Strawberry Delight Pie

Ingredients

Dough:
Wheat flour 240 g
Salt pinch
Sugar 3 tbsp. l.
Butter 200 g
Filling:
Strawberry 700 g
Wheat flour 5 tbsp. l.
(no slide!)
Semolina 1 tbsp. l.
Sugar 5 tbsp. l.
Butter 100 g
Egg yolks 4 things.
Egg whites 4 things.
Cream 5 tbsp. l.
Almond
(walnuts can also be 50-70 g)
50 g
Lemon or orange zest

Cooking method

  • Knead shortbread dough, cover and leave for 10-15 minutes.
  • Pre-fry the nuts, cool and grind (I did this on a Soviet coffee grinder).
  • We put the oven to preheat 180 gr.

  • Beat 100 g of butter, add yolks, sugar, cream, nuts, zest, semolina and flour. Beat everything together.

  • While everything is whipping up, we quickly line the form with shortbread dough, making
  • the side is 3-4 cm (I have a shape of 24 cm.I don't roll out the shortbread dough, but tear it off piece by piece and knead it with my hands along the bottom, then I also make the sides), poke it along the bottom with a fork and put it in our preheated oven for 10 minutes.

  • These are our yolks:

  • We set them aside and beat the proteins to the peaks:

  • Then we mix some of our proteins into the yolks (whoever does the opposite - I don't mind)

  • We spread the rest of the proteins and mix everything into a homogeneous mass.

  • By this time, our shortbread dough is already ready, we take it out, sprinkle the bottom with semolina (a pinch or two), spread the strawberries, sprinkle with sugar (to taste - I like it later and sprinkle three tablespoons), then again with semolina (2-3 tbsp. L .):

  • I have fewer strawberries here than I need, because the children were slowly dragging them along while they dried after washing.

  • Lay out our mixture of proteins and yolks on top:

  • Since I bake in a microwave oven with convection (and I have problems with the rapid formation of a crust on top), I cover the form on top with foil, poke holes with a knife and set it for 50 minutes at 180 g. Then I remove the foil and for another 30 minutes at 160 g.
