Ingredients

Butter (margarine) 150 g
Sugar 150-200 gr
Vanilla sugar 1 sachet
Cottage cheese 200 g
Eggs 2 pieces
Flour 200 g
Baking powder 2 tea. spoons
Cocoa 1 table. the spoon
Frozen cherries

Cooking method

  • Grind 150g plums. butter (margarine) with 150-200 gr of sugar and a bag of vanilla sugar. Add 200 g of cottage cheese (use fatty cottage cheese, it will turn out more tender) and 2 eggs.
  • Stir well with a mixer. Pour in 200 grams of flour mixed with 2 teaspoons of baking powder. Beat everything well with a mixer.
  • If the mold is not silicone, line it with baking paper or grease with margarine and sprinkle with oatmeal.
  • We spread half of the dough into the mold. Above are cherries straight from the freezer.

  • Add a tablespoon of cocoa powder to the rest of the dough and mix thoroughly with a mixer. Put the dark dough in a mold on top of the cherries and put the cherries again. The cherries need to be pressed into the dough.

  • We bake in the oven for about an hour at 180 °.
  • We check the readiness, as always, with a wooden stick.
  • If someone decides to bake this delicious delicate cupcake, I want to give some tips. Since there is a lot of moisture in the dough from berries and cottage cheese gives its heaviness, then for better baking, I advise you to take a mold with a hole in the middle, like mine. If there is no such form, then you can put a tall metal can from under the compote in the middle. It will heat up and help bake in the middle. To reduce moisture, the berries can be defrosted in advance on a strainer, and the cottage cheese can also be used dryer, or also hold it on a sieve for an hour before placing it in the dough. And everything will work out. I usually, when the baking time of the cake has expired and it is well browned, and the test "for a match" is still wet, cover the cake with foil on top and remove T * to 60-70 for another 15 minutes or more. I periodically check the readiness with a match. Cupcake always comes well, dries inside.
