  • In a certain kingdom, in a certain state ... no
  • In the center of Europe, in the center of Germany, in the state of Hessen, among fields and forests, on a high mountain stands the Ronneburg Castle.
  • View from the loophole of the castle
  • Dinnele
  • The castle has been well preserved since the 16th century; there is now a museum inside the castle.
  • Every year, in spring and autumn, a medieval festival is held near the castle, with a fair, knightly tournaments, performances.
  • Many artisans come to the fair with their works, folklore groups, and many fans of the Middle Ages.
  • All are dressed in old costumes, shoes and hats.
  • Dinnele
  • Dinnele
  • Artisans show their crafts right there.
  • Dinnele
  • Ancient folk amusements
  • Dinnele
  • You can learn how to shoot a bow, watch knights fight on swords, listen to folk music
  • Dinnele
  • Souvenirs for every taste, wines, sausages
  • Dinnele
  • Dinnele
  • You can eat and drink deliciously, and when tired, tired and sweating, wash in a medieval bath)))))
  • Dinnele
  • Dinnele
  • And upon arriving home, remember a perfectly spent day, review the photo, remember the enjoyment of taste and try to repeat the old recipes.
  • So today I have DINNELE.
  • What is dinnele?
  • Long ago, in villages, bread was baked in wood-burning ovens, usually once a week. The smell of the dough was breathtaking and, of course, the children simply could not wait for the loaf to be taken out of the oven.
  • You also had to wait for the dumb stove to cool down after the wood burned out. And then the mothers invented from the remnants of bread dough to bake cakes, thinly stretching the dough, smearing it with sour cream and sprinkling it with onions and speck, or whatever was at hand. At the same time, the oven cooled down to the required temperature for baking bread.
  • Hence the name of these cakes, from the word dünn thin. In different regions they are called Dennete, Deie, Dinnede, Dinne, Dünne, Dünnele oder Dinnele.
  • This is how dinnele is baked at the fair
  • Dinnele
  • Dinnele
  • For the dough, we weigh 400 g of white flour and 100 g of spelled.
  • Stir, 100 grams of flour mixture, 20 grams of yeast, a pinch of sugar and 150 ml of water. We put the dough for half an hour in a warm place.
  • When the dough rises, add the rest of the flour, water, and at the end vegetable oil.
  • Adjust the amount of water, because the flour is different for everyone.
  • We grease our hands with butter, fold the dough several times and put in a dose also greased with butter.
  • After an hour and a half, fold the dough several times again and put it on the final proofing.
  • We take out the dough, divide it into parts, I have 5, but I advise you to make more cakes and pull them thinner.
  • Stretch the dough with our hands into thin cakes
  • Dinnele
  • Prepare the filling, mix sour cream, egg, salt, pepper, mix well.
  • Spread on flat cakes, sprinkle with finely cut face and sausage
  • Dinnele
  • Sprinkle with cheese on top. Cheese is not always sprinkled, often put onions and speck and that's it.
  • We heat the oven to 250 *, put a sheet of cakes there, reduce the temperature to 200 *.
  • Bake for 20-30 minutes, depending on the oven.
  • Dinnele
  • Dinnele
  • It turned out VERY tasty !!!! Try it, you won't regret it.

Lerele, your photos are not visible. You load them on the radical and then insert them into the recipe.

But I will definitely bake your cakes!
MariV
Not otherwise, the Romans brought their pizza to Germany ...

Delicious!
Lerele
Somehow I inserted a photo, now you can see.
MariV
Interesting photos and story!
Lerele, are you standing by the stove with a baking sheet and cakes?
Lerele
Nah, it's the baker, not me
I also tried to ask her for the recipe, she took pictures willingly, but with the recipe bummer, she doesn't say
tuskarora
And I also thought that the photo was Lerele. And the recipe is just great! I'm going to build my son tomorrow for baking focacci in a multigrill. At the same time we will taste such cakes. I just won't let him go to the oven yet, but let him play in the cartoon.
MariV
Yeah ... You know, we pronounce and write Hesse. That is, Hessen is in German, X is pronounced very firmly, almost like G.
Lerele
MariV, well, this is how to say, for example, the name Hans, we pronounce it like Hans, but if someone calls Hans that way, he will be offended that he was called a goose
Lerele
tuskaroraTry it, it's obscenely tasty, my husband, he doesn't eat pizza at all, at all, but he's got two and a half cakes and is satisfied.
NataliARH
Lerele, well, it is necessary to coincide in thoughts and actions! I just sat down to post the recipe and pictures, but already there is ahead)
Lerele
NataliARHwho did not have time, he was late
How many times have I already
NataliARH
Lerele, eh, and I still have other fillings))) I made 3 types, traditional and in a modern manner)
Lerele
NataliARH, and put the pictures here, it will also be interesting for everyone to see
irysikf
Super cakes, I will definitely cook

NataliARH, who did not have time, he was late
How many times have I already

... you weren't the only one ...
NataliARH
MariV, what will happen by the end of the competition)))
MariV
There will be the end of the competition, determination of the winners - everything is as usual. I bet 100 to one that a trip to Germany for two does not shine for Lerele - she is already in Germany.

