So I think, why do we not insist on any honey or pepper tinctures? Precisely for such cases?
Hairpin
How we do not insist, how we insist! Do you need proven recipes? Only here is Temka about liqueurs ... they are sweet ... and bitters ... where should they be displayed? Maybe here you can?
Hairpin
I think it's better here. And then we will ask the moderators to correct the topic name to Liquors and etc.
Hairpin
My sugar never melted. In a month and a half! Probably, he should have been prevented at the very beginning.

Liqueurs Liqueurs

The result is two such amber bottles. It tastes great! Thank you, Crochet!

Liqueurs

But I never found a tincture with pepper and honey ...
Tanyusha
The hairpin is very strange that the sugar did not melt, it melted for me and I did not interfere, mine have already drunk this liqueur, I have tried a little, but this is not my taste. Yes, I recently bought some cool liqueur glasses for myself here in Stockman, I'll show them.
Croissant
and instead of berries, no one tried to add jam to liqueurs? otherwise I don’t know what to think of with that jam. (I can’t see it anymore) (I already used it in the cupcake)

Croissant come here, there girls make marmalade from jam!
https://Mcooker-enn.tomathouse.com/fo...ic=8956.0

As for liquor, try to heat the jam (do not boil), mix it with vodka (for 0.5 liters of vodka: 2.5 kg of jam), strain through cheesecloth into sterile bottles and for a day in the freezer, for 2 weeks just in the refrigerator - there will be liquor (I am on this principle I make it from fresh berries, but I think it will taste like jam too

Hairpin, I did it

put a reduced portion (almost by eye) - for fun:

380 gr raspberries
200 g sugar
1.5 glasses of vodka

at 50% power it warmed up for 10 minutes, and at the most crucial moment a dispenser in the bread maker worked behind my back - I almost had a heart attack
then at a power of 10% warmed up for 20 minutes.
I covered it with a lid, it will cool down - I will put it in a dark place - in 4 days we'll see what happened
The mass did not boil or bubble, it just warmed up well, the color did not change.

And I do. Only lemon. Only the portion could not be reduced. When the lemons warmed up, poured vodka and covered with sugar, I found that there was nothing to close ... I rushed about the kitchen for half an hour. In short, I covered it with a plate (and she barely nibbles on vodka), and then covered it with a bag (the one for the microwave and for freezing). I sit on pins and needles ... I kicked everyone out of the kitchen and ran away myself. There are three minutes left. I was sitting, calculating the force of the explosion from 900 grams of vodka. Smiley shaking with fear ...
Hairpin
Everything ended well, now I sit and think that I am attached to this microwave? It was easier to insist for 2-3 months ... I'm in no hurry ...

And even if someone was nervous for me !!!

Vivat! extreme experimenters!
obgorka_gu
I made limonchelo last year, so I forgot the alcoholic tincture in the closet for 10 months, when I had to attach the airfryer, I saw the unfinished liqueur and ... everything is well finished now in the refrigerator (there are no drinkers at home, I have different homemade liqueurs, all are used for the confectionery!)
Hairpin
And I ran out of settled vodka, so it became somehow calmer.Lenusya will come, maybe she will explain that we are attached to the microwave ...

2.1 kg. fresh frozen cherries (in bags, cherry pitted).

A cherry with seeds is missing only in me in Koptevo? Has anyone seen this in stores? And then after the fifth store, confusion attacks me ...
Tanyusha
Unfortunately, there is no hairpin with frozen cherry pits, we will have to wait for July.
Hairpin
And here we recently tasted two of my homemade liqueurs very carefully.
1. Sweet couple from Kroshi was recognized as tasty, but very sweet. And this despite the fact that I have a third of the sugar stuck to the bottom. I think we should take sugar ... well, at least half as much.
2. Lemon from the microwave from Petroff - with a bang.

Now I put Spotykach on prunes. The turnover will be less, but I have already cooked the sugar into syrup. I just think it’s not enough to insist for two weeks. Let it stand for a couple of months.
Nora clarck
I offer my recipe. True, liqueur. The recipe is proven, the liqueur is very tasty. The original uses pitted cherries. You can make a liqueur from blackthorn, dogwood. Last summer my husband made from blueberries and barberry. Color and taste cannot be described ...
In 3 l. fill the jar with 1 kg. berries, 0.5 kg. sugar, 1l. vodka, top up cleaned. water, close the nylon. cover and put in a dark place at room. temperature for 20 days. Then strain. The filling is ready.
Hairpin
But it seems to me that the seeds give something ... Well, that is, cherries should be made with seeds. And ideally - to do this and that. To compare.

We're experimenters. I wanted to check: there will be an explosion or not, at the same time raise the adrenaline (the sound of the opening dispenser helped me a lot)
Although this liqueur I still have not tasted is worth it
I wonder if these liqueurs have a shelf life? what do you think?
Hairpin
I think that with so much sugar - probably two years ... And I can imagine the effect of the sound of the dispenser! I'll find a healthy microwave container, I'll try again. There is something in heating vodka with sugar with microwaves ...

