Good day! Yesterday, according to your recipe, Omela, I baked bread, it turned out very tasty! I did everything according to the recipe, only there was no ginger, but still - I really liked it! Thanks for the recipe! But his roof is not as raised as we would like, but it does not affect the taste! When I pulled it out of the mold, the dome sagged a little (I shook it a lot, I didn't want to pop out because of the kneading spatula)

I have a question. Have you counted this recipe at 900g? I want a bigger loaf, it’s too small, it is eaten in a moment, and there is no time to bake every day.
Omela
a life, beautiful bread turned out !!! Openwork crumb !! And my dome is also not very convex. To convert to higher weight, you need to multiply each ingredient by 1.2.

Thank you! Tomorrow I will try to bake 900 grams!

Many thanks to Omela for the delicious wheat bread recipe!
I baked the second time on my Panasonic 2502, weighed water and milk on an electronic scale, in the "gram" mode, and on dry yeast - 1 hour. l, the bun turned out great!
And here is the bread itself, on the weekend my friend ordered this one, I bake it for her too!

Oksanochka, I also checked in with your bread. I liked it very much. 🔗
A little bit I "hated". Flour: 300g w / s + 100g "8 cereals", pressed yeast 6g (moreover, from the freezer), ginger, although it was poured, but it is already old, added a little ground nutmeg, milk in half with the rest of sour cream + water (as a result , prescription liquid), butter.

Delicious bread. Due to the fact that the cheese was Maasdam, the salt seemed not enough. I put a light crust, but it still turned out to be tanned.
A-a-a! I understood why tanned - Maasdam is sweetish, he gave extra sugar, hence the color. Yes, Oksan?
Omela
Marina, what a handsome man! And most importantly - everything is according to the recipe !!! And the color, yes, depends on the cheese.

Note

I know the recipe for this bread by heart, because I did it 10 times. I tried different modes, different amounts of yeast and water, different temperature of products. And all this time the roof fell hopelessly.

This particular bread was baked with a delay of 7 hours. That is, the products were laid cold, I did not control the kneading process.

Also note that I used a round bucket, which is smaller than the rectangular one.

Based on recipe Quick Kneaded Cheese Bread

Omela, thanks a lot for the recipe !!!! yesterday baked (Bork 800) sooooo delicious!

Omela
Simple alis , welcome to the forum! Glad you liked it!

Thank you very much for the recipe! The bread was a success! Tasty! Only without ginger, I don't have it. My only mistake is that I love slightly toasted bread, well, I put it on the night with a delay of 7 hours, the crust color is dark. It turned out to be a little overcooked. I did not take into account the fact that it will still be warmed up after baking, there is no one to pull it out right away - I'm sleeping. Now if I bake at night, I will use a medium crust. You will get what you need!
I already love my stove more and more each time thanks to your Omela recipes
Omela
Dilya, I'm glad that everything worked out for you.

No, the crust is not overcooked because of this. The point is the cheese, it gives roastiness.

My fourth bread on the new panasonik 2502. I saw this one yesterday evening, looked into the refrigerator, yeah - everything is there, and decided to bake it. Started doing, oops! - there is no milk, but I want to do it, well, well, I spread a baby mixture for 250 g of warm water, I have only the first grade flour, I don't recognize the highest, I just sawed off 7g of yeast from the freezer with a hot knife, poured it with hot water in a bowl from - tap (a little), they melted and poured this warm mixture into a hole in the flour, and on top half a tablespoon of flour, and on the first program (for 4 hours). The rest is as prescribed. Everyone liked it sooooo much, thanks!
And yet, can someone tell me how to download pictures of bread? uploaded to the radical, but how can I copy the link there, only one photo and no links, registration may be necessary? I paste links from my Yandex. disk

Oksanochka made this bread on the principle of "forget until morning". In the morning there was such a smell in the kitchen BUT, the jamb The roof collapsed. In a hurry, I mixed up the yeast and put 7 g dry. Even when I was putting it down, I thought it was too much, but did not check it. Here is the result. But I was pleased with the taste, color and structure of the crumb. I will definitely try again.

Oksan, and the taste of cheese is strong?
I want to try it, but it's kind of scary ...
If the cheese-cheese husband will not eat.
Although he loves cheese, but in its normal form.
And I’m just a lot!

Tataof course that's a lot. I also made "sclerotic" bread with it. I even put 2 g of yeast.

