should the dough be allowed to stand in a yogurt maker? It can be very suitable, then, in the yeast dough, its own microflora, completely unnecessary for sour milk. My plastic is not mine, it is still difficult to achieve complete sterility.

It was for these purposes that I was going to use the bowl of the yogurt maker.

yeast dough has its own microflora, which is completely unnecessary for sour milk.

Olga, but please tell us in more detail that yeast fungi can develop in milk from proofing the dough? But if the bowl is only used for dough and not used for yogurt, then also?

I do this too: a bowl in a yogurt maker, and already in it cups.

But I also use the bowl sometimes. If there is too much milk, and there is still yoghurt in the glasses, then I ferment it right in the bowl and use it for baking. And fermented for the curd in a bowl.

I don't really respect plastic either. But this one bribed me with an ABSOLUTE lack of smell, even when I just unpacked a new yogurt maker.

Duc ... this ... temperature is 40 ° C for the dough too much ... Although ... you can turn it on only for half an hour, and then let it stand in the turned off yogurt maker

And if you pour some water into a bowl and heat it in the microwave (sterilize it), will it help? I just use the bowl to make cottage cheese, but I would also gladly leave the dough for proofing, otherwise there is nowhere ...

I also thought about how plastic can be sterilized ... Elena Br, can the bowl and lid of the yogurt maker be thermally processed? I wash all the plastic with soap and water, but I'm afraid to heat it up somehow.

I think it’s impossible. Still plastic ...

I even poured them with boiling water in a plate, and then drained the water, all the lids remained the same. I didn't even have a thought that I could screw up something ... And I rinsed the bowl too, quickly just poured a little boiling water, turned it over and poured it out

Girls, I have such a bowl in the Dex 108 yogurt maker, so I have poured boiling water over it countless times - everything is with it, I also pour boiling water over the lid of this container - that's all
And the common lid of the yogurt maker is just my warm water and soap.

Girls, maybe I'm doing something wrong, but I can't get yogurt (((Yesterday I warmed milk to 40 grams, poured sugar, vanilla and Yogurt (lactin) yeast), poured everything into jars, turned it on for 12 hours (I used to put it on less, it didn't work.) As a result, I did not get yogurt, but some kind of drinking kefir, a dry crust formed on top, a lot of whey ... Tell me, why is this?
MariV
And where did you read that you need sugar and vanilla to get yogurt? Milk warmed up to 40 degrees and a probiotic - that's all. Everything else then, into a finished fermented milk product.
irysska
Yes, 12 hours milk + sugar = so it is not known what can breed there, just a favorable temperature
Olija
I just tried it without sugar, mine don't want to eat !!! Vanilla just add a pinch! And how much time does someone sour? Share your experience!
Olija
Disappointment comes with the yogurt
