Aged dough rug

Ingredients

For the test
Rye flour 500 g
light honey 250 g
granulated sugar 0.7 tbsp.
ghee 150 g
eggs 1.5 pcs
loosening 1 tsp
For a spicy mixture
carnation 10 buds
cardamom 6 pcs.
star anise 4 things.
ground cinnamon 1h l
ginger powder 1h l.
For the layer
jam (apple / plum / apricot) ~ 1 tbsp.

Cooking method

  • Preparation of this gingerbread should be started 5-6 weeks prior to serving.
  • 1. Place honey, butter and sugar in a deep-bottomed saucepan, bring to a boil over low heat and remove from heat.
  • 2. Grind the spices in a mortar and add to the hot mixture in a saucepan.
  • 3. When the mixture has cooled to 40 degrees, gradually add flour with baking powder and eggs. Knead the dough for 20-30 minutes, then roll it into a ball, wrap it in foil and refrigerate for 1 month.
  • 4. When the time comes, take the dough out of the refrigerator, let stand at room temperature, then divide into two equal parts. Roll each part into a rectangle, put on a baking sheet and bake until cooked in preheated to 2000From the oven for about 15 minutes.
  • 5. Smear one part of the finished gingerbread with jam, put the second part on top and grease it a little. Cover with parchment, put a massive board or other load on top. Leave the gingerbread in this form for another 1 week. And then you can cut into pieces and serve with tea.
