Khachapuri in our way

Ingredients

Yeast puff pastry
(sometimes on the bottom layer
take yeast-free dough

Semolina

Salt to taste
Butter 200 g
Egg 2 pcs.
Coarse grated cheese

Curd (5% or 9%) 500 g

Cooking method

  • I mix everything, it turns out a thick mass. By the way, you can reduce the ingredients proportionally (but always delicious when there are a lot of fillings)
  • After that I roll out the first package of dough (about 1 cm thick), put the layer on a baking sheet greased with vegetable oil), distribute the filling evenly and close it with the second layer.
  • No pinching of the edges, just press down slightly (cheese and eggs will do the trick)
  • While the oven is heating up, cover the dough with a napkin and about 30 minutes
  • resting.
  • Lubricate the top with a beaten egg and send to the oven. Bake until golden brown.

I want to offer my recipe for khachapuri. I cooked it a hundred times, for sure!
My family loves this dish!

Delicious, I'll tell you! And what is important, fast!
And when it cools down a little, I cut into squares.

Alinchik, khachapuri are simply magical, the main thing is that they are very fast and not energy-consuming - together with the preparation of the filling and rolling the dough, a maximum of 5-10 minutes was spent - this is a real recipe for a working woman. Instead of Russian with cottage cheese (there was none) I put Mozzarela and did not add semolina - very tasty.

Rezlina, the dough will not rise too much, it just needs to be separated a little. A narrow strip will not work when you roll it out, it does not shrink on the sides.
My opinion: there is never too much filling.
Oven for 200, about 15-20 minutes. until golden brown.
And, IMPORTANT, don't forget to put a bowl of COLD water in the oven.

You probably didn’t prick it with a fork, in the sense of khachapur. The bottom is damp due to the fact that the inside is watery, There were no such problems with mozzarella, I did not add cottage cheese, but interfered with mozzarella with dzhugas + butter + egg.

And in electric ovens there are at least 2 heating elements - top and bottom, so there heating is more uniform and water is not needed! There, and so, when heated, condensation forms, so there is enough "humidity"