For fortified drinks, if they are well closed, the taste only gets better with time ... it’s softer or something, although it’s closed, and the alcohol is all slowly evaporating, so I have liqueurs 15 years ago and nothing tasty. I just don’t like to drink them, but taste delicious and good for confectionery. And earlier it was fashionable to drink liqueurs, and in stores it was a ball to roll, so I did more for friends ... And now for every taste ... vodka!
Hairpin
Lenusya! If fifteen years old, then you need to stock up on the crisis! Although I already have a bar ...
The bar does not load, but oh well! The main thing is to have a place!
Nora clarck
Hairpin, the fact is that in 20 days, while the filling is being prepared, the bones emit harmful substances. In general, whoever loves and wants to.
Tanyusha
Hairpin is such a drink Ksu-ksu (xu-xu) - a fruit drink made from fresh strawberries with vodka. Manufactured in Germany.
Usually in ksu-ksu, the alcohol content is 15% and the proportion of fruits is 66%. It does not contain sugar and only sweet fruits give it a sweet taste, that is, ksyu-ksyu refers to liqueurs. Fruit paste (more than 50% of the drink volume) from fresh strawberries is mixed with crystal clear vodka. It is drunk chilled, with ice cubes, topped with a dessert, with sparkling wine or in other mixtures.
I gave a description from the Internet just in case, so I want to try to make it, but somehow there are no ideas how. Hairpin can you have any ideas on this.
Hairpin
Except for taking strawberries and refined vodka - no !!! Need to try. Only I didn't understand the proportions. Is 15% alcohol 36% vodka? % of the volume? If you take strawberries from the market, it turns out, fill a jar with strawberries and pour vodka up to the neck ... Exactly in terms of volume, such proportions will turn out ...And to insist ... two months, probably ...

And here I was greedy and picked up dried fruits (strawberries, kiwi, lemons). Places are taken, but they do not go into business. Well, in short, I took dried lemons and strawberries and filled them in the proportions of Spotykach (with cooking syrup). But I haven't tried it, let it be worth it ... I think the duet of lemon and strawberry can be interesting.
Tanyusha
A hairpin there is a strawberry like mashed potatoes, so I'm thinking of mashed potatoes immediately or after infusion and I think I also need to add either lemon juice or citric acid. 15% is the strength of the drink.
Hairpin
I think it's better to purée after ... But citric acid ... A preservative, it's a preservative, but ... it will be sour. Citric acid pulls sugar with it ... Nope, I think the first time you need it without acid. If one vodka + strawberries, then it is unlikely to go bad ... And if a lemon, then sugar is needed.
We must try it on a small can ... 600 ml ... It's about a pound of strawberries + vodka. And the direction in a couple of weeks will already be clear ... If it is successful, then you can make a two-liter jar ...

Have a question: must the cherry be frozen or can it be fresh? Thank you.

At this time of the year, in Ukraine ... ice cream, it's just a sin, of course fresh!
We are now spoiled by the fact that jams-preserves can be made at any time of the year from frozen fruit, and before that everything was harvested in the season: canned, dried, insisted and boiled.
irina2101
Thank you, and I think what the ice cream is for now. But, for the "purity of the experiment!", I decided to clarify.

I found several recipes on the Nalivka website.
Real Lithuanian cherry liqueur

Pour in three quarters of a bottle of good ripe cherries, of which only a third of them are pitted. Pour a full bottle of alcohol and leave in a cool place for 4 to 6 weeks, but no more. After this time, drain the alcohol, put the cherries in a clean linen bag and squeeze out the remaining juice from them, drain it into jars and let stand for a day; the next day, mix with the drained syrup: pour into bottles, seal well and leave in a cool dry place for a whole year.

Cherry brandy

Take 16kg of cherries, crush them with seeds in a mortar, mix with a half bucket of alcohol or good vodka, put them in jars and put in the sun for 3 days, tying the jars with a cloth. Then squeeze through a clean cloth, add 41kg of sugar. When the sugar dissolves, boil it twice and, when it cools down, pour into bottles and consume. Store in a cool place. This filling is good soon after preparation, but cannot be stored for a long time.
Hairpin
I once grabbed dried lemons at the market. What I expected from them, I do not know. But the very first experiment with adding to baked goods failed. They themselves were bitter, and they made everything ... tasteless.
Then they lay in my basket for a long time, taking up space, and I could not think of where to dispose of them.
The liquor idea seemed the most logical. And I made it according to Spotykach's recipe on prunes (the recipe was given above), and compensated for the lack of lemons with dried strawberries.

Liqueurs Liqueurs

It was poured into bottles without stirring, so in one bottle it is lemon-strawberry, and in the other - strawberry-lemon.

