Ingredients

Meat 600 g
Dumba (fat tail) 50-60 g
Onion 200 g
Carrot 200 g

Tomato paste 2 tbsp. l.
Pepper mixture (I have 4 types) pinch
Zira coarse 1 tsp
Ground coriander 0.5 tsp
Dried basil small. pinch
Paprika 1 tsp from the hills.
Salt taste
Apple cider vinegar or regular 6% 1 tbsp. l
Badian (one ray from an asterisk) option
Dzhambul (fragrant herb) option
Homemade noodles from 4-5 eggs
or
purchased linguines

Cooking method

  • Actually, instead of potatoes, green margelan radish goes to the lagman, but I always don't have it at the moment when I'm going to cook this dish. Moreover, it is nowhere to be found, not in a single store! She was yesterday, she will be tomorrow ... and today - tyutu. Glamor ...
  • So, what am I talking about? Oh yes! In general, I decided to somehow add eggplants and since then this recipe has been included in our menu. Because it’s sooo delicious, honestly! Man, agree! And Lyova pkhni, let him also nod, as a second witness!
  • So, choose the meat to your liking. Of course, it would be desirable to have lamb or beef with you ... but I found in my freezer only (may the Uzbeks, dear to my heart, forgive me) a pork neck. But, as always, I have a dumba! She instantly influenced the taste of the whole dish. Dumba and meat are cut into cubes with a side of about 2 cm. All vegetables, including garlic, are also cut into cubes, but with a side of 1 cm. For this I used an Alligator with a grid of 9 mm.
  • Pour some vegetable oil into the cauldron - this is if the meat is fatty and there is dumba. Otherwise, we do not regret the oil, we should get a beautiful shiny gravy.
  • We throw a dumba into the cauldron and give it only a little reddening:

  • Add meat to it and fry it well over high heat, but do not dry it out. As soon as the meat starts to brown, add some freshly ground pepper mixture to it, the aroma will be ... um, fantastic!
  • After the meat is fried, add the onion and garlic

  • Then there are carrots, and after five minutes - pepper.

  • We do not fry it too much, otherwise it will simply disappear at the end of cooking. As soon as it grabs a little, we add tomato paste to the cauldron and fry everything for a couple of minutes until a delicious aroma appears.
  • Pour boiling water over the whole thing, add all the spices and salt and set off to prepare the potatoes. We clean, cut it into cubes and send it to the cauldron, let it cook for ten minutes.
  • See how colorful it turned out! Not a cauldron, but a volcano's mouth:

  • In the meantime, we cut the eggplants and add them to our gravy at the right time. As soon as everything boils, we detect exactly 5 minutes, you cannot cook more eggplants - they will fall apart. Quickly cut the greens, straighten the taste of the gravy with salt, add vinegar and, if necessary, more boiling water. The consistency of the gravy should be like a slightly thick soup, so be guided in place. After the time has passed, we throw in the greens. Stir and turn off the heat. We cover the cauldron with a lid and let it rest for 10-15 minutes.
  • Now a little about noodles: for some time now, namely with the appearance of a miracle noodle in my house, I prefer to cook lagman myself. It may take more time, but the result cannot be compared with the "purchased" option. We cut ordinary spaghetti on a typewriter, but only roll out the dough thicker, so our noodles will look more like a real lagman.
  • Here's my noodle: 5 eggs + 500g flour + 1 tsp. salt + 2 tbsp. l. rast. oils.

  • If there is no opportunity or just reluctance to mess around with the dough, buy ready-made pasta, but not spaghetti, but linguini. They are just perfect for the lagman!
  • We boil our noodles, put them in a colander, if we want, we rinse them, but if they don't, we don't need them. Add some rust. oil so that it does not stick together while it lies, and we leave it to wait in the wings.
  • Hour "X" has struck! We open the cauldron and ... we fall into a hungry swoon!

  • And when we come to our senses, we quickly take a deep plate or kasushka, put a portion of noodles in it and fill it with gravy.
