Hungarian cheesecake

Ingredients

Mix No. 1:
cottage cheese 500 g
eggs 2 pcs
sugar 1 cup (250 ml) = 200 gr
vanilla sugar 10-15 gr
Mix No. 2:
flour 1.5 cups = 210 gr
draining. oil 100 g
baking powder 10 g
To fill:
sour cream 4 tbsp. l.
sah. powder 2 tbsp. l.
condensed milk 1/2 cans

Cooking method

  • This, of course, is not a cheesecake in the Russian sense, and not a cake, and not a pie, but rather a tender biscuit soaked in something very tasty ... At least, this was the taste of warm pastries. The next day, they say that the taste will be close to a sand cake ...
  • For mixture No. 2, chop (I rubbed first with a fork, then with my fingertips) softened butter with flour, mixed with baking powder to a state of fine crumbs.
  • Hungarian cheesecake
  • For mixture No. 1, beat eggs with sugar and vanilla sugar. Add cottage cheese and continue whisking:
  • Hungarian cheesecake
  • I had rustic cottage cheese in chunks, so I rubbed it through a sieve.
  • Hungarian cheesecake
  • Hungarian cheesecake
  • Pour a thin layer of mixture No. 2 (2 mm) on the bottom of the oiled form:
  • Hungarian cheesecake
  • Hungarian cheesecake
  • Put 3-4 tablespoons of mixture No. 1 on top and level:
  • Hungarian cheesecake
  • Hungarian cheesecake
  • It is better to do this with two paddles or scrapers. This was the hardest part of the process for me. I already remembered the recently watched film "Julie and Julia", and lamented that I was not a great cook ... but by the fourth layer it became easier ... it's a pity that the filling is over
  • Thus, lay out the whole cheesecake in layers to the top. The last layer is mixture # 2. Make the layers as thin as possible.
  • Hungarian cheesecake
  • Place the dish on the bottom of a medium-heated oven: about 160-170 degrees. At the end of baking, the heat can be increased to 180-190. (I had an antediluvian gas oven with three divisions. I put it on 2. I think the temperature was about 180 degrees. I baked the cheesecake for 50 minutes).
  • Bake gradually for about an hour. Willingness to check with a match.
  • Hungarian cheesecake
  • Remove the hot cheesecake from the oven and immediately pour it with a mixture of sour cream, sugar and condensed milk.
  • Hungarian cheesecake
  • Cool slightly and release from the form.
  • Very tasty both warm and the next day.
  • You get thin layers of fluffy dough and white filling.
  • Hungarian cheesecake
  • Here is such an amazing cheesecake from the Hungarians !!!
  • P. S. The middle of the cheesecake after the opal has cooled, but for curd baking this is normal
  • PP PS I forgot to add that baked in a split mold with a diameter of 24 cm, and the cheesecake turned out to be low approx. 5-7 cm

Even some!!!

Vikus, you definitely need ribbons made of baking paper or non-stick fabric under the ass, but what to think of with the top ... Although, maybe in Brand's humid environment, the top crumbs will soften and bake, like a biscuit ... who knows ...

Gasha cheesecake mortality, I just made it in a multicooker, the top layer of the streusel turned out to be baked just lovely: nyam: only I didn't have a fill in the recipe, so I need to repeat it with a fill

Baked in Panasonic on baking 60 minutes + 40 minutes. It's a pity I didn't take a photo then: girl_red: I just mastered the cartoon
Arka
Gan, in the morning before work the action "There is no turning back!"
Grated flour and butter and left in the refrigerator. I measured the rest. I'll bake in the evening!
I do half a portion so that if the program "I will not leave a crumb to the enemy" suddenly turns on, I do not get upset about the amount eaten
Please advise the best available mold size:
square rounded from fireproof glass 17x17 type Hungarian cheesecake but without a cover,
or portioned cocotte makers made of ceramics 8x8 type Hungarian cheesecake
I gave my detachable one for temporary use, and it’s big for half a portion.
I myself tend to the portioned ones due to the difficulty of laying out the glass cheesecake, but I took the portioned one and eat it.
I'm also interested in time, probably 40 minutes will be enough ...
Vichka
Galyun, and sc. did you get layers?
Arka
Quote: Gasha

but by the fourth layer it became easier ... it's a pity that the filling is over ...
Gasha
Slastena, Thank you

Arochka, I would take a large one, because in small ones it would be inconvenient to smear the filling with my scrapers ...You can bake both a large cheesecake and small ones, but think of what you will spread. The small ones can be ready in half an hour, so - just look ... Put crossed wide ribbons of baking paper under the cheesecakes, it will be convenient to get

Vikus, four layers of filling, respectively - five layers of crumb

P. S. Day two ... My husband and I ate half a cheesecake for a couple ... Indeed, there was something in the taste of a shortbread cake
Arka
But you can never get out of the little ones
I just take out, say, from the oven in half an hour, my tiny molds, fill in the sauce and quickly grab a spoon, moving the mold closer to me

Apparently, cottage cheese and eggs are different.
I also added a bag of coconut to the crumbs, 60 g.
