Cookies "Baturinskie"

Korzhiki Baturinskie

Ingredients

wheat flour 350 g
almond 150 g
butter 150 g
powdered sugar 100 g + for topping
sour cream 20% fat 1-1.5 tbsp
yolks (from hard-boiled eggs) 2 pcs
yolk (raw) 1 PC
dry white wine 1-2 tbsp
bitter almond extract 1-2 drops
baking powder 1 tsp

Cooking method

  • 1. Grind almonds with a blender into small crumbs (as small as possible) and mix with flour and baking powder.
  • 2. Beat softened butter with powdered sugar until creamy. Without stopping whipping, introduce raw yolk and beat well. Add boiled yolks grated on a fine grater and beat everything into a fluffy mass.
  • 3. Gradually introduce half of the nut-flour mixture, add sour cream and almond extract. Add the second half of the nut-flour mixture and at the very end the wine. The result is a plastic dough that is easy to work with.

  • 4. Next, roll out the dough about 1 cm thick and cut out the biscuits. Transfer to a sheet covered with baking paper and bake in an oven heated to 180 degrees for about 25-30 minutes (until golden brown). Sprinkle with icing sugar before serving.

Note

The biscuits are incredibly crumbly and tender. And they just melt in your mouth.
They cook quickly enough, however, they are eaten even faster. Try it, highly recommend.