Oksan, and the taste of cheese is strong?
Masha, for me it doesn’t feel that way, it’s just an additional aroma and color. I do it with soft ones: maasdam, Russian, etc.
Lizaus
Oksana, have you tried it with leaven? Recently I got a bread maker ... I grew the sourdough itself, now I want to shove it everywhere
Omela
Nataliya, welcome to the forum! Until the teacher bakes with sourdough, take proven recipes with sourdough. And then any one can be customized for the sourdough. For wheat bread, the amount of leaven is 30-40% of the amount of flour.

Thank you. So somewhere around 200 grams of sourdough per 500 grams of flour? In many recipes, something like this. I will definitely try, of course, unsubscribe. Thanks again for the support to all of us.

I have a Vitek bread maker, I use it recently, cheese bread is my dream! As I understand it, in the standard Vitekovsky recipe - add cheese for wheat bread and melt butter instead of vegetable oil? Or will the proportions change from this and it will turn out completely different? I don't know all the subtleties yet and I ask you to help me, pliiiz

Alexandra, welcome to the forum. To get started, read the HP Bread Baking Tutorial: https://Mcooker-enn.tomathouse.com/in...tion=com_smf&topic=7271.0... If you want to bake a specific bread, then you must follow the proportions indicated in the recipe. Or reduce (increase) to fit your HP size. With this basic rule, the "kolobok" rule remains.

Thanks for the recipe, it became a test for my bread machine (brand new), this is the first bread that turned out, the recipes from the instructions somehow did not turn out very well, some curves (bread) and this one, although the roof dropped a little, but it was even, baked and very delicious, whom she gave to try everyone really liked
I was already thinking about taking the bread maker back to the store, otherwise it bakes very crooked bread (maybe it's in kneading, pulls it onto one stirrer), but now I'll try your recipes, maybe this business is in recipes

Natali, with a lucky bread! Of course you have to try and find "your" recipes.
Churadey
Thanks for the recipe. I counted it to 500 g and made it for a small bucket (double form) for Gorenje BM1400E. It turned out perfect. I mixed cold milk with warm water, did not heat butter - I put it that way. Instead of ginger (it was not there) I put various herbs (hops-suneli, basil). It turned out very tasty.

I love the "perforation" !!!

Omela, thanks for this miracle, I did everything exactly according to the recipe (I specially bought the scales), Poshekhonsky cheese, cotton Ariete 130, light crust, Basic program for 3 hours. It rose remarkably, but towards the end of the baking, the roof began to sag, but this did not affect the taste, splendor and aroma.

WHAT A BEAUTIFUL BREAD!

Omela, thanks for the recipe, the bread turned out to be very tasty))) I put it when leaving for work, so I did not look after the bun. Yeast used 2/3 tsp. Saf moment. Returned home, and the SMELL !!! FANTASTIC))

but I noticed that if you do not put butter, bread with a high dome turns out (and with butter it is almost flat, but I don't want to make the coolest bun, it's a pity for the stove)
Omela
Newbie, Your conclusion is not correct! A flat roof is obtained not from the presence of oil, but for two reasons: 1-excess of water, 2-excess of yeast or their reactivity with a large amount of sugar.
Newbie

the cheese melts, that's why the amount of liquid increases, and not only liquid, but also enough fat is obtained. The cool bun is not shown to the stoves.
Maybe from 60 degrees. this does not happen, and I always add more.
Sorry to fit in. I will remain unconvinced. For me this is a pattern.
Omela
So you specifically talked about this recipe, I thought in general you have such a pattern. And here it is possible, if you put more cheese, then the extra fat is released.

Omela, Good day! Yesterday I baked bread and I - the aroma, taste Abaldenny)) It feels like we got to the pizzeria :-) We really liked it! I will definitely bake some more, the bread is suitable for both sweet and snack tables. Bakla in Panasonic, mode 01-Basic, crust-medium, dry Lviv yeast, hard cheese Russian Como. I added 1 hour from myself. l. Italian herbs.
BUT there are 2 things that I need to fix, I ask for help: 1) the roof of the bread is cracked well ;;; 2) I chose size M for 400g of flour, the bread turned out to be a low 10cm in height, which is significantly different from yours. So I understand that add a little more liquid and choose the L size? Thank you in advance!
Omela
Taniushik, cracked - yes, there is not enough liquid. And he certainly shouldn't be so low. How much yeast did you put in? Such a suspicion that they did not work. And the size must be chosen L.
Taniushik
Omela, put a 2/3 teaspoon of yeast from HP as recommended above. Probably, most likely, yeast is due to the fact that they are open with NG and are simply stored in a cabinet. I will definitely buy fresh!
