Firstly, I pour the flour into the water, and secondly, I knead the dough for 5 minutes at first. at the minimum, then 20 - 30 minutes of rest, then the main kneading: dough 58 - 64% moisture at 1 speed 8 - 15 minutes; 66 - and above% humidity at 1.5 (2) speeds 8 - 15 minutes, during this time the dough is collected either in a classic bun or like a bun (depending on humidity) and this bun will clean both the walls of the bowl and the bottom, nor what remnants of flour are out of the question. After all, you need to knead the dough until the gluten develops well, which means bring the dough to a state where it not only does not "smear", but also becomes smooth and gathers into a lump.
