Zucchini salad Mother-in-law's tongue

Ingredients

Zucchini 3 Kg
Bell pepper 5 pieces
Bitter pepper 1 PC
Water 180 ml
Vegetable oil 180 ml
Sugar 100 g
vinegar 9% 90 ml
Spicy tomato sauce (chili) 0,5 l
Salt 1.5 tsp.
Garlic 3 medium heads
Peppercorns 5 pieces
Clove (optional) 4 things

Cooking method

  • Cut the zucchini into cubes (I cut it on a burner on a 7mm insert), cut the peppers and bell peppers and hot into strips. Pour water, oil, sauce into a saucepan. Add zucchini, peppers, sugar, salt. Bring to a boil, reduce heat to low and cook for 30 minutes. Stir occasionally, but not very often, just so as not to burn. After 30 minutes add peppercorns, garlic (chopped through a garlic press), cloves and vinegar. Arrange in jars, roll up or close with lids. In an inverted state, wrap it in something warm for 10 hours (as a rule, I leave it overnight). I sterilize jars and lids.

The recipe was taken from the newspaper "Self-assembled tablecloth" by my mother. She does not remember the author, but she has been making this salad for 4 years. I've done it twice already. Tasty, simple, inexpensive.

Great recipe.
The only thing I changed was adding a bunch of parsley. And the salad played even more. But this is my taste preference.

1800 ml of water is not a lot? Zucchini after all give a lot of liquid. Maybe 180? And the salt is not enough? I did something similar, there are 2-3 tablespoons of salt for the same total weight of ingredients, and the final product was normal in salt.
