Cooking method

  • First, thanks to Tatiana (Admin) for a selection of definitions:
  • Kurnik - a ritual wedding cake made of unleavened butter dough (currently made from puff pastry) stuffed with minced chicken, lamb, and boiled eggs. Luxuriously decorated with complex dough ornaments in the form of leaves, flowers, human figures.
  • Well, and secondly, below is the recipe for the first wedding chicken cooked by me.
  • This dish is very tasty, but rather laborious to prepare. Nevertheless, the result is worth the time spent, and it can be made large for the appropriate company, so I would not consider it exclusively wedding. Just a festive dish worth seeing.
  • Dough
  • Break eggs into milk, add salt, sour cream, sugar, softened butter.
  • In a separate bowl, mix the flour with the baking powder.
  • We knead the dough, it should be quite steep, but elastic, so it is better to add flour gradually.
  • We send the dough, formed into a ball and wrapped in foil, to rest in the refrigerator.
  • Pancakes
  • We cook any thin savory pancakes you love.
  • I did the simplest: lightly beat an egg with salt, add flour, then pour milk in small portions. She fried pancakes in an almost dry frying pan, only at the beginning I slightly greased it with lard.
  • Think in advance how many tiers there will be in the chicken house. I had 5 tiers: 2 stuffed 1 and 3 stuffed 2. Each tier takes 2 pancakes plus 2 I lined the bottom, and covered the top with 3.

  • Boil potatoes, cook mashed potatoes. I added potato broth, finely chopped fresh dill, butter and salt.

  • Boil the chicken breast, cool, cut into cubes.
  • Fry finely chopped onion in vegetable oil, add champignons, simmer until excess liquid evaporates, add sour cream, salt.
  • Mix with chicken breast, cool.

  • We take the dough out of the refrigerator, divide it into 2 unequal parts: 1/3 for the bottom, 2/3 for the tight. Roll out the dough to about 0.5 cm thick. Cut out a circle with a diameter about 4-5 cm larger than the diameter of the pancakes. Then we will use the dough cuttings for decoration.
  • We immediately put the base of the chicken into the place where it will be baked

  • Put 2 pancakes on the base, on it the 1st layer of filling, then again 2 pancakes and the next filling.

  • We continue in the same spirit, trying to form a slide in the end. I covered the hill with 3 pancakes.

  • Roll out the remaining dough into a circle with a diameter larger than the base. The diameter of this circle will depend on the height of the resulting slide. The elasticity of the dough will also allow it to stretch slightly during the "laying" process. Cut a hole in the center of the circle. Then we will close it with a dough lid.

  • Broth is poured into this hole for juiciness. I used chicken breast broth.
  • So, we stretch the 2nd circle of dough on a slide of pancakes and fillings, fasten it well to the base, sculpt decorations and a lid for a hole from dough scraps.
  • We coat the chicken with a beaten egg and send it to the preheated oven.

  • I baked first at 180 degrees, then at 200 degrees until golden brown, for a total of about 35-40 minutes.
  • It is not necessary to overexpose the pie in the oven, since only the dough needs to be baked in it. Everything else is already done.
  • Before planting in the oven and a couple of times in the baking process, open the lid and pour 3-5 tbsp. l. broth.
  • If the chicken was prepared in advance, we heat it up in the oven.

  • It is impossible to convey the taste and impression of eating it in words. This must be tried at least once!
  • Bonus: aesthetic pleasure and inevitable delight of the guests!

It is very convenient to cook the chicken in several stages, since all the components can be prepared quite easily in advance, for example, a day in advance, and directly assemble and bake shortly before serving

Well, finally, a real chicken, not a chicken pie !!! And I make the chicken with layers: rice, mushrooms with onions, chicken (I repeat the layers several times). The layers are separated by pancakes. But I make the top and bottom of the pie from ordinary puff pastry (purchased, store).
