Whole Wheat Roll Bread with Cheese and Herbs

Ingredients

Dough:
Aged kefir 200 g
Wheat flour 120 g
Whole grain flour 80 g
Fresh yeast 8 g
Dough:

Aged kefir 100 g
Water 50 g
Wheat flour 180 g
Whole grain flour 100 g
Vegetable oil 25 g
Salt 1.5 tsp.
Sugar 1 tsp
Filling:
Any greens (dill, parsley) 1 bundle
Cheese 100 g
Garlic (optional) 1 clove

Cooking method

  • 1. Dissolve yeast in kefir. Add flour. Knead the dough with a spoon in a plate, cover with foil and refrigerate overnight.
  • 2. In the morning, beat the dough with kefir, water, sugar, salt for oxygenation.
  • 3. Add flour. Knead the dough. Add rast last. oil. Leave to increase by 2 times.
  • 4. After lifting, dump the dough onto a floured table, divide into 4 pieces, roll into balls. Cover with a towel and leave for 15 minutes.
  • 5. At this time, chop the herbs, garlic and cheese (I did this in a food processor).
  • 6. From each ball, form a cake with your hands along the length of the mold. Put the filling, roll up. Do this 4 times. Put the rolls tightly to each other in the form. Cover with a towel. Leave to grow 2-2.5 times.
  • 7. Before baking, grease 1 \ 2h. l. starch, diluted in 40 ml. water, sprinkle with sesame seeds (optional)
  • 8. Bake in a preheated oven 200C - 15 minutes, 180C - 15 minutes, 160C - 20 minutes until tender.
  • 9. Remove the bread from the mold, grease with butter, cool on a wire rack.

Keep in mind that kefir gives bread a certain sourness, who does not like it, it is better to use water or whey.
Bread was baked specially for the arrival of guests. Thus she earned herself 100 points !!!! The people, far from baking, were simply shocked and diminished the whole loaf even before the main course !!!
