Eggplant Spark

Ingredients

eggplant 5 Kg
bell pepper red 1.5KG
bitter pepper 2-3-5 pcs.
garlic 200 BC
vinegar 9% 200 ml.
salt, sugar taste
sunflower oil 100 ml + as required

Cooking method

  • For some reason, this recipe is not on our website. And I wanted to cook "Spark".
  • Do not peel the eggplants, cut into circles 1-1.5 cm thick and sprinkle with salt. Let the juice run for 2 hours.
  • Then squeeze the eggplants, I still wash them from excess seeds. Fry the eggplants in vegetable oil until golden brown on both sides.
  • I put the eggplants in colander to remove excess oil.
  • Pass the bell pepper, garlic and hot pepper through a meat grinder, add vinegar and 100 ml of calcined oil. I also played 1 bunch of cilantro. I added salt and sugar to this seasoning to taste.
  • Lay in clean jars
  • and sprinkle with hot seasoning.
  • Cover the jars with boiled lids and sterilize 0.5 l jars for 20 minutes. Wrap until cool.

I fry the eggplants until tender, but pour a little oil and put them on colo-slag so that the oil is too glass. I fry until yellowish, eggplants are cooked.
Sterilizing is not difficult.
Put a cloth on the bottom of a wide saucepan, put jars with a covered (not twisted) lid and carefully pour water over the jar's shoulders. Heat until boiling and reduce heat so that the water boils all the time, but not much. Count the sterilization time from the boiling point of the water.
For example, I sterilize in batches of 4 jars. There are no such pots that all in one fell swoop either. To immerse the next batch of cans, you need to take away hot water and pour cold water. Just so that the banks don't burst.
