I bring you our stump. I saw this salad for the first time last year at a party.
We went to Bugulma, Tatarstan to visit our friends: Leontina Luneva and her daughter Natasha Poloskina. That's what a handsome man we were treated to.

I didn't "reinvent the wheel" - bake pancakes, and there was no time. I took ready-made lavash - crispy. As a filling - Olivier salad, only I passed all the ingredients through a meat grinder. I added mayonnaise and spread it on pita bread, rolled it up, cut it off on both sides - a stump. The rest - at the roots ... I also made small fly agarics: I put on red cherry tomatoes on the cucumbers-gherkins. Honey mushrooms - pickled, Brussels sprouts and white cabbage (well, I didn't have salad leaves)

It is very convenient to make Penek with lavash. The main thing is to "do not bother" with pancakes quickly. And a sheet of lavash is much more convenient to twist and roll into a roll ... Lavash is almost the same thickness as pancakes.
Put a film on the table, a sheet of pita bread on it (or pancakes docking one a little on top of the other - to make a canvas) I have an Olivier salad base. She did not cut the ingredients, but passed it through a meat grinder, mixed with mayonnaise and spread lavash. Then she rolled it (like a roll). Before serving, let it stand and soak for 2-3 hours. Very tasty, satisfying - we all really liked it.
And on the table, this beauty just looks great. Our daughter-in-law has a birthday on January 8, on this day she has a day to work. I cut off the top of my daughter-in-law and woo-a-la ... another stump is ready for use ...
I think that you can make any filling in this salad, whether it be fish, meat or vegetables.
Who will come up with what: the most important thing is to arrange a PENEK ... Personally, I do not have my own imagination, how best to decorate, but after looking and peeping somewhere I decorate something and with pleasure ...

I know for sure that many housewives do not cook PENEK just because of fussing with pancakes ...

And one more thing: my stump turns out to be high. So first we cut it across into two halves, and then along, like a cake. I would be very glad if my humble experience-advice is useful to you

- I cooked pancakes on kefir. The filling was composed on the go - onion, apple, pickled mushrooms, boiled egg, potatoes, semi-smoked sausage and mayonnaise.
