Ingredients

Wheat flour 400 g
Herculean flakes long
(took 5 cereal flakes)

Cooking method

  • Heat the water or potato broth to 40-50 * C, pour over the flakes, add salt and yeast and let stand for 20-30 minutes and swell.
  • Now add wheat flour and knead not tough dough. You can knead with a spatula and you do not need to knead for a long time, only until the mass is mushy.
  • I kneaded with a hook in a food processor for about 5-7 minutes.
  • You cannot handle such a dough with your hands, the mass is liquid like thick oatmeal porridge. You need to work with a spatula, collect the "porridge" in a pile and put it on proofing at 30 * C until the mass (dough) doubles. The dough rises quickly!
  • For kneading, sprinkle the dough with a drop of flour so that the dough does not stick to your hands. The dough is very soft !!!
  • We spread the dough on a baking sheet for proofing, the dough rises very quickly!
  • While the dough is ripening, heat the oven to 220 * C.
  • We cut the dough, and put the dough in the oven for baking, immediately reduce the temperature to 200 * C.
  • After 10-15 minutes, lower the oven temperature to 180 * C, and bring the bread to readiness.

The bread is light, gray, because it contains a large percentage of oatmeal - 37% - that's a lot !!!
The crumb is porous, soft. The crust is very crispy!
I could not resist and broke off a piece of bread while still hot, but you can still see the quality and structure of the crumb!