And the taste is very ... wonderful. The lemon gave off bitterness, and the strawberries crumbled a little. When I tried it, I thought about absinthe. Absinthe on wormwood ... even more bitter. So this creativity took its place in the bar of my homemade liquor called "Let's remember absinthe ..."!
fugaska
I understand it is a kumquat? we eat it like a snack, you can pour cognac and leave it for a week: my husband said that the most delicious is drained cognac
Hairpin
Quote: fugaska

I understand it is kumquat?
Whoa? !!!
fugaska
Liqueurs
Kumquat (other names. "Fortunella", "Kinkan") - the fruit of some citrus plants isolated in a special subgenus Fortunella (lat. Fortunella). A small exotic orange or orange-yellow fruit that looks like a small orange
The skin of the kumquat is edible and tastes sweeter than the pulp of the fruit. Kumquat can be eaten fresh, candied, in alcohol, in dark chocolate sauce
The homeland of the kumquat is China.
Hairpin
He is! Only I have it a little more matte ... it was ... But I thought it was a lemon ...
fugaska
and this is how they look in "raw" form
Liqueurs
my friend just recently opened this "snack" for me. cool little thing, Uzbeks sell them here. there are yellow and orange, but the yellow is sweeter. and if they were matte, then probably more dried than mine. that would be to try such cognac "soak" ...
Hairpin
So I took from an Uzbek woman. That is why I thought they were lemons, because the Uzbek woman does not speak Russian. Only I have them with an obvious bitterness. I can't even call them sweet ... And pour cognac ... I haven't even done Ksyu-ksyu, I haven't even tried it ... Yes, and pine cones ... So the cognac on the kumquat will wait. ..
fugaska
and I just poured a handful of these yellow little fintiflyushes with cognac, this joy should stand for at least a week - it is soaked for a long time, damn it, but I didn't try to do ksyu-ksyu, I take a note
Hairpin
About Ksyu-ksyu.
Analyzed the reviews. A toad strangled to buy a bottle, but he is not in our Koptev taverns. So I ran through the forums.

1. I don’t believe that there are only strawberries and sugar. There are too many complaints in the forum reviews that too sweet.
2. Strawberries + sugar cannot be stored for a long time without preservatives. I think a week, not more. Or even 2-3 days

Conclusion. It was based on someone's local drink, with a short shelf life. Either preservatives were added to it (sugar, it's also a preservative), which we can't guess, or instead of strawberries there is an identical substitute. + pieces of real strawberries. So I think there are strawberries themselves - about five percent, no more.

So you can only try one option. Pour the grated strawberries with vodka in a volume ratio of 70/30. If you get something worthy, then this worthy life will be for several days ...
Tanyusha
The hairpin there is really strawberry puree and I would not say that Ksyu-ksyu is cloying when you drink the impression that you are drinking strawberry puree with sourness. I buy it in Metro when it is there, the price is certainly not small, but I don’t mind for good wine, and before it was sold only in Duty Free. In general, this week I will experiment, but I don’t know how much sugar to add to make it luscious.
Hairpin
Tanya 1962!
And I understand that it is declared as sugar-free ...
And ... and fructose will not play a role there?
Tanyusha
Hairpin honestly speaking at the expense of fructose I do not know.
Tanyusha
Well, in general, yesterday I tried to create one ksyu-ksyu, but with sugar, without sugar, I was afraid, but I think I'll do it without sugar. For 0.7 liters of vodka, I took 350 gr. strawberries and 200 gr. sugar, strawberries with sugar, I mixed in a blender and poured it all with vodka and sent it to the antrisol to stand for 2 weeks, and then we'll see what happened.
Hairpin
We wait!!!

Hairpin:
Thanks a lot for the Baileys recipe !!! Yummy!!! True, I tried only the first one. Instant coffee was replaced with strong natural coffee. The aroma is divine !!!
To be honest, I don't know what concentrated milk (from the second recipe) is and where to buy it
Luysia
Condensed milk is sold in cans such as condensed milk.
It looks like thin condensed milk, but not sweet at all. Previously, there were heaps, and recently I have not seen something, although I did not specifically look for it.
Michelle
Luysia, thanks!
I, too, have not seen this ... while I have certain doubts about condensed milk and this concentrated milk is not known what they are made of now ...
Hairpin
Michelle, I'm glad it came in handy.
And about what they make of what, you can only focus on GOST and TU. GOST has chances, TU does not.
Michelle
maybe I became harmful .... but all the time it seems to me that in my childhood condensed milk was tastier !!!! You could at least eat the whole jar of it !!!! and now it's kind of nasty
Hairpin
Yeah ... we've already discussed this ...In childhood and youth, it is not like condensed milk ... then the sky was bluer, the sun was brighter, the grass was greener ... And we were ... not so used !!!
Michelle
Yes, I understand......
BUT! Now, if only 1 jar survived from those times !!!! There would be proof
By the way, I hope that the Soviet ice cream in the glass was made from milk! 20 kopecks each, if I'm not mistaken ...
