Cherry-creamy puff pastry cake

Ingredients

yeast-free puff pastry 500 gr.
frozen cherries 300-500 gr.
sugar 2-3 st. l. (taste)
cinnamon 1 tsp
starch 1 tbsp. l.
sour cream (or cream, yogurt) 300 gr.
marshmallow (or sugar to taste) 2 pcs.

Cooking method

  • Cherry (this time I had a small bag of 300 grams, but you can taste more) - put frozen cherries in a saucepan / ladle on the fire, add sugar 2-3 tbsp. l. (maybe more - according to your taste), bring to a boil. While stirring, boil for a couple of minutes. Add cinnamon, stir, pour in starch diluted with cold water (I had corn starch, I didn't remember how much I needed - 1 tbsp. L.). Keep on fire for a couple more minutes, stirring occasionally. Everything, it turned out cherry in jelly (or jelly - not scary). Leave to cool.
    Cakes - the dough has already defrosted, my "chip" is in use for assembling and serving a glass form (round or square) in order to saturate the edges of the cake with cream to the maximum. Based on this, we cut the dough (we bake 4 cakes from 500 grams), I had 2 square layers - I cut each in half, rolled it out, you can immediately cut out circles or bake it in squares (if there are scraps, we bake them too). Before baking, I keep the rolled out and "waiting in the wings" dough in the refrigerator. I baked the cakes in a preheated princess pizza maker, taking turns, for 15 minutes. She left the cakes to cool.

    I remembered the cake thanks to this dessert / cream. Beat the sour cream with pieces of marshmallow with a blender (this time I had 2 jars of "Valio", 23% - it is like a cream); and next time I will do it with yogurt or less fatty sour cream. Used to use 33% cream, whipped with sugar; you can probably use ready-made whipped cream from a can for speed.
  • Assembly:
  • In the assembly, the main thing is not to stand on ceremony with the cakes. We cut / break off the edges, if necessary, according to the size of the form (we leave all the scraps, crumbs).
  • Put the first cake on the bottom of the mold, press and flatten, pour scraps and crumbs around the edges, spread cherries with jelly (1/3), distribute, pour cream (1/3), especially the edges;
  • flatten the second cake on a plate, put it in a mold, press and repeat - crumbs, cherries, cream. We do the same with the third cake; we don’t put anything on the fourth cake from above.
  • We close the filled form on top with a plate, press it and send it to the refrigerator, of course, it is better at night, so that all the layers are saturated and the cream "grabs".
  • Since this cake is quick-lazy, for a family, I leave it in a glass form, the pieces are perfectly cut and removed, keep their shape (but I am still the cook, maybe you won't need a form). For a guest / festive table, you can probably make it in a detachable form, then decorate the sides, etc. "To go", to work or a buffet table, I would do in portions, in low wide glasses / glasses - nice and convenient.
  • For those with a sweet tooth, "in a particularly neglected form" can be sprinkled with grated chocolate or decorated with strings of chocolate glaze, etc., etc.
  • On the Internet, I came across that you can still use red wine for cherries (the original recipe used cherry compote); you can also simply grind the cherries with sugar with a blender; after all, you can use jam, and not just cherries ...
  • But this option is the most delicious for me - puff pastry, cream and sour cherries, with a barely perceptible aroma of cinnamon ... Bon appetit!

The "legs" of this recipe "grow" from the magazine "Burda" (I think that it was still the end of the 80s), but the recipe itself has already been lost, remained as a basis, so I emphasize once again - do it according to your taste, easily and quickly !!!

A dogwood accidentally added. First, I brewed a cherry layer. Then I remembered that they had drunk the cornelian compote, but the berries remained in the jar.