But you can save on me
And I can arrange a meeting with the winner
Tanyulya
I'll have to try. Thank you.
Sima
Lerele, very appetizing tortillas! You can make them with vegetables + cheese, right? I don't eat meat.

Girls, and what spelled in Russia to buy and where? Oh, and I have read. So interesting
NataliARH
MariV, I meant that there will be continuous repetitions if dubbing has already started at the beginning
Lerele
Sima, you can, and with potatoes and apples. What was at hand was imposed on them. And the dough can be made white, initially, it is the remnants of bread dough, no matter what.
That is, the recipe is universal.
NataliARH
Lerele, that's right, universal as well as pizza) the dough is a little different everywhere, someone is thicker, someone is thinner, as far as I understood from what I read on the Internet - the filling consists of only one component! i.e. sour cream dough coating + filling + cheese optional. for me, it's much more convenient to eat them than pizza, due to the shape nothing falls if the dough is thin (that is, like a corner of a standard pizza falls). Dinnele is called Swabian pizza. Well, their shape is elongated. A distinctive feature is the presence of caraway seeds either in sprinkles or in sour cream, and pepper and garlic powder are added there as desired. Traditional filling - sour cream, onion, cubed bacon and cheese, cumin. They bake at temperatures up to 300g and more, in general, turn on the oven at the highest power + grill! baked quickly for me 10min. In general, they write from 6 minutes.

Lerele
NataliARH, beautiful !!!!!!!
Initially, they did not put cheese in them, maybe not everyone had it, but sour cream plus filling. And the classics are raw onions and pieces of speck.
They were also baked in ovens before baking bread, in the very heat, and they turned out to be crispy, for children it was a super treat.
And they always put caraway in sour cream, I don't like it, so the recipe was left without cumin
Lerele
In general, I ate these dinneles before, several times, but if it weren't for the competition, I might not have done it myself, so it's great that it (the competition) still exists !!!!!!!!!!!! !!
NataliARH
Yes, in the very heat, I added it, I forgot completely, I think you have it written at 200g, this is not quite right ... due to the fact that they are crispy and more convenient) my daughter barely stopped, it was time to sleep, but she's eats and eats))))
Lerele
NataliARH, at first we heat the oven to 250, only then switched to 200, I was afraid that it would not bake inside and burn outside. All the same, not a wood-burning stove.
lettohka ttt
A very interesting recipe, beautiful and tasty, bookmarked, thanks !!
Lerele
lettohka ttt, I already wrote that it is indecently tasty. My husband, who had never eaten pizza, asked today, they say, when will you still make these cakes?
lettohka ttt
And you can ask what is Spelta polba ?? Please enlighten
Lerele
This is a variety of wheat, it contains Thinning Skins, the flour is gray and there are, as it were, small pieces of skin. But it can be partially replaced with rye flour. Not completely, but 50-75 grams can be put. Any bread dough recipe will do.
irysikf
NataliARH, and in the photo you have one cake with apples and something else? Can you find out what is there for the filling and what kind of spread?
NataliARH
Ira, spreading: sour cream + egg + sugar filling: apples and grapes for beauty, sprinkle with sugar ... you can jam / jam, the Germans do this, I even decided in the old fashioned way with sour cream)
irysikf
Quote: NataliARH
and grapes for beauty,
And I didn't think of grapes, the first thing that came to my mind was olives
And in the photo, as if sprinkled with cheese ???
NataliARH
sprinkled, yeah, well, I thought you could see it) can you make it with a separate recipe?)))
Lerele
NataliARH, ask the Chief. All the same, the recipe is one.
I understand what is offensive to do, and then be so late. Maybe the chef will allow it.
Lerele
And today I baked pies with cabbage and made a couple of pieces with apples from the remains of the dough, because the dough is rich.
I rubbed half an apple, mixed it with sour cream, rubbed it with sugar, oh and delicious

irysikf
Lerele, looking at my Ferrari pizza oven will not be bored at all
Lerele
irysikf, and I'm still waiting for the princess, I want to try it.
irysikf
I'll get a salary and I don't feel like I can stand it, and I'll buy it, Princess
MariV
Lerele, finally confess, where do you live in Germany?
Lerele
MariV, nope, I don't confess
I live in a small village in Hessen
MariV
Well, it is not necessary....
Kras-Vlas
Lerele, please explain how much yeast is needed (otherwise in the recipe - 30g, and in the cooking method - 20g)? Or am I missing something
Lerele
I was wrong, I need 30 grams
Kras-Vlas
Thank you very tasty Dinnele, I will definitely try to make it!
Lerele
Yes, very tasty, I have done it several times. And the paradox, the husband does not eat pizza, but the dinnele eats both cheeks

I do not argue ... from the pictures the tongue swallow Mona
Anise
Lerelehoney, I finally tried to bake dinnele! I used my own dough, but I made the filling and idea from here with apples.
Very soulful! True, I took a decent piece of dough (what can I do, "I'm not used to half measures" (c)), well, next time I'll make a smaller one and rub the apples on a grater. In general, the photo may not be impressive, but it was sooo tasty! I especially liked the filling, like familiar products, but everything together played with a new taste. Thank you, Lerele!
