Creamy curd cake

Ingredients

Dough:
170 g flour
2 tsp baking powder
170 g sugar
1 pt vanilla sugar
1 pinch of salt
4 eggs
170 g butter (margarine)
Filling:
30-40 g gelatin
150 ml of water
180 g sugar
1 pt vanilla sugar
400-500 g of cottage cheese (fat)
zest of 1 lemon
50 ml lemon juice
350 ml cream 25-30%

Cooking method

  • Mix flour with baking powder, sift, add the rest of the ingredients. Beat until smooth. Put the mass in a mold (28 cm). Bake 160 * (preheat the oven) 25-30 min. Remove the sponge cake from the mold, allow to cool, cut in half. Filling: Soak gelatin in water for 10 minutes. Sugar, vanilla sugar, cottage cheese, beat the zest with a mixer. Dissolve the gelatin in a water bath, add lemon juice, add to the curd mass, add whipped cream. Put the bottom half of the pie into a split form, spread the cream evenly on top. Put the top half of the pie on top. Put the cake in the refrigerator. After the mass has hardened, sprinkle with powdered sugar on top.
